Chicken Noodle Soup

December 3, 2024

Chicken noodle soup is the ultimate comfort food, especially when you’re looking for something warm, soothing, and nourishing. This classic dish has been a go-to for generations, known for its healing properties and simple, delicious flavors. Made with tender chicken, hearty noodles, and a flavorful broth, it’s perfect for a cozy meal or when you’re feeling under the weather.

To make chicken noodle soup, start by simmering chicken in a rich broth, typically made with chicken stock, vegetables like onions, carrots, and celery, and a variety of seasonings. The slow simmering process ensures the chicken becomes tender, and the broth absorbs all the natural flavors. Once the chicken is cooked, it’s shredded and added back into the broth along with your favorite type of noodles – egg noodles are a popular choice because they soak up the flavorful broth perfectly.

The key to a great chicken noodle soup is the balance of flavors. Fresh garlic, thyme, bay leaves, and parsley bring warmth and fragrance to the broth, while a splash of lemon juice or a pinch of pepper adds brightness and depth. The vegetables add a slight crunch, and the noodles provide a comforting texture that makes each spoonful satisfying.

Chicken noodle soup is a versatile dish, and you can easily adjust it to your liking. For a heartier version, try adding more vegetables or even some greens like spinach or kale. You can also experiment with different types of noodles or pasta shapes to change up the texture. For an extra kick, add a dash of hot sauce or red pepper flakes.

This soup pairs perfectly with a warm slice of crusty bread, a side salad, or a grilled cheese sandwich. It’s the kind of meal that feels like a big hug from the inside, making it a perfect go-to for any occasion, especially on chilly days or when you need a little extra comfort.

Whether you’re looking for a quick dinner or a soothing, homemade remedy, chicken noodle soup is always a satisfying choice.

Good recipe! but my broth was too salty. Next time, I will use no salt broth.

    1. 5 stars
Yeah, I agree! Broth can be super salty sometimes. Good idea to try the no salt kind next time.

    2. User avatar wilfredo.bergnaum3 says:

      3 stars
Mmm, I added a ton of salt and it was great! Maybe I like it salty, but good luck with the low sodium!

  8. 2 stars
Why do you have to cook the noodles in the soup? It makes them too mushy… I just boil mine separately.

Wasn’t sure about the olive oil but I think it adds flavor, didn’t taste greasy at all.

    1. User avatar prairie dog says:

      4 stars
I always thought olive oil was a bit too intense, but I guess it really depends on how much you use! Glad yours turned out tasty.

Olive oil is good for you! Adds flavor and is healthier than butter. I say keep it in your soup.

Super easy to make! Didn’t have chicken so I used leftover turkey. Still great!

  15. User avatar andrea.kunde says:

Pretty good overall, but I think the cooking time for the noodles could be a bit more specific. I had to simmer it a few extra minutes so they weren’t chewy.

  16. User avatar cyrus.nienow says:

    5 stars
Chicken noodle soup should always have chicken! Great recipe, thanks!

  17. 3 stars
Okay, so I followed it exactly (mostly). I chopped the onion kinda big and it was fine, but the soup felt like it needed something—maybe thyme or a bay leaf. Still tasty though.

  29. User avatar pat.nader2008 says:

The cooking time for the noodles surprised me. Mine got soft fast, so I’d reduce time or use a wider noodle that holds up better. Still yummy though!

Yummm! I love chicken noodle soup when I sick. Reminds me of my mother 💕

Chicken noodle soup is the best! This one is good but I added noodles first lol.

  35. User avatar isreal.mann says:

    4 stars
This soup be good but I didn’t have onion. I used scallions instead. Still tasty!

  36. 5 stars
Yummy! I added some garlic and it’s fire! đŸ”„

  37. User avatar rich.landlord says:

    2 stars
I think this needs more chicken! 1 cup ain’t enough for me.

    1. User avatar hans.krajcik says:

      5 stars
I totally agree! More chicken makes it heartier. Maybe add 2 cups next time? Yum!

  38. User avatar Zaphod Beeblebrox says:

I don’t think it needs that much oil. Just my opinion!

    1. User avatar w00d_ch0p says:

      4 stars
I actually think the oil is needed for flavor. It makes the soup richer!

    2. User avatar larissa.mohr says:

      3 stars
Nah, oil is important. Without it, the broth would be too watery!

  39. User avatar Flame Atronach says:

    5 stars
This soup is amazing! Perfect for a cold day.

  40. User avatar dong.walter says:

  41. User avatar Vergie Lind says:

    3 stars
My bad—I forgot to add pepper (đŸ€Šâ€â™‚ïž). Still tasty, but it definitely needed that kick. Will make again once I stop rushing.

    1. 4 stars
      I mean
pepper is optional, right? 😅 I always add more salt than pepper, but if you forgot and it still tasted good, that’s a win. I’d say next time just taste first.

    2. 5 stars
No worries! Pepper really is what ties it together—glad it still turned out tasty. Next time, you’ll get that perfect kick 😄

  42. User avatar chase.wuckert says:

    4 stars
Is it normal for soup to smell this good while cooking? Like, wow.

    1. User avatar Max Quordlepleen says:

      5 stars
Absolutely! The smell of soup cooking is like a warm hug for your kitchen. Enjoy!

  43. User avatar gary.maggio says:

    2 stars
Not gonna lie, the ingredients list is kinda weird—why no garlic or thyme? Chicken noodle soup usually needs more flavor in my opinion. Tasted bland until I added seasoning.

  44. 5 stars
This is the best chicken noodle soup I’ve ever made! So hearty and comforting! 😍

  45. User avatar viviana.pfeffer2022 says:

    3 stars
It was okay, but I expected more flavor. Maybe add some garlic next time? đŸ€”

  46. User avatar nicky.effertz2000 says:

    3 stars
I think chicken noodle soup is just for sick people. But this recipe is pretty nice.

  47. 2 stars
Can’t taste the chicken much. Maybe because 1 cup shredded is too little? I doubled it and it was much better. Also, the salt to taste is vague—start small!

  48. User avatar billie.nolan50 says:

    4 stars
Soo simple and tasty! I added some garlic for extra flavor. Yum!

  49. User avatar isis.borer92 says:

    4 stars
Super easy recipe! I did not have egg noodles so I used spaghetti. Still turned out great!

  50. User avatar herring says:

    3 stars
My soup came out kinda bland, maybe I need to use more salt?

  51. User avatar dinorah.bogisich44 says:

    5 stars
Yum! My kids usually hate soup but they gobbled this one up! It’s a win!

    1. User avatar Feyd-Rautha Rabban says:

      3 stars
Seriously? Soup? Kids actually like that? What have you been putting in it?

    2. User avatar kelsey.weissnat66 says:

      5 stars
That’s awesome! I’ve got picky eaters too, but maybe this will work for them!

  52. User avatar trey.hartmann45 says:

    2 stars
I followed the recipe but it was way too salty for my taste. Maybe try using less salt?

    1. User avatar wanda.dach says:

      4 stars
I totally get that! Salt can really change the flavor. Maybe just try starting with half a teaspoon next time?

    2. User avatar Slartibartfast says:

      3 stars
I dunno, I thought the salt was fine. Maybe it depends on the broth you used? Like, some are pretty salty already.

  53. User avatar jillian.ledner15 says:

    3 stars
Can u use any noodles? I got some weird ones, hope they work.

    1. User avatar arturo.bernhard2008 says:

      5 stars
Yeah, any noodles should work! Just make sure to adjust the cooking time. Enjoy your soup!

    2. User avatar Effrafax of Wug says:

      3 stars
Weird noodles? That’s risky! What kind do ya have? Bet it changes the taste tho.

  54. User avatar janee.watsica29 says:

    4 stars
My grandma’s soup is better, but this one is not bad for a quick fix!

  55. 1 star
Soup? I thought this was a stew!

  56. User avatar Tom Bombadil says:

    4 stars
This is pretty solid, but my noodles took longer than the instructions said. I also added a little garlic because
why not? Next time I’ll probably cut the noodle portion slightly so it stays brothier.

  57. User avatar antonio.nikolaus56 says:

    5 stars
    Soup. Good.

  58. User avatar shane.kassulke90 says:

    3 stars
I’m not sure about the “1 tsp salt to taste” part—mine needed way more because my broth was extra bland. Otherwise great flavor balance.

  59. 5 stars
Yummy! Perfect for rainy days. Made it twice this week already! 👏

  60. User avatar Ma'randru-jo says:

    5 stars
This recipe is amazing! My whole family loved it!

  61. 4 stars
Honestly, I prefer my soup with rice instead of noodles. But this was okay.

    1. User avatar janis.herman62 says:

      4 stars
I think rice would be good too! But there’s just something about the noodles that makes it feel like home. 🏠

    2. User avatar tawna.feest2021 says:

      2 stars
No way! Noodles are the best part! Rice in soup? That’s just weird.

  62. 4 stars
I forgot the noodles and it was still good. Just call it chicken soup! Haha.

  63. User avatar joi.paucek7 says:

    3 stars
I followed the recipe, but my soup came out kinda bland. I think it needs more spices.

  64. User avatar marianela.kilback says:

    4 stars
Perfect comfort food for sick days. Makes me feel all warm inside!

    1. User avatar yasmine.emard says:

      5 stars
I agree! Nothing beats a warm bowl of chicken noodle soup when you feel under the weather. It’s like a hug in a bowl!

    2. 2 stars
I dunno, I always thought chicken noodle soup was overrated. It’s just noodles and chicken, right?

  65. User avatar Werebear says:

    5 stars
Yummm! My kiddos loved it! Will definitely make again.

  66. User avatar susana.weber1956 says:

    3 stars
Followed the recipe exactly and it turned out bland. Needs more seasoning!

  67. User avatar basementDweller says:

    5 stars
This soup is so comforting! Perfect for a rainy day.

  68. User avatar matt.erdman41 says:

    3 stars
I followed the recipe but it turned out bland. I added garlic and more seasoning next time!

  69. User avatar mitch.effertz92 says:

    4 stars
Really good but I would add garlic next time for extra flavor. Thanks for sharing!

  70. User avatar jarrett.oconnell17 says:

    4 stars
Pretty good, but I think 1 cup egg noodles might be a little much if you like it more broth-y. Next time I’ll use a bit less noodles so it doesn’t thicken up too much.

    1. User avatar liliana.borer1959 says:

      4 stars
Good point! I like mine thicker so I don’t mind the 1 cup, but if someone wants more broth-y, starting smaller makes sense. Maybe add noodles gradually?

    2. 5 stars
Totally agree—egg noodles can thicken it up a lot. I usually do a little less too, especially if I know I want it more brothy. Great call!

  71. 4 stars
So simple! But I used spaghetti instead of egg noodles… still yum!

    1. User avatar jade.rempel79 says:

      2 stars
But isn’t it suppose to be egg noodles? I don’t think it would taste the same.

    2. User avatar blake.heathcote97 says:

      4 stars
Spaghetti? That’s unique! I’ve never thought of using that in soup. Glad it turned out yummy for you!

  72. User avatar joseph.hirthe11 says:

    4 stars
Not bad at all. I had leftover shredded chicken so it was super quick. I also threw in some dried thyme and it gave it that restaurant vibe.

    1. User avatar randall.grimes23 says:

      3 stars
I tried thyme too, but mine didn’t taste “restaurant” like you said—more like regular soup. Maybe I used too much onion or not enough salt? đŸ€·â€â™‚ïž

    2. User avatar Frankie and Benjy says:

      5 stars
Nice! Leftover chicken makes it so fast, totally agree. I also like adding thyme at the end so it keeps its flavor.

  73. 4 stars
Pretty good, but I think the cook time for the noodles is longer than the instructions suggest. I had to let it simmer a few extra minutes to get them fully tender. Otherwise flavorful.

    1. 4 stars
Hm yeah maybe. I followed it and my noodles were still a bit firm at the end, so I just kept it going too. Kinda annoying but at least it tasted good.

    2. User avatar wellRespected says:

      5 stars
Good catch! Egg noodles can definitely take longer depending on the brand/thickness. I usually start checking around the lower end of the box time—thanks for the heads-up.

  74. User avatar don.schroeder59 says:

    5 stars
Yum! Reminds me of my grandma’s soup. I’ll be making this again!

  75. User avatar clay.hahn36 says:

    4 stars
I made this today, and it turned out great! Even my picky kids liked it!

  76. 2 stars
I don’t understand why people put so much salt? Isn’t chicken broth already salty?

    1. 3 stars
But salt enhances the flavor! It’s like making a balance, ya know? Just don’t overdo it.

    2. User avatar Skeleton says:

      5 stars
I totally get what you’re saying! Broths can be really salty already. I usually taste before adding any salt.

  77. User avatar Mr. Socorro Wiza says:

    1 star
Soup? More like slop! Didn’t turn out like I expected, noodles were mushy.

  78. 5 stars
Chicken noodle soup is the best! Love this recipe! đŸ˜đŸ„Ł

  79. User avatar thao.bogan12 says:

    3 stars
Its ok, i guess. Where’s the spices, peeps? Shouldn’t there be more flavor?

  80. 5 stars
Made this tonight—so cozy! The carrots and celery softened perfectly, and the egg noodles turned out tender without getting mushy. I used slightly less salt since my broth was already seasoned, and it tasted great.

    1. User avatar adrianna.pagac says:

      5 stars
So glad it came out cozy! I love when the noodles stay tender but not mushy—makes it feel homemade. Thanks for sharing the salt tweak too.

  81. User avatar machelle.wilderman says:

    3 stars
I followed it exactly and it was bland until I added more pepper and a pinch of garlic powder. Next time I’ll bump the seasoning from the start, but the veggie base is solid.

  82. User avatar leigh.gibson21 says:

    2 stars
Not gonna lie, it was kinda bland for me. I followed the recipe exactly and even measured the salt, but it needed more black pepper and maybe a pinch of something like thyme. Still edible though!

  83. User avatar Trin Tragula says:

    3 stars
Why use chicken breast? Dark meat is way better for soups!

  84. User avatar fernando.hermann says:

    5 stars
    Chicken noodle soup? YUM!

  85. 2 stars
Welp, I accidentally used regular sodium chicken broth and now it’s a bit too salty. But the veggie base is legit. Next time I’ll measure salt carefully.

    1. 4 stars
Oh no—been there 😅 I’m glad the veggie base still came through though. Next time maybe use unsalted broth and salt at the very end, since the noodles can also soak up flavor.

    2. User avatar michel.fritsch says:

      3 stars
Salt is tricky, I guess. But if it’s too salty you can fix it by adding more water or more carrots/celery
or even a potato to absorb it (kinda). Idk if it actually works tho.

  86. User avatar latricia.pagac says:

    2 stars
Not gonna lie, I don’t get why people love egg noodles in soup. They always turn into mush for me. If you want firmer noodles, watch the pot like a hawk.

    1. 4 stars
Maybe it’s the timing? If you boil hard, yeah they’ll turn to soup. I usually do 8–10 minutes max, and don’t let it sit too long.

    2. User avatar dino.macejkovic13 says:

      5 stars
I get you—egg noodles can go mushy fast. I’ve found they’re way better if you keep it at a gentle simmer and add them near the end.

  87. User avatar Gaius Helen Mohiam says:

    5 stars
Tastes just like my grandma’s soup! Thank you for this! 🙂

  88. User avatar augustina.dach says:

    5 stars
Made this tonight and it was super comforting. I used homemade broth too and the flavor was way better—still, even with low-sodium it tasted great. The veggies stayed tender and the noodles didn’t get mushy.

  89. User avatar Shad Gorczany says:

    2 stars
Followed the recipe, but my noodles were mushy. Not sure what I did wrong.

    1. User avatar curtis.harber1952 says:

      4 stars
Maybe you cooked the noodles too long? They can get mushy if left in boiling water too long.

    2. User avatar dedra.rippin42 says:

      3 stars
I made this too but my noodles came out fine… did you really follow the time right?

  90. User avatar Lori Sawayn V says:

    5 stars
This turned out so comforting! I added a little garlic and it tasted like the soup my grandma used to make. The noodles stayed perfectly tender too.
