  • 4 medium apples washed and dried thoroughly
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup corn syrup
  • 1 teaspoon vanilla extract

Instructions
 

  • Insert wooden sticks into the top of each apple. Line a baking sheet with parchment paper.
  • In a medium saucepan, combine the heavy cream, butter, sugar, and corn syrup. Cook over medium heat, stirring occasionally, until the mixture reaches 240°F (soft-ball stage) on a candy thermometer.
  • Remove from heat and stir in the vanilla extract. Let cool slightly until the caramel is thick enough to coat a spoon.
  • Hold each apple by the stick and dip into the caramel, turning to coat evenly. Allow any excess caramel to drip off, then place on prepared baking sheet to set.
  • Let the caramel apples cool completely at room temperature before serving or decorating as desired.

    These turned out so glossy and not too sweet—my kids actually kept asking for “the caramel coating.” The 240°F soft-ball stage tip saved me from undercooking!

    Caramel apples are cute but this recipe is kinda intense. 1 cup cream and all that sugar feels like overkill and the mess is real. Also, parchment stuck to mine a little.

      Totally agree—1 cup cream + a full cup of sugar is a lot. Mine tasted amazing but the cleanup was ridiculous 😅 Also yeah, parchment got stuck on one side for me too.

      I don’t think it’s overkill. Soft-ball stage at 240°F is the key—follow the temp and it won’t be so messy. For parchment, try spraying it lightly with oil or using a silicone mat.

    Pretty good, but my caramel seized a bit when I stirred in the vanilla too fast. Next time I’ll wait a minute longer before adding it. Still tasted amazing though.

      Oh nooo—yeah caramel can get cranky if the vanilla goes in too fast. Waiting a minute longer is a great fix. Glad it still tasted amazing though!

    The recipe doesn’t say how quickly to work after dipping… my caramel started setting mid-batch and I had a mess. Otherwise flavor is great.

    Okay but why does mine seize up when I add vanilla? I followed everything else. Maybe my heat was too high? Still not giving up though—next time I’ll lower it.

    I followed the instructions pretty closely and the flavor is great—nice deep caramel. Mine set a bit softer than I wanted, but still delicious. Next time I’ll cool it a touch longer before dipping.

      Totally agree on the deep caramel—mine always ends up super flavorful at that stage. Soft set usually makes me think it was a touch under 240°F or it cooled a bit too soon before dipping. Your “cool longer” plan for next time sounds spot on!

      Mine set softer too until I started waiting longer… I don’t always use a thermometer tho lol. Also I once accidentally used light cream and it didn’t caramelize right. But yours still sounds yummy, and I like the idea of cooling a bit more before dipping.

    I don’t really trust the “soft-ball stage” thing, because my thermometer is kinda cheap and I always get different readings. Mine was more like toffee, but the flavor was still solid.
