These Cinnamon Muffins are a delightful treat with a moist and fluffy texture, perfectly spiced with cinnamon and a hint of nutmeg. Ideal for breakfast or a snack.

Ingredients
  

  • 1 1/2 cup all-purpose flour sifted
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg ground
  • 1/2 cup milk room temperature
  • 1/3 cup vegetable oil
  • 1 egg large, beaten
  • 1 tsp vanilla extract
  • 1/2 cup pecans or walnuts optional, chopped

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with muffin cups.
  • In a large bowl, sift together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, mix together the milk, vegetable oil, beaten egg, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir just until combined. Do not overmix.
  • If using, fold in the chopped pecans or walnuts.
  • Fill the muffin cups about 2/3 full with the batter.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

    Not bad, but mine were a bit dry. I think I accidentally baked them a couple minutes too long. Also I didn’t sift the flour (lazy), so maybe that affected the texture.

      I usually don’t sift either and mine are fine 🤷‍♀️ Maybe your oven runs hot? Next time try checking at 16 minutes and pulling them as soon as the toothpick is mostly clean (still a little moist).
