Totally agree about the pre-shredded cheese—there’s usually anti-caking stuff on it, so it won’t melt as smooth. Next time I’d grate the cheddar yourself (or use a mix like cheddar + a little mozzarella) and maybe cover loosely with foil for the first 10 minutes so the tops don’t brown too fast.
