Chocolate Brownies Recipe with Baileys

May 12, 2025

These Chocolate Brownies with Baileys are a decadent twist on the classic brownie recipe, combining the rich, fudgy texture of brownies with the smooth, creamy flavor of Baileys Irish Cream. The result is a luxurious, indulgent treat that’s perfect for any occasion, whether you’re serving them at a gathering or treating yourself to something special.

Once baked, allow the brownies to cool completely in the pan before cutting them into squares. For an added touch, drizzle more Baileys Irish Cream on top or sprinkle with powdered sugar for a beautiful finish.

These Chocolate Brownies with Baileys are rich, indulgent, and full of flavor. The combination of decadent chocolate and the smooth, creamy Baileys creates a luxurious dessert that’s perfect for special occasions, dinner parties, or just when you want a sweet treat to enjoy with a cup of coffee. Whether served on their own or with a scoop of vanilla ice cream, these brownies are sure to become a favorite.

Can I really bake with Baileys Irish Cream?

Yes! Baileys adds a rich, creamy flavor with hints of chocolate and vanilla that pairs perfectly with brownies. The alcohol mostly bakes off, leaving behind its signature taste.

Will the brownies taste like alcohol?

They’ll have a subtle Baileys flavor, but the alcohol content evaporates during baking, so you’re left with a smooth, creamy finish—not a strong boozy taste.

Can I use a Baileys substitute in this recipe?

If you don’t have Baileys, you can use other Irish cream liqueurs or a mix of heavy cream and a splash of vanilla or espresso extract. However, it won’t replicate the exact flavor.

Is this recipe safe for kids to eat?

Yes, once baked, the alcohol content in Baileys is significantly reduced, making it generally safe. However, if you’re concerned, use a Baileys-flavored syrup or non-alcoholic Irish cream alternative.

What kind of chocolate works best with Baileys?

Dark or semi-sweet chocolate complements Baileys beautifully, balancing the sweetness and enhancing the creamy notes of the liqueur.

Can I add Baileys to the frosting too?

Absolutely! A Baileys-infused chocolate ganache or buttercream makes a delicious topping and enhances the flavor of the brownies even more.

I was skeptical about using Baileys. Instead, I used coffee creamer and they burned! Should have stuck to the recipe. Disappointing.

These brownies are amazing! I added some nuts and they turned out perfect! Can’t believe how easy it was to make!

  3. User avatar mathWizard says:

    4 stars
Just wow. A bit rich for my taste but oh so gooood! Will definitely make again. Thanks for sharing!

YUMMY! These are my new favorite treat, I could eat them all day long! 😍

    1. User avatar carolyn.rempel54 says:

      2 stars
But are they really that special? I mean, it’s just brownies with a bit of booze, right?

    2. User avatar w00d_ch0p says:

      5 stars
I know right?! They are so gooood! 😋 Can’t wait to have another batch this weekend!

  5. User avatar Treebeard says:

    3 stars
These were too sweet for my taste, maybe less sugar next time.

  6. User avatar larry.graham says:

    3 stars
Is it supposed to be this runny? Mine didn’t set and was more of a pudding 🙁

  7. User avatar joe_banana says:

    1 star
Nothin special. Tasted just ok. Don’t see what the fuss is about. Maybe I’m not a brownie person.

  8. 1 star
Not really my thing, too chocolatey. It’s just too rich. 😬

  9. User avatar zora.nikolaus1979 says:

    4 stars
My toothpick came out with totally wet batter at 30 minutes, so I added 5 more. After that, perfect. Next time I’ll check earlier—oven temps vary so much.

    1. User avatar Trin Tragula says:

      2 stars
Hmm I’m not sure adding 5 more would be right. Wouldn’t that just make them thicker/drier later? Maybe your eggs or flour measurement was off? I bake at 375 and they always come out great, so 350 seems low 🤷‍♂️

    2. User avatar Mr. Kenda Cruickshank says:

      5 stars
That makes sense—my toothpick always lies with brownies. Moist crumbs = good, but a wet smear at 30 min means the pan or oven runs cool. I’ll start checking closer to 20–22 next time too!

  10. User avatar robby.bailey50 says:

    4 stars
I’m not sure about mixing “until combined” only—mine looked dry at first. I ended up folding gently and it came together. If anyone else has that issue, don’t overmix but don’t panic either.

  11. User avatar liberal.hero says:

    1 star
Can someone tell me how much cocoa powder? I think I misread it, my brownies look more like soup.

  12. 1 star
The instructions seem easy but I messed it all up! 🙁

    1. User avatar Wonko the Sane says:

      5 stars
Don’t worry! Cooking can be tricky sometimes. Maybe try again, just take your time. 😊

  13. User avatar Pasta Fasta says:

    2 stars
I don’t think using Baileys in brownies is a good idea, sounds weird.

  14. User avatar leana.lakin says:

    2 stars
I followed the recipe exactly and they’re… kinda bland. The Baileys taste is there but muted, and the texture was more cakey than brownie. Maybe my cocoa was weak? Idk.

  15. User avatar velma.hegmann2018 says:

    5 stars
These brownies are fantastic! The Baileys gives them a unique twist that everyone loved!

    1. User avatar shayla.thiel says:

      5 stars
I can’t wait to try these! Baileys in brownies sounds like a game changer! 😍

  16. User avatar kasey.price35 says:

    3 stars
Not bad, but I don’t drink alcohol. Can I substitute the Baileys with something else?

  17. User avatar glenn.hammes33 says:

    5 stars
Delish! My kids inhaled them, but they don’t even know there’s alcohol in it!

  18. 5 stars
These are ridiculously good—fudgy in the middle with that Baileys flavor coming through. I added a tiny pinch of espresso powder and it made the cocoa taste even deeper. Will definitely bake again for parties!

  19. User avatar tawny.jones says:

    5 stars
These came out fudgy and rich—exactly what I wanted. I swapped in dark cocoa and still used the Baileys, and it tasted like dessert-for-adults. Will make again!

  20. User avatar ShanksOnePiece says:

    3 stars
Are we supposed to use room temperature eggs? I just used cold ones, oops.

  21. User avatar Steve Nienow I says:

    5 stars
These brownies are incredible! The Baileys adds a rich flavor that takes them to the next level.

  22. 5 stars
These brownies are dangerously good. The Baileys gives this rich, slightly creamy vibe without making them taste like “boozy dessert.” I baked closer to 27 minutes and got that perfect fudgy center.

  23. User avatar leo.volkman21 says:

    3 stars
1/4 cup Baileys? What if I want to add more? That’s how you make them better, right?

  24. User avatar salvador.collins says:

    2 stars
Eh, they were fine. I’ve had better from a box mix.

    1. User avatar terminatorXYZ says:

      4 stars
Box mix is nice, but this recipe has Baileys! You really can’t compare. It’s so much richer and tastier. Try again, maybe bake them a bit longer?

    2. 5 stars
Wow, really? These brownies are a game changer! I’ve made them multiple times, and they always impress my friends. Maybe you missed a step?

  25. User avatar glenn.schuster66 says:

    4 stars
So good but is Baileys really necessary? Can you just use regular cream instead? Not sure.

    1. User avatar darrel.schimmel says:

      5 stars
Nah, just cream is boring. Baileys makes it YUM!

    2. 4 stars
You could use regular cream, but Baileys adds a nice flavor! It’s kind of the special touch in these brownies.

  26. User avatar ethyl.glover says:

    1 star
Brownies are good but I have the best recipe from my grandma. Yours is not as good.

  27. User avatar donetta.abshire33 says:

    4 stars
Followed the recipe exactly and they came out great, though I might add a pinch more salt next time for extra chocolate pop. Cooling in the pan really helped the texture.

    1. User avatar karyn.armstrong says:

      5 stars
I did the same—followed it exactly—and they really are great. The cooling in the pan makes a huge difference. Next time I’m definitely adding a tiny pinch more salt like you said for more “chocolate pop.”

    2. User avatar hilario.bruen says:

      3 stars
Mine came out kinda dense… I think I used self-rising flour by accident (oops). Also 25–30 min felt long for my oven, so I pulled them a bit early. Still tasty though, not bad for my first try.

  28. User avatar helaine.jakubowski21 says:

    2 stars
I tried making this and the batter was too thick. I added more butter but still didn’t turn out right. What did I do wrong?

    1. User avatar Samwise Gamgee says:

      4 stars
Maybe you added too much flour when you sifted it? That can make the batter thick. Try following the measurements more closely next time!

  29. User avatar roberto.wilkinson says:

    3 stars
I’m not sure about the Baileys amount… it made the batter feel a little looser than expected. Still tasted good though. Maybe I should’ve cooled the melted butter more before mixing?

  30. User avatar darin.crooks97 says:

    4 stars
Yum! My friends loved them at the party. But I forgot to add the vanilla! Still, they were a hit!

  31. User avatar Dwarven Shpere says:

    1 star
Brownies with alcohol? Not for me. I think I prefer plain chocolate ones. Just not my style.

  32. User avatar lucas.conn says:

    5 stars
Yum! I made these for my husband and he thinks I’m a baking genius now! 😂

    1. User avatar fernando.parisian57 says:

      5 stars
Wow! They sound heavenly! Can’t wait to try them myself!

  33. User avatar Samson Night says:

    2 stars
Brownies r brownies, I guess? they tasted fine but I didn’t see what the big deal was, I prefer cookies.

    1. User avatar jonelle.carroll1998 says:

      4 stars
I get what you mean, cookies have a crunch that brownies just don’t match. But brownies are like gooey little chocolate hugs! Maybe try adding nuts next time?

  34. User avatar Paula Nancy Millstone Jennings says:

    3 stars
I dunno, they came out kinda dry for me. I followed the recipe but maybe I cooked them too long??

    1. User avatar un.schiller20 says:

      4 stars
Yeah, I think maybe they were in the oven for too long. I usually check them a few minutes before the time’s up! Just keep an eye on them next time.

  35. User avatar Leto II Atreides says:

    2 stars
I tried this recipe but ended up with a gooey mess. What did I do wrong?

    1. 3 stars
Gooey mess? Sounds delicious! But yeah, sometimes it’s tricky. Did you follow all the steps?

    2. User avatar Zaphod Beeblebrox says:

      4 stars
Maybe you didn’t bake them long enough? They should be firm but still a little moist inside.

  36. User avatar dot.hoeger38 says:

    5 stars
Yum. Just yum. Need to make more of these. Like NOW.

  37. User avatar ashton.labadie1986 says:

    4 stars
I was skeptical about adding Baileys, but it makes a huge difference. So tasty!

  38. User avatar monroe.medhurst1974 says:

    4 stars
So quick and easy! I messed up a bit but they still turned out great. Thanks!

  39. User avatar camilla.mayert says:

    2 stars
Can I substitute the Baileys with regular milk? Like will it still taste the same? I’m not trying to spend extra money.

  40. User avatar greg.stiedemann says:

    5 stars
These brownies are decadent! Love the hint of Baileys.

  41. 4 stars
I don’t like Bailey’s, so I used some vanilla instead. They turned out good, but very different. Still, nice recipe!

    1. User avatar ava.gislason2024 says:

      4 stars
Glad to hear you adapted the recipe! Vanilla can be a nice twist. I might try that next time!

    2. User avatar ninfa.kris41 says:

      2 stars
But it’s not really brownies without Bailey’s! You missed the good stuff.

  42. User avatar florrie.steuber51 says:

    5 stars
    Brownies + Baileys = heaven! 🍫🍀

    1. User avatar liberal.hero says:

      2 stars
Really? I think the Baileys is a waste. Why mix alcohol with brownies? Seems kinda weird to me.

    2. User avatar jonah.daugherty89 says:

      5 stars
I totally agree! These brownies are the best when you add Baileys. Perfect for a get-together! 🍻

  43. User avatar jovan.watsica0 says:

    4 stars
Yummy! It’s really chocolatey but I think I could add nuts next time!

  44. User avatar damion.baumbach1989 says:

    3 stars
I followed the recipe but mine came out too gooey. I think maybe I baked them too long? Not sure I like the alcohol taste.

    1. 4 stars
I had the same issue! Mine ended up a bit gooey too. Maybe try cutting back on the Baileys next time? I think it can add a lot of moisture.

    2. 3 stars
I don’t think it’s the booze that’s the problem. It’s probably how long you cooked them. Baking is all about timing! 😅

  45. User avatar shirly.gutmann5 says:

    4 stars
Not gonna lie, I was skeptical about adding Baileys to brownies, but it worked. Mine tasted a little boozy after cooling, but it mellowed the next day and was even better.

  46. User avatar williams.doyle97 says:

    3 stars
I used regular eggs and chilled the batter too long, so the texture was kinda thick and they cracked on top. Flavor was good, just the consistency went off. Be careful with timing.

  47. User avatar Glossu "Beast" Rabban says:

    4 stars
Delicious! I used cheap cocoa though and still tasted great. Who knew Baileys could be so versatile!

    1. 5 stars
I had no idea Baileys was so good in brownies! Thanks for sharing your experience, I’m definitely trying this recipe with my cheap cocoa too!

  48. User avatar Spider Worker says:

    2 stars
I tried this recipe, but my brownies came out super dry. Did I bake them too long? 😞

  49. User avatar dione.bartoletti says:

    3 stars
Why do you need to add Baileys? Sounds like a waste of perfectly good whiskey! Just use chocolate.

  50. User avatar starla.little2011 says:

    1 star
1/4 cup Baileys?? Seems like it would ruin the structure. Brownies should be more cocoa and less boozy. Mine turned out kinda weird…

    1. User avatar milo.keeling71 says:

      4 stars
I get what you mean, but 1/4 cup isn’t that much for brownies. Mine usually set fine—maybe your eggs/baking time were the difference?

  51. User avatar erick.hartmann says:

    5 stars
OMG!! Best brownies ever! I just can’t get enough of them!

    1. User avatar trenton.hirthe1981 says:

      5 stars
I totally agree! These brownies are divine! I added nuts to mine, and they were just as good.

    2. 3 stars
But can you really taste the Baileys? I feel like it might just be a gimmick. Hmm.

  52. User avatar isreal.beahan24 says:

    3 stars
I think my eggs weren’t room temp because the batter looked weird for a minute. I still baked them and they turned out… edible. Kinda like cakey brownies? I might reduce baking time next time.

  53. User avatar abe.bauch9 says:

    2 stars
My toothpick came out clean and I panicked lol. I guess I overbaked a little. They’re still yummy, just more like chocolate squares than brownies.

  54. User avatar laurinda.crona58 says:

    5 stars
These brownies are absolutely heavenly! The Baileys adds such a nice kick to them. Will definitely make again!

    1. User avatar rachal.kling57 says:

      5 stars
I made these last weekend and they were a hit! The Baileys really gives it a unique flavor. Definitely going in my regular rotation! 🍫

OMG I LOVE these brownies! Super fudgy and rich, can’t get enough!

  57. User avatar kasey.macejkovic13 says:

Too much sugar! I like chocolate but not when it gives me a headache!

  58. 4 stars
Yummy! But I replaced Baileys with milk and they still turned great. Who needs alcohol anyway! 😊

  59. User avatar marg.watsica81 says:

    4 stars
Followed the recipe exactly and they came out rich and chocolatey. Next time I might add a handful of chocolate chips, but honestly they’re great as-is.
