  • 2 cups potatoes peeled and grated

  • 1/2 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil

Instructions
 

  • Preheat the oven to 400°F (200°C) and grease a muffin tin with olive oil.
  • In a large bowl, combine the grated potatoes, shredded cheese, chopped chives, salt, and pepper. Mix until well combined.
  • Scoop the potato mixture into the greased muffin tin, pressing down slightly to compact them.
  • Bake in the preheated oven for 20 minutes or until the tops are golden brown and crispy.
  • Remove from oven and let cool slightly before removing from muffin tin. Serve warm.
