Chocolate mousse is one of those desserts that feels fancy but is surprisingly simple to make. With just a few quality ingredients and a bit of technique, you can whip up a silky, airy, chocolate-packed treat that looks impressive and tastes even better.
At its core, chocolate mousse is a balance between richness and lightness. You want that deep cocoa flavor to come through while keeping the texture fluffy and smooth. The trick lies in choosing the right chocolate, go for something with at least 60% cocoa for a bold, bittersweet base. That slightly intense edge gets mellowed out once you fold in the whipped cream.
A splash of espresso or strong brewed coffee adds depth to the flavor without tasting like coffee. It simply enhances the chocolate, making it more complex and satisfying. If you’re making this for kids, feel free to skip it or use a bit of vanilla extract instead.
Eggs are traditionally used for richness and structure. If you’re going the classic French route, you’ll beat egg yolks with sugar until pale and thick, then fold them into melted chocolate. Separately, the egg whites get whipped until soft peaks form and folded in at the end to give the mousse its signature airy feel. If you’re concerned about raw eggs, you can temper them or use pasteurized eggs, or make an eggless version using only whipped cream and chocolate.
Once the mousse is mixed, it’s important to chill it for at least a couple of hours. This gives the flavors time to develop and the texture time to set. When ready to serve, you can keep it simple with a dollop of whipped cream or go all out with shaved chocolate, fresh berries, or a drizzle of raspberry sauce.
Chocolate mousse is perfect for make-ahead entertaining. Served in little glasses or ramekins, it brings elegance without fuss. It’s a timeless dessert for a reason—rich, indulgent, and sure to satisfy every chocolate craving.

Ingredients
- 1 cup heavy cream
- 8 ounces semisweet chocolate chopped
- 3 tbsp granulated sugar
- 1 tsp vanilla extract
- 4 egg whites large,
- pinch salt
Instructions
- In a small saucepan, heat 1/2 cup of the heavy cream until it just begins to bubble around the edges.
- Remove the saucepan from heat and add the chopped chocolate. Stir until the chocolate is melted and the mixture is smooth. Set aside to cool for 10 minutes.
- In a medium mixing bowl, beat the remaining 1/2 cup of heavy cream until soft peaks form. Add the sugar and vanilla extract and continue beating until stiff peaks form.
- In another medium mixing bowl, beat the egg whites and salt until stiff peaks form.
- Fold the cooled chocolate mixture into the whipped cream, then fold in the beaten egg whites, taking care not to overmix.
- Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours, until set.
- Serve chilled and enjoy!
Easy enough, but I don’t understand why you heat only 1/2 cup cream—seems like you’d need more. Still delicious, just confusing.
I found it too sweet. Maybe cut down the sugar? Not bad tho.
Mixin egg whites is hard! But I tried it and it worked. Great recipe.
That’s awesome! It’s really satisfying when it works out. I had trouble the first time, but practice makes perfect. Well done!
Wow, this looks like somethin I’d get in a restaurant! Gonna try it for my anniversary!
I had a bit of trouble getting the chocolate melted perfectly. It got a little lumpy. What did I do wrong?
Mousse? More like fly away! I don’t know how anyone can eat this. Not for me.
Wow, this is better than the restaurant I went to last week. And way easier! 🍫
Yum! I added a pinch of sea salt to the top before serving. It was perfect!
Delicious! I couldn’t believe how easy this was. Will be the star of my next dinner party.
Not gonna lie, I was skeptical about folding in the egg whites without ruining it, but it came out airy. Took longer to set in my fridge—more like 3 hours.
I’m not a good cook, but I managed this! It was great, although mine looked a bit messy.
I don’t know about this recipe, it looks complicated. How did u manage?
Messy or not, if it tasted great, that’s what matters! Great job!
My kids loved it! I added some strawberries on top to make it fancy. 😋
I thought it was too sweet. Next time, I’ll cut down on the sugar. Just my preference!
I followed the recipe but it turned out a bit too sweet for my taste. I think I will reduce the sugar next time.
I totally agree! Mousse can get way too sweet sometimes. Reducing the sugar sounds like a great idea!
Really? I thought it was just perfect. Maybe your chocolate was too sweet? 🤔
Wow, my kids loved this! They keep asking for more. easy and fun!
Pretty good, but mine was a little too thick after chilling. I think I overfolded the egg whites or didn’t beat the cream quite to stiff peaks. Still tasted amazing though.
Oh that makes sense—if the egg whites or whipped cream got too overworked, it can turn a bit “set”/thick after chilling. Next time, I’d stop once you’ve got true stiff peaks (not dry-looking) and fold just until no streaks. Glad it still tasted amazing though!
This mousse is AMAZING! So rich and velvety. Will definitely make it again!
I bet this would be healthier without the sugar and cream. Just a thought.
Not gonna lie, I was skeptical about raw-ish egg whites. I used pasteurized egg whites and it came out great, but I’d really note that for safety. Otherwise, good recipe.
The recipe is simple but I messed it up. My chocolate seized. How do I fix that next time?
Super simple and delicious! I added a sprinkle of sea salt on top. Yum!
I followed the steps, but it turned out too runny. What did I do wrong? 😕
This turned out *so* rich and airy. I let the chocolate cool a bit longer than 10 minutes and it made folding way easier—no streaks, just silky mousse. Definitely making again.
I followed it exactly and it still didn’t set right after 2 hours—more like chocolate cream. The flavor was there, but the texture was off. Any tips for longer refrigeration?
That sounds like it didn’t fully cool down before/during whipping. I’ve found if the chocolate mixture is still warm when you fold it in, it can end up like a soft chocolate cream. Try cooling the chocolate mixture a bit longer (until it’s thickened slightly), then refrigerate closer to 4–6 hours, not just 2.
This was a total disaster! My mousse never set, it was just soup. Maybe I did something wrong?
I’m so sorry to hear that! It sounds like maybe the chocolate wasn’t cool enough before mixing or the egg whites weren’t whipped enough. Don’t give up, practice makes perfect!
Did you actually let it chill for 2 hours? I never wait that long, but it must be done or it won’t set! Keep trying! 😅
Choc mousse is life! I used dark chocolate instead of semi-sweet, so rich and decadent!
Easy to make, but my mousse didn’t set. What went wrong? Followed the recipe to the letter.
This is the best chocolate mousse I’ve ever made! SO creamy and rich. Definitely making it again!
The technique is solid. Heavy cream whipped to stiff peaks was key. I also chilled the bowl for the egg whites and that helped them whip faster.
This chocolate mousse is amazing! So rich and tasty. My family loved it!
So glad to hear that! It’s one of my favorites too! 😍
