Crispy Baked Zucchini Fries

September 1, 2023

Crispy Baked Zucchini Fries are a healthier, delicious alternative to traditional French fries, offering the perfect combination of crunch and flavor without the guilt. Made with fresh zucchini slices coated in a seasoned breadcrumb and parmesan mixture, these fries are baked to golden perfection rather than fried, making them lighter but just as satisfying.

Zucchini is a versatile summer vegetable that’s low in calories and high in nutrients like vitamin C, potassium, and antioxidants. When cut into thin strips, breaded, and baked, it transforms into a crispy snack or side dish that’s great for dipping and sharing. The secret to the perfect crunch is coating the zucchini in flour, dipping it in beaten egg, and then rolling it in a mixture of breadcrumbs, grated parmesan cheese, garlic powder, and a pinch of salt and pepper. Baking them on a wire rack ensures air circulates around each fry, helping them crisp up evenly on all sides without needing oil.

These zucchini fries are a fantastic appetizer, party snack, or side for burgers and grilled meats. Pair them with a creamy garlic aioli, marinara sauce, or ranch dressing for extra flavor. They’re also a clever way to get kids (and adults) to eat more vegetables, especially when they’re served hot and crunchy from the oven.

Easy to prepare and packed with flavor, Crispy Baked Zucchini Fries are perfect for weeknight dinners, game day gatherings, or simply as a wholesome treat to satisfy your cravings. Whether you’re looking for a low-carb side dish or a new way to enjoy fresh zucchini, these fries deliver on taste, texture, and nutrition—all without deep-frying. Once you try them, they might just become your new favorite way to use up summer’s most abundant vegetable.

Sounds easy. But zucchini? Really? I’ll stick to potato fries if ya ask me.

I’ve tried baking zucchini before, but it always turns mushy. Are these really crispy?

You’re welcome! I love how crispy they get! 😋

Meh. Not super flavorful. Should’ve added more spices.

I added some extra spices and they turned out fantastic! Totally recommend trying this recipe.

This recipe is actually a fraud! Zucchini is supposed to be sautéed, NOT baked! Disappointing.

    1. 4 stars
I respectfully disagree! I love baked zucchini fries. They come out crispy and delicious. Maybe it’s just not your style.

  6. 5 stars
These came out way crisp for baked fries—loved the parmesan and paprika combo. I flipped them halfway and they browned nicely. Will definitely make again!

  7. 2 stars
1/2 cup crumbs for 2 zucchini feels kinda low? I still had to add more breadcrumb mix halfway through. Tasted good anyway.

I don’t know about this. My zucchinis got mushy. Maybe I did something wrong?

    1. User avatar jenny.hegmann15 says:

      4 stars
Don’t worry! It happens to the best of us. Make sure to slice them thin and not overcrowd the pan. That really helps keep them crispy!

    2. User avatar marianne.glover27 says:

      3 stars
Mushy zucchinis? Maybe they’re just too wet. Try drying them off before breading. And that temp seems too high for zucchini!

  9. User avatar jonathan.prosacco1996 says:

I don’t think these taste like real fries. Zucchini is just too mushy for me. 🤨

    1. User avatar Lumberjack says:

      4 stars
I get what you mean, zucchini can be a bit soft. Have you tried squeezing out the moisture before baking? It might help with texture! 😄

  10. 3 stars
Not bad but I think zucchini is not for fries. More like veggie sticks?

  11. User avatar Random Dent says:

    5 stars
Yummm, these are like healthy french fries! My kids loved them!

  12. User avatar evangelina.ryan17 says:

    5 stars
These turned out way crispier than I expected from zucchini. Loved the flavor—paprika and garlic powder are a great combo.

    1. 5 stars
Mine were also super crisp—honestly I was surprised too. I think slicing them thin and baking all the way to golden makes the biggest difference. Great flavor combo!

    2. 4 stars
Crispier than expected sounds nice, but did you maybe bake longer than 20 min? Mine usually gets kinda soggy unless I really watch it… also zucchini has a lot of water, so I wonder if patting them dry helps?

  13. 3 stars
Not gonna lie, I didn’t have parmesan so I swapped in shredded mozzarella. It browned but didn’t get that same crust. Still fine.

  14. User avatar tommy.schiller says:

    4 stars
Easy to make! My kids loved them. We used ranch dressing as dipping sauce. Yum!

  15. User avatar wellRespected says:

    4 stars
Pretty good! I followed it exactly, but my coating fell off a bit. Next time I’ll pat the zucchini dry and maybe let them sit before baking.

  16. 2 stars
Meh. I tried it and it was kinda soggy inside. Maybe because I didn’t line the pan with parchment? I thought that part was optional, lol.

  17. User avatar Basilia Connelly says:

    4 stars
Pretty easy, and the flavor is spot on. I did pat the zucchini dry first and they browned better.

  18. User avatar Galaxia Woonbeam says:

    4 stars
I made these for my kids and they actually ate zucchini for once! Miracle!

  19. User avatar Effrafax of Wug says:

Wow!! Super easy and quick! I used mozzarella instead of parmesan. Yummy!

    1. User avatar heather.hessel75 says:

      4 stars
Mozzarella? That’s interesting! I never thought of that. Gonna try it!

  20. User avatar Ronnie Gorczany says:

    4 stars
Yummy! Used some cayenne pepper instead of paprika and they were spicy 😋.

  21. User avatar jason.gislason says:

    3 stars
I followed it pretty much exactly, but mine got a little soggy at the end. I think I overcrowded the tray. Still tasty though!

  22. 4 stars
The flavor is great, but 1/2 cup bread crumbs + 1/2 cup parm feels like a lot for only 2 zucchini. I had extra mix and still got decent coverage.

    1. User avatar laurence.watsica says:

      3 stars
I think it depends how thick you cut them. If they’re thinner, 1/2 cup each feels like overkill, but if you slice super thin and do lots of strips, it can add up.

    2. User avatar cory.macejkovic1969 says:

      4 stars
Totally agree—2 zucchini doesn’t seem like enough for that much breadcrumb + parm. I actually did 1/4 cup crumbs + 1/4 cup parm and it still browned nicely.

  23. User avatar nakia.hauck13 says:

    2 stars
Why does everyone like these?! I didn’t think they had enough flavor. Maybe I did it wrong?

    1. User avatar brad.runolfsdottir68 says:

      4 stars
I actually love these! Maybe try adding more spices? They can be a bit bland without enough seasoning.

    2. User avatar shanita.conn says:

      2 stars
Yeah, I’m not sure why they are so popular either. It felt like eating air! 😂

  24. User avatar trevor.bashirian says:

    4 stars
Pretty good, but my zucchini had a lot of water so they got a little soggy in the middle. Next time I’m gonna pat them dry and maybe add a touch more crumbs.

  25. User avatar willia.dickens1985 says:

    3 stars
Followed the steps but it took forever to bake. Maybe my oven is off. 🤔

  26. User avatar rickiestmorty says:

    4 stars
The egg dip step is important—when I rushed it, the coating fell off. When I did it carefully, they were crispy and held together.

  27. User avatar norman.baumbach says:

    5 stars
Super easy and delish! My husband even liked them, and he hates veggies! Will make again.

  28. User avatar Ferne Lockman says:

I didn’t have paprika, so I used chili powder instead. They were still pretty good! 4/5

    1. User avatar Orange Dartwing says:

      5 stars
Chili powder works fine too! I never have paprika when I need it. Glad you liked them!

    2. User avatar jody.johnston1972 says:

      2 stars
I don’t think chili powder is the same as paprika. Next time, try to get the right spice!

  29. 4 stars
425°F feels aggressive for zucchini but it actually works. Next time I’ll use more parmesan because why not 😄

    1. User avatar luis.doyle says:

      5 stars
425°F *is* a little spicy for zucchini, but if it turns out crispy I’m in 😂. More parmesan is always the move.

  30. User avatar antione.legros says:

    2 stars
Not as crispy as I hoped. Maybe I did something wrong, but they turned out kinda soggy.
