Cauliflower Rice

August 30, 2023

Looking for a lighter, healthier twist on your favorite rice dishes? Cauliflower rice is here to save the day. Made by grating or processing cauliflower into small, rice-like pieces, this low-carb, gluten-free alternative is perfect for those seeking a nutritious substitute for traditional grains.

The beauty of cauliflower rice lies in its versatility. It has a mild flavor that absorbs the taste of whatever you pair it with, making it an excellent side dish for stir-fries, curries, tacos, or even just a simple veggie bowl. It’s also incredibly easy to make, with minimal ingredients required. Simply pulse cauliflower florets in a food processor or grate them by hand, and you’ll have a rice-like texture in seconds.

Once prepared, cauliflower rice can be cooked in a pan with a little oil or butter. A quick sauté over medium heat will transform it into a light and fluffy base that mimics the texture of traditional rice. Add your favorite spices, herbs, or a squeeze of lemon for extra flavor. You can even make it more substantial by tossing in vegetables, such as peas, carrots, or bell peppers, for a colorful, nutrient-packed meal.

This alternative rice is not only a great way to cut back on carbs, but it’s also rich in vitamins, minerals, and fiber. Cauliflower is packed with antioxidants, vitamin C, and folate, making it a great addition to any diet. Plus, it’s perfect for those following keto, paleo, or low-carb diets, as it’s an excellent way to enjoy the texture of rice without the extra calories.

Whether you’re trying to reduce your carb intake or simply want to add more vegetables to your meals, cauliflower rice is an easy and delicious option. It’s quick to prepare, customizable, and can elevate almost any dish into a healthier, lighter version.

I’m surprised how close it feels to rice once it’s cooked. Mine was a little watery though—next time I’ll dry the cauliflower more before processing.

1 head cauliflower = ??? grams tho lol. I wish recipes gave measurements. Still, easy and healthy.

Great for low-carb days. I add onion powder and cook it a bit longer to get some browning—tastes nuttier.

Cauliflower is kinda weird, but whatever this rice stuff is supposed to be, it isn’t rice! Just eat normal rice.

Mine came out a little watery. Next time I’ll make sure the cauliflower is really dry and maybe sauté a minute longer. Still tasty though!

  6. 4 stars
Just 5-7 minutes? Mine wasn’t tender at 5, took like 12. Maybe my cauliflower was bigger/older. Would make again.

Good point! Cauliflower size/age totally changes cook time. I usually go closer to 8-10 min when the florets are chunkier.

Mine took way longer too 😅 5-7 was not it. Also I used frozen cauliflower rice and it was kinda watery—had to cook it longer to dry it out.

This is basically cheating. Cauliflower isn’t rice, so calling it that is misleading. But hey, if it gets you to eat more veggies…

Meh. I thought it would be better. My kids wouldn’t eat it. Not impressed.

I’m not convinced cauliflower can replace rice, but this was alright as a side. The flavor depends a lot on seasoning.

Mine turned out a bit soggy, I think I overcrowded the skillet. Next time I’ll do it in batches. Still pretty good though.

Isn’t cauliflower just a fancy broccoli? Why would I replace rice with it???

    1. 4 stars
Actually, cauliflower rice is a great low-carb alternative! It’s not just broccoli’s sibling. Give it a try!

  12. 2 stars
Not really a fan… gave it a try but it just tasted weird to me.

  13. 3 stars
Not gonna lie, it’s kinda bland with just salt/pepper. I’d recommend adding onion, garlic, or even a splash of soy sauce.

I didn’t have a food processor so I grated the cauliflower. Kinda worked, but it was more like snow than rice. Still edible though.

Wait… if you grated it, wouldn’t it just turn to watery paste? I feel like your skillet step saved you. I’d add it and not over-stir so it doesn’t get soggy.

Snow texture is still better than mush, honestly 😅 Grated cauliflower can work—try pulsing in small batches (or grating a bit coarser) next time so it looks more like rice.

Cauliflower rice? No thanks, it sounds too complicated. 🤷‍♂️

I followed the steps exactly, but my food processor made it more like snow than rice. Still tasted good though—just different texture. Would give 4 stars if it looked better.

This is great. 10/10 for dieting. Cauli rice is the best i swear.

    1. 5 stars
Love this! Cauli rice is definitely the MVP for dieting—just wish it always tasted as good as regular rice 😅 but 10/10 anyway.

  19. 3 stars
I think u missed some steps. Where do I find a food processor? Also, can u use microwave?

  20. 4 stars
The food processor step is key. Mine came out fluffy and the skillet method really improved the texture—will repeat.

  21. User avatar elidia.bashirian says:

I tried this tonight and it turned out way better than I expected. The 5–7 minutes is perfect—tender but not mushy. Super easy side!

  22. 2 stars
Why does this recipe not mention pressing it dry? Like my skillet turned into soup lol. Taste was fine but texture was off.

  23. User avatar theodora.kshlerin29 says:

Sounds easy, but is there a way to make it without a food processor? I don’t have one!

  24. User avatar wilton.huel68 says:

    3 stars
Good, but why does it smell so bad when cooking? Is that normal?

  25. User avatar theodore.padberg says:

So yummy! I added garlic and onions and it was bomb!

Garlic and onions? That’s a great idea! I always thought it needed more flavor. Gotta try it your way next time! 🍽️

Good base recipe, but I added garlic and a squeeze of lemon at the end. Made it taste way more “real rice.” Would recommend.

  27. User avatar Bree Ullrich says:

    5 stars
Yumm! Just add garlic and it’s delicious. Much better than rice! 😊

  28. User avatar jeffrey.hartmann says:

Tried this, but my food processor made it too fine—more like mash than rice. Still edible, just not the texture I wanted.

  29. 1 star
Cauliflower rice is just not the same as real rice. I’ll stick to the original. X(

Mine burned a little even on medium, so watch your heat. Also, I used too much oil maybe—still tasty but heavier than I expected.
