Ingredients
  

  • 1 pound ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup frozen mixed vegetables
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • 4 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is softened.
  • Add the frozen mixed vegetables, beef broth, tomato paste, Worcestershire sauce, salt, and pepper. Stir well and bring to a simmer. Cook for 5 minutes.
  • Transfer the beef mixture to a 9x13-inch baking dish and spread the mashed potatoes on top. Sprinkle with shredded cheddar cheese.
  • Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  • Serve hot and enjoy!

    I don’t usually cook with frozen mixed vegetables, so I used fresh carrots/peas. Still delicious and honestly cheaper when you’ve got stuff to use up.

    The instructions are simple, but I wish it told you when to season the mashed potatoes. I didn’t, so it felt like the topping was kinda bland compared to the beef layer.

    1 pound beef for 4 cups potatoes feels off to me. It was more like a meat-topped potato bake than a pie. Would not call it “shepherd’s” pie since there’s no lamb.

    This was easy and tasty, but my mashed potatoes were a bit dry on top. I think I needed a splash more butter/milk in the mash. Flavor was still solid though.
