Chicken and Spinach Omelette

March 22, 2024

A delicious omelette filled with chicken and spinach.

If you’re looking for a quick, nutritious, and flavorful breakfast (or even a light lunch), a chicken and spinach omelette is a go-to option. It’s the perfect way to use leftover chicken, sneak in some greens, and fuel your day with protein and healthy fats.

This omelette comes together in just minutes and delivers a delicious balance of flavor and texture. The eggs are soft and fluffy, the chicken is tender, and the spinach adds a fresh, earthy bite that pairs beautifully with the richness of the cheese.

Start by sautéing chopped spinach in a nonstick pan with a little olive oil or butter. Once wilted, add in diced cooked chicken – grilled, roasted, or even rotisserie leftovers all work great. You can also toss in some onions or garlic for extra flavor if you like.

In a separate bowl, whisk eggs with a splash of milk or cream, a pinch of salt, and black pepper. Pour the eggs into the pan, letting them gently set over medium-low heat. Once the eggs are mostly set but still slightly soft on top, optional, sprinkle on your favorite cheese – cheddar, mozzarella, or feta are all great choices.

Fold the omelette over and let it cook for another minute until the cheese melts. The result is a hot, satisfying, and filling meal that feels like a treat but is secretly packed with nutrients.

This chicken and spinach omelette is ideal for busy mornings or as a post-workout meal. It’s low in carbs, high in protein, and customizable with whatever vegetables, herbs, or seasonings you have on hand.

Serve it with a slice of whole grain toast, a side of avocado, or a simple salad for a balanced plate. Whether you’re cooking for yourself or someone else, this omelette is a delicious reminder that healthy eating doesn’t have to be boring – or time-consuming.

Just okay. I’ve had better. The eggs didn’t fluff up like I hoped.

    1. User avatar Dwarven Shpere says:

      4 stars
I had the same issue with the eggs not fluffing up! Maybe try whisking them longer or adding more milk next time?

  4. User avatar alaine.ondricka2015 says:

I made this for breakfast. It was messy and didn’t hold together well. 😕

    1. User avatar shyla.beatty says:

      4 stars
Sounds like you might’ve overcooked it or didn’t let it set properly. Maybe try lowering the heat next time? Good luck!

    Five stars! so good lol

  6. User avatar cornell.champlin29 says:

Solid idea, but 4 eggs + 1/4 cup milk felt a bit thin to me. I’d probably whisk in a splash more milk (or cook a minute longer) next time so it sets better.

Too many steps for me! I’m sticking to toast.

Way better than I thought it would be. I added a pinch of garlic powder and it tasted restaurant-y. Would make again for meal prep.

Looks good, but I don’t trust eggs. Isn’t there a thread about how they’re not good for you? I’m skeptical.

I’m so glad you enjoyed it! I’ve been looking for easy recipes for my family too. This one is definitely going on my list!

Too much onion for my taste. The spinach is nice tho. Might reduce the onions next time.

  11. User avatar jayme.stehr60 says:

    3 stars
Confused: you say cook eggs 2-3 minutes then fold and cook another 2-3—mine got kinda dry after that. Maybe my pan was too hot? Still tasty though.

  12. 1 star
Not goood, my eggs were running everywhere and the chicken didn’t fit. 😂

    1. User avatar jacob.raynor says:

      3 stars
Maybe you should try a smaller pan next time! 😂

    2. User avatar myesha.walter2017 says:

      4 stars
Sounds like you didn’t cook the eggs long enough! They usually need more time to set if they’re running. 🤔

  13. User avatar basementDweller says:

Why do people always put chicken in omelettes? 😅 I’m not convinced, but I tried it anyway. It was alright—mostly the eggs and spinach shine.

  14. 5 stars
I’m not usually a spinach person, but I liked how it wilted down and didn’t taste bitter. Onion timing was spot on too—2-3 minutes did the job.

  15. User avatar terence.hirthe0 says:

    4 stars
I used frozen spinach because that’s all I had. Is that wrong? It still worked out fine lol.

    1. User avatar cindy.bogan says:

      5 stars
Nah, using frozen spinach is totally fine! I do it all the time. Glad it worked out for you!

  16. User avatar milda.mosciski68 says:

Honestly I’m skeptical about putting chicken in an omelette, but the flavor combo works. The onion + spinach made it feel way less “egg-only.”

  17. User avatar craig.bergnaum says:

    5 stars
Made this for breakfast and it was honestly so satisfying. The chicken + spinach combo feels really filling without being heavy. I used a little extra pepper and it was perfect.

I don’t think chicken belongs in an omelette, but it was surprisingly tasty.

  26. User avatar shawana.macejkovic says:

    3 stars
It was ok but a lil bland. I think it needs some spices or sauce, might try again with hot sauce.

    1. 3 stars
Bland? Really? I thought it was perfect as it is. Maybe you just used too little seasoning?

    2. User avatar earnest.stoltenberg says:

      4 stars
I totally agree! A bit of hot sauce could really kick it up a notch. 🥵

  27. User avatar Subrosian Queen says:

Love it. Eggs, chicken, spinach. What’s not to like? A such simple dish.

  28. User avatar denice.dibbert37 says:

    3 stars
Seems like too much work for a breakfast. I just throw eggs in a pan.

  29. User avatar Justin Inch says:

You can’t trust this recipe. Who puts chicken in an omelette? It’s just wrong!

  30. User avatar annamae.kuhlman2001 says:

    2 stars
I tried this last night, but it didn’t come out right. The eggs were too runny. What did I do wrong?

  31. 2 stars
I don’t know… seems like too much work for an omelette. Can’t just fry eggs, you know?

  32. User avatar edwardo.gutkowski says:

    5 stars
5 stars just for being healthy-ish. Also quick breakfast win. My kids ate it (mostly).

  33. User avatar rickiestmorty says:

    4 stars
I followed it mostly, but I added a pinch of garlic powder and a little cheese. Turned out fluffy and not too salty. Would definitely make again.

  34. 4 stars
The instructions are clear, but 2 cups spinach felt like a lot—maybe I had huge spinach leaves. I still cooked it down, it was fine, just took longer.

  35. User avatar stephania.mueller78 says:

    5 stars
This omelette is so good! I love the chicken and spinach combo. Will definitely make it again!

  36. 2 stars
Bruh… i think i overcooked the eggs 😭 still edible tho. i love the chicken part

  37. User avatar napoleon.kozey says:

    5 stars
This is such a solid protein-packed breakfast. I used leftover rotisserie chicken and it turned out great—spinach wilted perfectly and the fold stayed neat.

  38. 3 stars
Why is everyone raving about this? It’s just an omelette. I make better ones with cheese.

  39. User avatar Arthur Philip Deodat says:

    5 stars
Made this for dinner tonight—super easy and it actually tastes like something you’d get at a cafe. The spinach stayed really flavorful, and the chicken made it feel filling.

    1. 5 stars
Nice! I love when an omelette actually turns out “cafe-style” at home 😄 Spinach keeping flavor is the best part.

  40. User avatar lamonica.sawayn says:

    2 stars
1/4 cup milk feels like a lot to me. Mine came out a little too soft/loose, like a frittata instead. Could use less milk or more resting time.

    1. User avatar Mrs. Dorian Harris says:

      3 stars
Hmm idk, my always turn out fine with 1/4 cup milk… maybe your chicken was still too wet? Or the spinach water didn’t get cooked out long enough. Try squeezing the spinach (or cook it longer) and see.

    2. User avatar fawn.hegmann9 says:

      5 stars
I agree—1/4 cup milk can definitely make it a bit loose, especially if the eggs aren’t cooked long enough. I usually skip milk entirely or reduce to a few tablespoons and let it rest 2-3 minutes before folding.

  41. 5 stars
This omelette was so good! Easy to make and very filling!

  42. User avatar felix.green says:

    2 stars
Not sure about the timing. 2-3 minutes for everything seems too fast, my eggs just kept cooking and the filling dried out. Chicken should be warmed but maybe add more milk? I dunno.

    1. User avatar Gag Halfrunt says:

      4 stars
Yeah, if your filling dried out, it’s probably the heat was too high or the chicken sat too long after cooking. I’d add a splash more milk/cheese or even a tablespoon of water when you fold it, just to re-wet the chicken + spinach.

    2. User avatar corene.reynolds says:

      4 stars
I felt the same at first—2-3 minutes can be way too quick depending on your pan and heat. I usually cook onions until they’re truly soft (more like 4-5 min on medium), and I stop egg cook time when it’s just set but still juicy.

  43. User avatar arnetta.jacobi2025 says:

    4 stars
How long do you cook chicken for? My chicken was dry.

    1. 3 stars
I just cook mine wil 4ever. who got time to check temp, right? Add sauce it helps or smother it in cheese!

    2. User avatar darryl.torp90 says:

      4 stars
Usually, chicken shouldn’t take too long to cook, around 12-15 minutes on the stove or until it reaches an internal temp of 165°F. Maybe try a meat thermometer next time? It helps!

  44. User avatar aurelio.feeney2001 says:

    3 stars
I tried it but my omelette didn’t really fold cleanly… it stuck a little even with non-stick. Could be user error, but the flavor was still good.

    1. User avatar raeann.yundt says:

      4 stars
Thanks for sharing! If it stuck, I’d try butter/extra oil and make sure the eggs aren’t overcooked—stop as soon as the edges set so it folds more smoothly. Also giving the skillet a quick wipe before pouring helps.

  45. User avatar levi.littel6 says:

    4 stars
Pretty good—nice balance of savory onion + chicken. I did add a little garlic powder because 2 cups spinach felt a bit bland without it, but still would make again.

  46. 4 stars
Honestly, sounds healthy but kind of bland. I added garlic powder and a pinch of chili flakes and then it tasted way better. Without that, it’s just egg + stuff.

  47. User avatar troy.walsh87 says:

    4 stars
I followed the steps exactly, but mine got a little dry. Next time I’ll add a splash more milk (or cook slightly less) because the edges browned faster than expected.

  48. User avatar claretta.frami73 says:

    3 stars
Not bad but it’s kinda bland without more seasoning. Salt/pepper alone didn’t do it for me—next time I’ll add chili flakes or something.

  49. User avatar spencer.sauer says:

    4 stars
Wow, I tried this and it was so flavorful! Chicken and spinach combo is just perfect.

    1. User avatar jeanett.vandervort says:

      5 stars
I’m glad you enjoyed it! The chicken and spinach really do make a great pairing.

  50. User avatar florencio.littel62 says:

    2 stars
Why use milk? I don like it in my eggs. 2 stars.

  51. 5 stars
Soo delicious! I will be making this every weekend!

  52. User avatar carlo.armstrong says:

    5 stars
Simple and quick! Perfect for breakfast. I added some peppers too.

  53. User avatar philip.hirthe says:

    3 stars
Not bad, but my omelette tore when I tried to fold it. I think I should’ve used lower heat. Flavor was good regardless, just presentation was rough.

  54. User avatar Arthur Philip Deodat says:

    5 stars
Made this for brunch and it turned out fluffy and flavorful. The spinach stays fresh and the chicken makes it feel way more filling than a regular omelette.

  55. User avatar gwyneth.franecki1956 says:

    2 stars
I used frozen spinach and didn’t thaw it first. Oops. It got watery and I had to cook it longer. Next time I’ll squeeze it dry—still edible!

  56. User avatar mathWizard says:

    3 stars
I followed the steps but mine got a little overcooked on the first fold stage. Next time I’ll lower the heat sooner. Still tastes good though!

    1. User avatar Cave Bear says:

      4 stars
Ugh, that’s frustrating—but good call on lowering the heat sooner. Omelettes are so temperature-sensitive. I’ve found medium-low helps a lot during the fold.

    2. User avatar Glossu "Beast" Rabban says:

      3 stars
Mine did the same first time… I think the onion + spinach release water so it cooks weird? Next time I’m gonna cook the eggs less and just trust carryover lol. Still yummy though!

  57. User avatar marci.mohr98 says:

    4 stars
The steps are clear, but I found the timing a bit tight—mine needed closer to 4 minutes after folding to fully set. Still delicious though.

  58. User avatar Shadowfax says:

    4 stars
This is the kind of meal that uses what you have. I had leftover chicken, so I just shredded it and followed the rest. Easy and quick.
