Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, whisk together the eggs and milk.
Add the chopped bell pepper, spinach, onions, shredded cheese, salt, and black pepper to the egg mixture.
Pour the mixture evenly into a greased muffin tin, filling each cup about 2/3 full.
Bake for 20 minutes or until the egg muffins are set and lightly golden.
Allow to cool for a few minutes before removing from the muffin tin. Serve warm.
