Coffee Cake

September 17, 2025

Coffee cake is one of those timeless treats that feels equally at home on a cozy breakfast table, a mid-afternoon coffee break, or as a sweet ending to a casual dinner. Despite its name, it doesn’t necessarily contain coffee, but it’s designed to pair perfectly with a hot cup of it. The appeal of coffee cake lies in its comforting, tender crumb and its generous layers of cinnamon, sugar, and sometimes nuts, which create a delightful balance of sweetness and warmth.

The origins of coffee cake can be traced back to European influences, particularly German and Scandinavian traditions, where spiced cakes and sweet breads were enjoyed alongside coffee. When the custom of coffee drinking spread across Europe and eventually to America, these baked goods evolved into what we know today as coffee cake. Over time, variations flourished, each culture adding its own twist with spices, fruits, or toppings.

A classic coffee cake is often crowned with a crumbly streusel topping made of butter, flour, sugar, and cinnamon. This topping not only adds texture but also delivers that iconic flavor many associate with coffee cake. Some recipes feature a ribbon of cinnamon sugar swirled through the middle, creating a marbled effect that looks as beautiful as it tastes. Others incorporate fruits like blueberries, apples, or peaches, offering bursts of flavor and a touch of tartness to contrast the sweetness. Nuts such as walnuts or pecans can also add crunch and depth.

One of the most charming aspects of coffee cake is its versatility. It isn’t overly sweet, so it works just as well for breakfast as it does for dessert. It can be enjoyed warm from the oven, when the aroma of cinnamon fills the room, or later in the day when it has cooled and the flavors have settled even more. Coffee cake also has a nostalgic quality, often reminding people of family gatherings, holidays, or simple moments when a slice was shared over conversation.

Whether served plain or dressed up with a glaze or drizzle of icing, coffee cake remains a comforting favorite. It’s a humble yet elegant treat that continues to bring warmth, familiarity, and joy to every bite.

Can’t believe how easy this was! Even my kids helped out, and it turned out perfect! Definitely making it again.

Why does it call for baking powder? I thought coffee cake didn’t rise? 🤔 Anyway, mine came out fine, just curious.

  3. User avatar gemma.cronin73 says:

    2 stars
I dunno, it was kinda dry for me. I followed the recipe exactly, but I guess I’m just not meant to bake.

  4. 3 stars
Too sweet, more sugar than I like 🙂 but family loved it so I guess it’s ok.

  5. User avatar brianne.kulas36 says:

This recipe is AMAZING! I made it for my family and they all loved it. The cinnamon on top is a game changer! 👌

Coffe cake? More like a sugar bomb! Not my cup of tea, but maybe you’ll like it.

I think coffee cake is supposed to be sweet! Sorry you didn’t like it, but it sounds delicious to me. ☕🍰

  7. 4 stars
Yum! I made this last night and I already ate half the cake. LOL! Huge hit at the office!

    1. User avatar meggan.runolfsdottir54 says:

      4 stars
Wow, really? Half the cake?? I think you might have a cake problem! LOL. But I guess it was good!

    2. 5 stars
That’s awesome to hear! I need to try this recipe for my next potluck. Cake always gets the best reactions!

  8. 3 stars
I thought it was bland. Maybe add some nuts or chocolate chips next time? Idk, just didn’t do it for me.

  9. 5 stars
Super easy steps, not gonna lie. I’m not a baker and I didn’t mess anything up. Texture was tender and the top got a nice sweet crunch.

  10. User avatar Arwen Evenstar says:

    4 stars
yum! I’m not a baker but was super easy to make, loved falling into the delicious cake!

  11. 3 stars
The ratio seems a little off to me. 1 cup sugar in the batter feels like it could be sweeter, but the topping is doing most of the work. Flavor was okay, not wow.

    1. User avatar jinny.stokes1983 says:

      4 stars
Yeah, I get that. With 1 cup sugar in the batter plus the cinnamon-brown sugar topping, it’s “technically” sweet, but it doesn’t always taste wow—depends how the oven runs and how thick the topping layer is. I’ve bumped the batter sugar to 1 1/4 cups before and it came out more like classic coffee cake for me.

  12. User avatar terminatorXYZ says:

    2 stars
I followed the recipe exactly but mine was soooo dry. What did I do wrong? 🤔

  13. User avatar galina.shields says:

    5 stars
Made this last night—super cozy. The cinnamon-sugar top caramelized nicely and the crumb was soft. I used whole milk and salted butter; still turned out great.

  14. User avatar brice.quigley69 says:

This coffee cake turned out amazing! So fluffy and delicious! Will definitely bake again.

    1. User avatar garrett.moore19 says:

So glad to hear you loved it! I can’t wait to try this recipe myself.

  15. User avatar erika.barton says:

    3 stars
Meh, it was just okay. I’ve had better coffee cakes from the store.

    1. 5 stars
I totally disagree! This coffee cake is really good and sooo easy to make. I love it!

  16. 5 stars
Smells amazing while baking—mine came out golden and tender. The cinnamon topping actually makes it taste bakery-level.

    1. User avatar lisbeth.blanda84 says:

      5 stars
That’s exactly what I was hoping for—love hearing it came out golden and tender! The cinnamon-brown sugar topping really does make it feel bakery-level. 😄

  17. User avatar rickiestmorty says:

    2 stars
Too sweet for me. Also 350°F seems high, my top got dark before the center was done.

  18. User avatar adolfo.emard1977 says:

    3 stars
Do you really need all that sugar? I’m trying to cut back on sweet stuff. This looks good tho.

  19. User avatar anonymous_hacker says:

    3 stars
I followed the steps exactly and it tasted good, but the texture was a little dense. Maybe I overmixed? 😅

    1. User avatar Tom Bombadil says:

      5 stars
Totally agree—if it gets dense, overmixing is usually the culprit. Next time, stir just until no dry streaks remain. Also make sure your baking powder isn’t old!

    2. 3 stars
That’s interesting—mine gets dense when I tap the pan too much and all the air goes out? 😅 Not sure if that’s a real thing, but I’m sticking with it. Did you let it cool before cutting?

  20. User avatar contessa.schimmel36 says:

    4 stars
cake is good but I think I added too much cinnamon. Next time I’ll cut it down!

  21. User avatar lazaro.hamill37 says:

    4 stars
Pretty good, but mine was a little dry after cooling. Next time I might check for doneness closer to 35 minutes. Still flavorful though—coffee cake deserves cinnamon.

    1. User avatar Grìma Wormtongue says:

      5 stars
Good tip! I’ve had that happen too—coffee cake can dry out if it goes much past 35. Checking a few minutes earlier next time sounds smart, and I’m glad you liked the cinnamon.

  22. User avatar rosa.cronin86 says:

    4 stars
Not gonna lie, I messed up the oven temp (set to 375). Even then it was decent… so maybe the recipe is pretty forgiving.

  23. User avatar thad.veum68 says:

    5 stars
Smelled amazing while baking—mine domed a little but the cinnamon-sugar top was so good. I used salted butter and it was still balanced. Would definitely make again!

    1. User avatar michelle.kuhlman44 says:

      5 stars
That’s great! The doming is usually just a sign the oven was cooking it nicely. I love when the cinnamon-sugar top turns a little toasty.

  24. 2 stars
I’m skeptical about “mix until just combined” because I always end up overmixing, and this time was no exception. Still edible, but the texture was kinda dense.

  25. User avatar sharan.white24 says:

    5 stars
This turned out super moist and the cinnamon topping is legit. I’d make it again for sure!

  26. User avatar laquanda.lockman62 says:

    5 stars
Yum! I added some nuts to the topping, and it really made a difference!

  27. User avatar frankie.harvey14 says:

    4 stars
Good flavor but I think it needs a tiny bit more bake time. Mine was still a bit wet in the middle at 38 minutes, so I did like 8 more minutes and it was perfect.

    1. User avatar lamar.beatty says:

      2 stars
38 minutes and still wet? That seems like user error 😅 I’d keep checking with the toothpick… also my oven runs hot so 35 was enough. Coffee cake shouldn’t be gummy, ya know.

    2. User avatar Mr. Lala Gaylord says:

      5 stars
Totally agree—mine usually needs closer to 40-ish too. Love that you adjusted by 8 minutes and nailed it!

  28. User avatar Eddie the Computer says:

    2 stars
I followed it exactly but my cake turned out super dense. What did I do wrong?

  29. User avatar princess.bogan says:

    4 stars
Not gonna lie, I was skeptical about only 1 egg, but it came together nicely. The smell while baking was amazing.

    1. User avatar Tahm Kench says:

      3 stars
Hmm I tried this and mine didn’t smell “amazing” until after it was done… also I only had 1% milk and used margarine, so maybe that’s why. Still pretty good though.

    2. User avatar marguerita.brown says:

      5 stars
Same! I usually expect at least 2 eggs in coffee cake, but this texture turned out really soft and not gummy. The cinnamon-sugar top is the best part.

  30. User avatar mariko.mante says:

    4 stars
The batter smelled amazing. I used salted butter and cut the salt slightly—good call. Would make again.

  31. User avatar Spider Worker says:

    5 stars
5/5. My kid helped sprinkle cinnamon and now they think they’re a baker lol.

  32. User avatar latoyia.jast33 says:

    2 stars
Not sure why but my batter was thicker than expected—like more like dough than pourable. I still baked it and it was edible, just denser than I hoped.

  33. 4 stars
Easy recipe, beginner friendly. I like that you just mix wet + dry and bake. Next time I’ll add some chopped nuts for crunch.

  34. User avatar Glenn Conroy says:

    4 stars
Easy recipe, but I think 35 minutes was a bit short for my oven—mine needed closer to 42. Still delicious though.

  35. 5 stars
This came out super tender and the cinnamon topping is perfect. I was worried about 35–40 minutes but it baked right on time in my oven.

  36. 2 stars
Why is it called coffee cake if there’s no coffee? I mean, it’s still tasty… but c’mon.

  37. User avatar verlie.hagenes50 says:

    5 stars
This is such a cozy coffee cake! The cinnamon sugar topping smelled amazing, and the crumb came out tender. I baked mine closer to 38 minutes and it was perfect.

  38. User avatar Lawerence McGlynn DDS says:

    3 stars
I tried this and the center wasn’t done at 35-40 minutes, so I baked longer. However the top got too dark, so I think I’d cover it with foil sooner next time.

  39. User avatar Carl Langosh says:

    3 stars
Um… I messed up and used salted butter instead of unsalted. It came out okay but kinda salty, so I’d suggest sticking to the recipe salt amount. Also, I didn’t “just combine” and it got tougher than I wanted.

  40. 3 stars
meh. could be sweeter. also my pan size was 8 inch so baking time was different and i had to guess—turned out ok tho.

  41. User avatar rema.greenholt says:

    4 stars
Pretty good overall, but mine was a tiny bit dry. I think I overbaked—next time I’ll start checking at 32-33 minutes. Still tasted great with coffee.

  42. User avatar Prostetnic Vogon Jeltz says:

    3 stars
Just okay. I think the topping was too much for me. I’m not a big cinnamon fan.

    1. User avatar deidre.cruickshank says:

      2 stars
I think the cinnamon makes it better! Just a matter of taste. Give it another shot, and maybe it’ll grow on you!

    2. User avatar Dan Streetmentioner says:

      4 stars
I totally get what you mean! Cinnamon can be a bit overpowering. Maybe try less next time or add some nuts for crunch! 🍏

  43. User avatar jame.becker75 says:

    3 stars
I followed it exactly and the center didn’t feel set at 40 minutes. Maybe my oven runs hot/cold. I added like 8 more minutes and it finally worked.

  44. 5 stars
This is the best coffee cake recipe I’ve ever tried! So moist and delicious!

  45. User avatar gerda.lesch says:

    2 stars
Tried swapping in almond milk—don’t. Texture got weird and the egg didn’t seem to bind the same. If you do a swap, tell me what worked.

    1. User avatar rickiestmorty says:

      4 stars
Hmm that’s good to know. I’ve only ever used regular milk in this one, so I’m not surprised almond milk threw off the binding—especially since the recipe relies on that egg + dairy combo. If you want to swap, maybe try oat milk? It’s thicker and usually behaves closer to milk in batters.

  46. User avatar rhoda.ferry30 says:

    5 stars
Easy recipe, and it actually tastes like coffee cake instead of just “sweet bread.” I added a little extra cinnamon because… why not.

  47. 4 stars
This is a nice simple coffee cake. I followed it closely and it wasn’t too sweet, which I liked. I’d maybe add a little more cinnamon next time.

  48. User avatar rosamond.runolfsdottir says:

    2 stars
Meh. Mine didn’t get that nice browning on top, and it felt kinda bland even with cinnamon.

  49. User avatar Charles Darwin says:

    4 stars
Easy to make! My kids loved it! Thanks for sharing!

    1. User avatar Mila and her father says:

      5 stars
I’m glad your kids enjoyed it! I made it last week and it was a hit at our family gathering too!

    2. User avatar armadillo says:

      3 stars
Seems too easy. Does it really taste good? I was expecting a more complex recipe for coffee cake.

  50. User avatar vicente.heathcote41 says:

    3 stars
I accidentally used salted butter and forgot the extra salt—still okay, but the flavor was off. Learning moment!

  51. User avatar Hillman Hunter says:

    4 stars
Pretty straightforward recipe. I like that it doesn’t require any fancy ingredients. I did have to bake closer to 42 minutes since my oven runs hot, but it turned out moist.

    1. User avatar Spriggan Matron says:

      5 stars
Totally agree—love recipes that don’t need weird specialty stuff. And 42 minutes makes sense if your oven runs hot. Mine usually does too, so I’ll definitely watch the toothpick more than the time.

    2. User avatar lizzzard says:

      3 stars
I tried something like this once and it came out kinda dry, so I’m skeptical about the “toothpick comes out clean” part—wouldn’t it keep baking after? Also, is the topping really 1 tsp cinnamon? Seems low to me.

  52. User avatar weston.botsford says:

    5 stars
Made this for brunch and it smelled amazing. The cinnamon topping really does make it feel bakery-level. I used 1% milk too and it still turned out great—would totally make again.

  53. User avatar Eddie the Computer says:

    3 stars
Could be just me but 1/2 cup butter feels low? Like it didn’t feel super rich. Still tasty with coffee.

  54. User avatar mathWizard says:

    1 star
What even is ‘coffee cake’ supposed to taste like? I thought it had coffee in it.

    1. User avatar angelo.osinski51 says:

      3 stars
I was confused too! But turns out it ain’t got coffee like that, just a nice moist cake. Kinda misleading, huh?

    2. User avatar mikel.herzog says:

      4 stars
Coffee cake is more about the texture and flavor than actual coffee. It’s usually sweet and has spices like cinnamon. Just gives a good vibe with a cup of coffee!

  55. User avatar jacquelin.purdy19 says:

    5 stars
So easy. Tastes like bakery stuff, fr.

  56. User avatar NAFO.SUPREMACY says:

    2 stars
Cheap ingredients, so I gave it a shot. Tastes fine but honestly I’ve had better coffee cake from a box. Wouldn’t repeat unless I’m out of everything else.

  57. User avatar petronila.considine20 says:

    4 stars
I accidentally used salted butter and it still worked but I had to tweak the salt mentally lol. Texture was good though.

  58. User avatar rex.buckridge1989 says:

    4 stars
I didn’t have brown sugar, so I used white instead. Still turned out pretty good.

  59. 2 stars
Baking powder seems like a lot for only 1 egg? It rose, but the crumb was a bit dense for me. Next time I might add a little more milk or check my measurements again.

    1. User avatar quincy.abernathy says:

      4 stars
I get what you mean—2 tsp baking powder can seem like a lot, but with 2 cups of flour it’s not totally crazy. If yours turned out dense, I’d suspect either overmixing or underbaking more than the baking powder amount. Next time, try mixing just until combined and bake a couple minutes longer if the toothpick isn’t clean in the center.

  60. User avatar carol.metz says:

    3 stars
I’m not a fan of coffee cake that’s basically cake-cake, but this one is still pretty good. The batter is simple and the topping gives it that “bakery” feel.

  61. User avatar renae.bernhard says:

    4 stars
Pretty good for a coffee cake, though mine was a bit dry at 40 minutes. I think my oven runs hot. Still tasted great with coffee.

  62. User avatar Florencio Harris says:

    2 stars
I followed it exactly and it came out bland 😕. Like, I could barely taste the vanilla or cinnamon. Maybe I’m doing something with measurements?

  63. 2 stars
I don’t trust recipes that say “just combined.” Like… how combined is just? 😅 I overmixed and it came out a bit chewy. Would try again but carefully this time.

    1. User avatar arden.bernier84 says:

      2 stars
Honestly I think chewy means the baking time was off, not the mixing. I always mix mine kinda hard and it turns out fine. Maybe your oven runs hot?

    2. User avatar mai.heaney says:

      5 stars
Totally get you 😅 “just combined” is vague. I usually stop the second I don’t see dry flour anymore—otherwise it gets chewy. Your timing note is super helpful!

  64. User avatar deborah.rice65 says:

    1 star
Gave this a try and it was a total flop… I’m better off buying from a store!

    1. User avatar Odis Russel says:

      4 stars
This cake was amazing for me! Maybe it’s just not your style?

    2. User avatar suzi.rohan1994 says:

      3 stars
Sorry to hear it didn’t work out for you! Maybe you missed a step?

  65. User avatar smartestRedditor says:

    3 stars
Ok so mine overflowed a little and I don’t know why—pan maybe too full. Still tasty, but next time I’ll use a deeper pan or check leavening.

  66. 4 stars
Good base recipe! I added a little extra cinnamon to the batter itself and it felt more “coffee cake-y” (if that’s a thing). Next time I’ll sprinkle the topping more evenly.

    1. User avatar gene.pacocha1977 says:

      5 stars
That actually makes total sense—cinnamon in the batter + the topping is basically the “coffee cake” vibe 😄. I bet it’ll be even better with a more even sprinkle too.

    2. User avatar steve_maga says:

      3 stars
Hmm I tried something like this but mine came out kinda dry. Maybe I baked too long. Do you think adding cinnamon to batter changes the texture or just the flavor?

  67. User avatar johnathan.daniel says:

    4 stars
Not gonna lie, I was skeptical about just stirring until “just combined.” But it worked! Texture stayed tender instead of rubbery. Good coffee cake vibe.

    1. User avatar Hotblack Desiato says:

      5 stars
I totally get the skepticism—“just combined” sounds like it would turn into sadness. Glad it kept the crumb tender though! I’ve had rubbery cakes from overmixing before, so this is reassuring.

  68. User avatar lexie.dibbert29 says:

    3 stars
I followed it exactly and it came out flat 😕 Not sure if my baking powder is old or if I overmixed. The topping tasted amazing though, so I’ll try again.

    1. User avatar alayna.casper2026 says:

      3 stars
Flat means underbaked to me. Next time try the full 40 min (or until toothpick is dry), and don’t pack the flour when measuring. Also 350°F might be low if your oven runs cold—mine does. But hey, the topping still slaps, so you’re close 😅

    2. User avatar brandee.schiller says:

      4 stars
Ugh, sorry it turned out flat 😕 Coffee cake is usually pretty forgiving. I’d bet on baking powder being old or not fully mixed—also make sure you don’t overmix after adding the wet. Mixing “until just combined” really matters.

  69. User avatar jule.mayer says:

    2 stars
My cake didn’t rise much… is 2 tsp baking powder enough? 🤔

    1. User avatar Ms. Weston Gulgowski says:

      4 stars
Two teaspoons should usually be enough, but if your cake didn’t rise, maybe your baking powder is old? Just make sure it’s fresh next time! 🌟

    2. User avatar dustin.lind45 says:

      3 stars
I don’t think that’s enough. I always use at least 3 tsp for cakes! Also, did you mix the batter too long? That can make it dense too.

  70. User avatar dustin.kiehn1981 says:

    5 stars
Wow, this is comfort food. I served it warm with coffee and everyone went back for seconds.

  71. User avatar shayna.bayer2010 says:

OMG this is soooo good! I can’t stop eating it!

  72. User avatar mervin.funk22 says:

Dry after cooling is usually either overbaked or maybe too much flour. I sometimes use the same time but my oven runs hot. Next time try 30-33 and cover loosely with foil if the top browns fast. (Also my oven doesn’t like 350 lol.)

Oof, yeah that sounds like it got a little too long in the oven. Pulling it earlier like you said (33 min) might really help—also try checking with the toothpick in the middle and not just the edges.

Not bad, but it tasted a bit plain to me. Maybe my cinnamon topping was weak? Also I accidentally used salted butter and it made the saltiness more noticeable.

    Too sweet for me.

Hm. I mean, coffee cake supposed to be kinda sweet, right? But maybe your milk was really sweet? I’ve made it with regular milk and it was fine. Try less topping cinnamon sugar too.

I felt the same way the first time—next batch I’ll cut the sugar in half and use a lighter hand on the cinnamon topping. Still plenty sweet for coffee, just not dessert-sweet.

I’m skeptical about the ratio: 2 cups flour but only 1 egg? Still, it tasted fine. Not sure I’d remake without adjustments.

Loved how straightforward it was—no weird ingredients. Also, it sliced nicely, which is rare for me.

Mine took closer to 45 minutes, but it still came out great. I was worried about the batter being too thick, but it worked. Family asked for seconds.

Maybe my oven runs hot or something, because mine was done closer to 30 min. I still thought the batter was too thick but I just added like a splash more milk and it worked. Family didn’t ask for seconds though… they ate it anyway 😅

So glad it turned out! I’ve made it once and mine was also a bit slower—around 45 min for me too. That thicker batter thing always freaks me out, but yeah, it bakes up perfectly.

This turned out way better than I expected. The cinnamon topping is legit and the crumb stayed moist even after cooling. Would definitely make again.

Love to hear that! I’m always skeptical of topping recipes staying moist, so this makes me want to try it again soon. 😄

Not gonna lie, I was skeptical about adding all that liquid with just one egg, but it worked. The top kind of caramelized a little and the flavor is legit.

I followed everything exactly, but my topping kinda sank into the batter instead of staying on top. Maybe my cinnamon was too fine? Still tasted good though.
