Yeah 375°F usually works, but every oven runs different. Pale muffins don’t always mean wrong—if they were set, just give them 3–8 more minutes next time or bump to 400°F.

Ugh, that’s frustrating 😩. With egg muffins, they can weld to the pan if the grease isn’t really coating all surfaces (especially the corners). Next time I’d try greasing + a quick nonstick spray, and letting them cool 5–10 more minutes before popping them out.
