Beef and Spinach Fatayer

August 9, 2023

Beef and Spinach Fatayer are savory Middle Eastern pastries filled with a seasoned ground beef and spinach mixture, wrapped in a soft dough and baked until golden. These little hand pies are popular across the Levant and make a perfect appetizer, lunchbox item, or snack for gatherings.

The filling starts with sautéed ground beef, usually cooked with finely chopped onion, garlic, and a blend of warming spices like allspice, cinnamon, black pepper, and a touch of cumin. Once the beef is browned and fragrant, fresh spinach is added and wilted down into the mixture. A squeeze of lemon juice or a spoonful of pomegranate molasses is sometimes added to brighten the flavor and give the filling a bit of tang.

The dough is soft, pillowy, and easy to work with. It’s typically made from a yeast-based mixture of flour, warm water, oil, sugar, and salt. After resting and rising, the dough is rolled out and cut into small rounds. Each round is filled with a spoonful of the beef and spinach filling, then folded into a triangle or boat shape and pinched closed.

Once shaped, the fatayer are brushed with egg wash or oil and baked until the tops are golden and the dough is cooked through. They’re delicious served warm or at room temperature, and they travel well, making them great for picnics or packed lunches.

These pastries combine hearty, spiced meat with earthy greens in a satisfying, handheld form. You can easily make them ahead and freeze them either baked or unbaked for a quick meal later. Whether you serve them with a yogurt dip, a side salad, or just on their own, Beef and Spinach Fatayer offer a delicious taste of Middle Eastern home cooking that’s both comforting and flavorful.

Total Time 50 minutes

Ingredients

  • For the dough: For the dough
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp instant yeast
  • 1/2 cup warm water
  • 1/4 cup vegetable oil
  • For the Filling:
  • 1 pound ground beef
  • 1 onion finely chopped
  • 2 cups spinach chopped, fresh
  • 1 tsp cumin
  • 1 tsp sumac
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • In a large mixing bowl, combine the all-purpose flour, salt, sugar, and instant yeast.
  • Add warm water and vegetable oil to the dry ingredients, and mix until a dough forms.
  • Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
  • Place the dough in a greased bowl, cover with a towel, and let it rise for 1 hour, or until doubled in size.
  • While the dough is rising, prepare the filling. In a skillet, cook the ground beef and onion until the beef is browned and the onion is soft.
  • Add the chopped spinach, cumin, sumac, salt, and black pepper to the skillet. Cook for another 5 minutes, until the spinach wilts.
  • Preheat the oven to 375°F (190°C).
  • Divide the risen dough into 8 equal portions. Roll out each portion into a circle with a diameter of about 6 inches.
  • Place a spoonful of the beef and spinach filling in the center of each dough circle. Fold the edges of the dough over the filling, pinching them together to seal.
  • Arrange the fatayer on a baking sheet lined with parchment paper. Bake for 20 minutes, or until golden brown.
  • Serve the beef and spinach fatayer warm as an appetizer or snack.

This is way too much yeast? Like 1 tsp for only 2 cups flour seems strong. Also I used frozen spinach and it turned watery—should’ve squeezed it better, my bad.

  2. User avatar mathWizard says:

    4 stars
Followed it pretty closely, but my dough didn’t feel very elastic after kneading—maybe my water wasn’t warm enough. Still tasted great though. Next time I’ll proof the yeast first.

  3. 5 stars
This recipe is fantastic! I love the combination of beef and spinach. My family devoured them!

This sounds amazing! I can’t wait to try it. Your family must’ve loved it! 😊

Dough was too hard for me. Had to throw it away. Not worth it.

    1. 4 stars
Sorry to hear that your dough didn’t work out! Making dough can be tricky sometimes. Did you knead it long enough?

    2. 3 stars
I had the same problem! My dough was real hard too. Maybe the measurements were wrong or somethin’.

  5. User avatar jasper.becker2024 says:

    3 stars
Eh, I don’t know. The dough was too thick for my liking. Maybe I did something wrong?

  6. 2 stars
I think 2 cups flour might be too much—ended up with a stiff dough for me. I added a splash more warm water and it finally came together.

  7. 5 stars
As a Lebanese person (or at least I grew up with similar food), this is pretty close. Sumac amount is on point. I might add a tiny bit of garlic to the filling next time.

  8. User avatar smartestRedditor says:

    5 stars
Yum! I added some feta cheese to filling, and it was a hit at my party.

  9. User avatar Ms. Porfirio Kris says:

I tried this but had no idea dough could take so long. I guess I missed the rising part. 😅

  10. 5 stars
Made these for my kids and they loved! Easy to hold and eat. 10/10!

  11. User avatar lawrence.wyman says:

    2 stars
I followed the recipe exactly, but my dough didn’t rise at all. What did I do wrong?

  12. User avatar Margot Fenring says:

    2 stars
Not sure about the measurements… “For the dough: For the dough” made me laugh, but also confused me. Recipe is fine once you ignore the extra text.

    1. User avatar Happy Mask Salesman says:

      4 stars
Lol yeah that “For the dough: For the dough” part is definitely a typo—but once you follow the actual list, it works. The fatayer came out really tasty.

  13. 4 stars
Good recipe. I added a pinch of chili flakes to the filling and it gave it a nice kick. Texture was tender, and the edges sealed well.

  14. 3 stars
Is there a way to make this vegetarian? My husband hates beef.

    1. User avatar Verona Kutch DDS says:

      5 stars
You could try using lentils or mushrooms instead of beef! They add a nice texture too.

    2. User avatar Rhoam Bosphoramus Hyrule says:

      2 stars
Ain’t fatayer supposed to have meat? Can’t believe you wanna mess with tradition!

  15. 3 stars
Do you really need yeast? I didn’t use it and they turned out fine. 🤷‍♂️

  16. User avatar smartestRedditor says:

    5 stars
I’m impressed. The filling stayed juicy even after baking, and the spinach didn’t turn watery. Great balance of cumin/sumac.

    1. User avatar benedict.hilpert says:

      5 stars
Yes!! Mine always gets watery spinach but this sounds like it won’t. Cumin + sumac is such a good combo.

  17. User avatar mireya.mccullough says:

    2 stars
I don’t get why everyone loves these so much. The dough didn’t rise for me and they turned out flat. Not a fan.

    1. 2 stars
Flat dough? Idk, maybe it needed more time to rise? I always let mine rise in a warm place. Also, not a fan of spinach, so def won’t be making these again!

    2. User avatar Douglas Farrell says:

      4 stars
Sorry to hear that! Sometimes the dough just doesn’t cooperate. Maybe your yeast was old? That can happen. I had a similar problem once until I checked my ingredients. Give it another try!

  18. User avatar julius.corkery19 says:

    3 stars
My dough rose… kinda? Like it doubled in 45 min then collapsed after. Not sure if my yeast was old, but the fatayer still tasted okay.

  19. User avatar kimbra.mccullough86 says:

    5 stars
These look legit! I love fatayer, and the sumac + spinach combo is such a winning flavor. I’d just maybe add a little garlic to the filling next time.

  20. User avatar penny.jerde says:

    3 stars
I think sumac is overrated. I left it out and they were still nice. But maybe I’m wrong?

  21. User avatar oPandariaNo says:

    1 star
Really bad! I think I did something wrong, they came out flat and weird. Not a fan.

  22. User avatar collette.lueilwitz says:

    5 stars
Two words: life changing! I could eat these every day!

    1. User avatar chance.beatty3 says:

      5 stars
I totally agree! These are amazing! My family can’t get enough of them!

  23. 5 stars
Wow! These fatayers were a hit at the party! Will make again!

  24. 4 stars
I added some cheese to the filling and they came out super delicious! Yum!

    1. 5 stars
Cheese sounds like a great addition! I might try that next time. Thanks for sharing!

  25. 3 stars
Meh, the filling was kinda bland. I think it needs something else.

    1. User avatar Falmer Gloomlurker says:

      4 stars
I get what you mean! Maybe try adding more spices or some cheese next time? Might kick it up a notch!

  26. User avatar fermin.pouros29 says:

    4 stars
I’m not a fan of spinach but gave it a try. Actually, it was better than I expected!

  27. 5 stars
Yum! I love spinach and beef together, definitely gonna make this on the weekend!

    1. User avatar stefan.haley says:

      2 stars
Spinach and beef? Isn’t that kind of weird? I mean, spinach is good and all, but like, I never thought of mixing it with beef. 🥴

    2. User avatar sheldon.haag2008 says:

      5 stars
Sounds delicious! I’ve never tried these before but definitely want to now. Hope mine turn out as good as yours!

    Five stars. That’s it.

  29. User avatar Draugr Overlord says:

    5 stars
    So good!!!

    1. User avatar evan.hansen97 says:

      5 stars
Right?? 😍 The combo of sumac + spinach is so good. I could eat these straight from the oven.

    2. 4 stars
I liked it too, but mine didn’t get “golden brown” after 20 min—more like pale. Maybe my oven runs cool? Still tasty though!

  30. 3 stars
How do you know when the dough is done rising? Will it double really?

  31. User avatar manuela.romaguera11 says:

    3 stars
My dough didn’t rise to “doubled” after 1 hour—maybe my yeast was old. But I kneaded more and it worked anyway.

    1. User avatar morton.jacobs1990 says:

      5 stars
That sounds exactly like old yeast. Instant yeast usually doesn’t need much babysitting, but if it was dud it won’t rise. Glad you caught it and pushed through!

    2. 4 stars
Mine also didn’t double in 1 hour… I just let it sit like 2 hours and it puffed. Maybe your warm water temp wasn’t warm enough either? 1/2 cup water seems a bit low for 2 cups flour too.

  32. 2 stars
I’m skeptical about using warm water with instant yeast—shouldn’t it be super warm? Mine felt lukewarm and I wasn’t sure.

    1. User avatar Arthur Philip Deodat says:

      5 stars
Warm water can be totally fine even if it feels only lukewarm—instant yeast doesn’t need bath-level warmth like active dry. I usually aim for “warm to the touch” (not hot) and it still rises within the hour.

    2. User avatar blossom.lindgren57 says:

      4 stars
I was skeptical too. But the recipe only calls for 1/2 cup warm water, and I think you just don’t want to kill the yeast with heat. If it didn’t rise much, maybe the water was cooler than you thought or the kitchen was cold.

  33. 5 stars
This is authentic! My grandma used to make these. Only thing I changed was adding feta. So good!

  34. 3 stars
Can I use another meat? I don’t eat beef. 🐓

    1. User avatar rene.kirlin64 says:

      3 stars
Wait, can you actually replace beef with chicken? Sounds risky…

    2. User avatar juliette.douglas says:

      5 stars
You can use chicken! Just adjust the cooking time a bit since chicken cooks quicker. 🍗

  35. User avatar Blade Brothers says:

    3 stars
The filling smelled amazing while cooking. I kinda forgot to preheat though (oops) and they still turned out okay, just less golden.

  36. User avatar hobert.kuhn81 says:

    4 stars
This is a Turkish recipe, right? Not sure why it’s called fatayer but sounds good!

  37. 1 star
Fatayer? More like ‘fat-yer’ stuffed with sadness. Not a fan. Probably won’t try again.

  38. User avatar laraine.gerlach58 says:

    5 stars
It’s so easy! I didn’t even knead the dough properly, but it turned out fine. LOL

  39. User avatar Erma Dietrich says:

    4 stars
I made these but used chicken instead of beef. Still good!

  40. 5 stars
These turned out amazing! My family devoured them in minutes. Definitely a keeper!

    1. User avatar Dan Streetmentioner says:

      5 stars
So glad to hear you liked them! They’re really a family favorite in my house too!

  41. User avatar hobert.toy says:

    5 stars
Absolutely delicious! My family loved it!

  42. User avatar dino.hagenes1978 says:

    5 stars
I had no spinach so used kale instead, and they still turned out great. 👍

  43. User avatar ALTplusF4 says:

    1 star
Wow, this looks complicated. I barely cook anything!

  44. User avatar Malphite says:

    4 stars
Sumac is such a game changer. Mine was a bit tangier than expected, but I think I used extra 😄

    1. User avatar josephine.rath22 says:

      5 stars
Totally get that—sumac can be sneaky. Next time I’ll start with less and taste the filling before committing 😄

  45. User avatar kemberly.labadie6 says:

    3 stars
My fatayer leaked a little while baking 😂. I think I didn’t seal well. Taste was still amazing though—just messy.

  46. User avatar ludie.williamson25 says:

    1 star
Not sure if I did it right. My fatayer fell apart… My dough was a disaster!

  47. User avatar Kris Swift MD says:

    2 stars
I think the oil amount is a typo? 1/4 cup seemed like a lot. It wasn’t bad, just very soft dough—wish I had more crispness.

  48. User avatar geoWizard says:

    4 stars
Solid recipe, but my dough felt a bit sticky at first. I added a dusting of flour while kneading and it turned smooth by the 5 minutes like it said. Flavor is great—next time I’ll maybe bake 2-3 mins longer.

  49. User avatar yong.thompson22 says:

    5 stars
These look so cozy. I love fatayer but mine usually turn out messy—pinching the seal is the key, right? Going to try this exact recipe.

  50. User avatar tod.douglas says:

    4 stars
Super easy and delicious! You can also use chicken instead of beef, just saying.

  51. User avatar martin.walter says:

    1 star
1 hour rise? and 375°F? I messed up the dough (it turned out more like sticky paste lol). The filling tasted good at least, but the folding part was a mess.

  52. 2 stars
This recipe is complicated for me. I’m not a cook and it made my head hurt!

  53. User avatar Audrea Deckow says:

    3 stars
I found the dough tricky to handle. It kept sticking to my hands. Maybe too much water??

  54. 2 stars
I tried making these, but the dough didn’t rise at all. What did I do wrong? 😕

    1. User avatar shiela.wiegand44 says:

      3 stars
Dough is tricky! Did you use fresh yeast? If not, that could be why! Also, double-check your measurements next time. 🙈

    2. User avatar houston.runte32 says:

      4 stars
It sounds like you may not have let the dough get enough warmth or time to rise! Make sure your water is warm but not hot, and give it more time if it’s chilly in your kitchen. Good luck next time! 😊

  55. 3 stars
Who needs fancy stuff when you got recipes like this. Simple and good.

    1. User avatar CTRLplusW says:

      5 stars
Totally agree! Simple recipes like this are the best. Can’t wait to try it!

  56. 2 stars
I’m skeptical about using only 1 onion—mine felt like it needed more, and the beef flavor got a little heavy. Maybe that’s just my taste.

    1. 4 stars
Totally get that—1 onion can be a bit mild. I usually go a little extra onion too, especially if the beef is lean. Glad you still tried it though!

    2. User avatar laurine.reinger says:

      3 stars
I disagree. Mine came out perfect with one onion—maybe you chopped it too big? Also oven temps vary so the beef might have browned harder and tasted heavier.

  57. User avatar rudolf.tromp84 says:

    1 star
Way too many steps for something simple. I just want an easy snack!

  58. User avatar carroll.brekke51 says:

Yummy! These are perfect for parties! Just made a batch last night. Everyone loved them!

    1. 5 stars
So glad to hear everyone loved them! They were a hit at my party too! 🤩

    2. 3 stars
I made these last week and my family thought they were too spiced. Do you really need that much cumin?

  59. User avatar randolph.littel1986 says:

    2 stars
I followed this exactly and mine came out hard as rocks. What went wrong?

  60. 5 stars
So good! 😍 Just like my grandma used to make!

  61. 5 stars
Yum! My kids gobbled these up! Super quick and easy, too. Will make again!

  62. 4 stars
Delicious! These are my new fave snacks. Perfect for parties!

  63. User avatar carmel.jast70 says:

    4 stars
I don’t even know what sumac is! But these still tasted good. Don’t forget to add some hot sauce!

    1. User avatar euna.ankunding1995 says:

      4 stars
Sumac is a spice! You should try it next time. Trust me, it adds a unique flavor. Hot sauce is a great idea too! 🥳

    2. User avatar basementDweller says:

      2 stars
I don’t get why people use exotic spices like sumac. It sounds complicated, but I guess your fatayer was okay. Hot sauce works just as well, right?

  64. 2 stars
Honestly, I found the mix weird. Spinach and beef? Not for me. But the presentation was nice!

  65. User avatar rene.keeling11 says:

    2 stars
I followed the steps but they didn’t come out right. The dough was too sticky even with flour.

  66. User avatar giuseppe.predovic1974 says:

    4 stars
The flavor is legit—kinda tangy and savory. I only wish the dough got a bit more browned, maybe my oven runs cool.

    1. User avatar Mrs. Marlen Torp says:

      5 stars
Totally agree—the tangy/savory combo from the sumac is spot on. I’ve noticed browning depends a lot on oven temps too; mine only gets darker if I let them bake closer to 22–25 min.

    2. User avatar MAGA2024.Trumpster says:

      4 stars
Maybe try brushing the tops with a little oil or egg wash before baking? 375F is fine, but if your oven runs cool, 20 min might just not be enough. Also, parchment can sometimes keep the bottoms lighter.

  67. User avatar NAFO.SUPREMACY says:

    4 stars
Looks good, but can I use chicken instead of beef? My partner won’t eat beef. 🤔

  68. User avatar lizette.bogisich says:

These fatayers are incredible! I can’t believe how easy they were to make. Definitely a new favorite in my house! 🌟

  69. 4 stars
Fatayer? Sounds like something I get at the fair. Delicious!

  70. 3 stars
Made these last night and they were okay but not great. I thought I could taste the flour too much. 😕

  71. User avatar MAGA2024.Trumpster says:

    3 stars
Is sumac necessary? I didn’t have any and used paprika instead.

  72. User avatar Vroomfondel says:

    4 stars
I thought 375°F would be too low for 20 minutes, but it was perfect. They browned nicely. Would love to know how you’d freeze these.

  73. User avatar tissues_with_issues says:

    3 stars
Not bad, but 20 minutes might be short. Mine were pale and I had to bake a few extra minutes to get real golden brown. Also, 8 portions were pretty big for my tray.

  74. User avatar wiley.rempel80 says:

    5 stars
Absolutely delicious! I made these for a party, and they were gone in minutes! 5 stars!

    1. 3 stars
These look great, but do I really need to wait for the dough to rise? I usually skip that step. Is it even worth it?

    2. User avatar Feral Falmer says:

      5 stars
I can’t believe how good these turned out! I added some cheese to the filling, and it was a hit! Definitely making them again!

  75. 4 stars
Beef is overrated, lol. I used chicken instead. 😂 #healthychoice

  76. 4 stars
The filling flavors (sumac + cumin + spinach) sound spot on. I might add a little garlic though because why not 😅

  77. User avatar thaddeus.christiansen69 says:

    5 stars
These fatayers were amazing! So flavorful and crispy. Will make again for sure!

Never thought of mixing beef with spinach, but wow it works! Sneaky veggies!

  79. User avatar rosette.nikolaus1982 says:

Could be better. The filling needz more spices, maybe some chili for a kick?

    1. User avatar kyle.osinski says:

      4 stars
I actually liked it as is! But hey, everyone has their taste. Chili might be too much for some folks.

  80. User avatar loretta.kub says:

    5 stars
Honestly, this recipe is just like my mom used to make, but she used chicken instead of beef. Still delicious, tho.

  81. User avatar pilar.hermiston83 says:

    3 stars
Not bad, but I found the filling slightly too salty for my taste. Next time I’ll cut the salt in half and maybe add more pepper or cumin to balance.

  82. User avatar cole.mclaughlin23 says:

    3 stars
lol mine leaked and got messy. maybe I pinched wrong but still tasted kinda ok. would make again i guess

    1. 5 stars
Ahh I hate when they leak 😭 Next time maybe don’t overfill and really pinch the seams—mine do that if I’m too generous with the filling.

  83. 3 stars
The rising time for the dough is too long. I’m impatient, haha!

    1. User avatar angel.schuppe says:

      5 stars
I totally get you! Waiting is the worst, but trust me, the result is worth it! Maybe try a quicker recipe next time? 😊

    2. User avatar rolanda.crist says:

      4 stars
1 hour seems long, but good things come to those who wait. Just get a snack while you wait! 😂

  84. User avatar mathWizard says:

  85. User avatar leslie.herman1988 says:

Fatayer!!! Yes!!! My grandma used to make these, brings back memories!

    1. User avatar vincenzo.willms says:

      3 stars
Looks good, but I’m not sure about the sumac. Can’t you just use lemon juice instead? I feel like it could work.

    2. User avatar sadye.oconnell55 says:

      5 stars
I loved these from my grandma too! It’s the best feeling to recreate those flavors. Thanks for sharing the recipe!

  86. User avatar sydney.monahan4 says:

    2 stars
Honestly I didn’t love the flavor—too cumin-forward for my taste. I’d cut cumin in half next time.

    1. User avatar maricruz.klocko40 says:

      5 stars
Totally hear you—cumin can overpower fast. I’ve done these before and cutting it down to 1/2 tsp (or even less) made a big difference without losing flavor.

  87. User avatar susy.green70 says:

    4 stars
I think sumac is a little overrated. Could I use lemon juice instead?

  88. User avatar neta.bernhard says:

Absolutely loved this recipe! The flavors are amazing, and the dough turned out perfect. Will make it again!

  89. User avatar tissues_with_issues says:

    3 stars
Need more flavor in the beef side—next time I’ll add garlic or a pinch more cumin. Sumac was good but subtle for me.

    1. User avatar bulah.torphy says:

      5 stars
Totally agree on beef needing a bit more punch. I’ve started adding extra cumin *and* a clove of garlic to the onion before the beef goes in—makes a big difference. Also a pinch more salt usually fixes it for me.

    2. User avatar nathan.bosco says:

      4 stars
Interesting—my sumac always comes through strong. Did you use fresh/old sumac? Mine was subtle once when it had been sitting forever.

  90. User avatar kirsten.rodriguez88 says:

    2 stars
Isn’t it too much yeast? I don’t trust recipes with that much. 🤔

375°F for 20 minutes feels a little short for my oven. I’d check them at 15 and maybe add time if the dough isn’t golden yet.

These fatayers are amazing! I made them for my family, and we devoured all of them in one go! 5 stars!

  93. User avatar marquis.lakin60 says:

    3 stars
Not bad, but my pinched edges didn’t seal well and some filling leaked out. Still tasted good though—just uglier than the picture in my head.

  94. User avatar dewayne.wiegand says:

I don’t know, 1 pound beef for 2 cups spinach seems a bit beef-heavy. But my family ate them fast, so maybe it’s fine.

  95. User avatar mitsue.grimes6 says:

    4 stars
I was skeptical about 375°F only, but they browned nicely. Mine leaked a little, maybe I didn’t pinch hard enough. Still delicious!

    1. User avatar mauro.kub says:

      5 stars
375°F had me worried too, but yeah—browning is the giveaway. I also get a little leak when I’m not careful pinching. Next time I’ll try pressing a bit more around the seam!

  96. User avatar wesley.mclaughlin12 says:

This recipe is amazing! The flavors blend so well together. Will definitely make again!

    1. User avatar travis.reichert85 says:

I totally agree! The flavors are just perfect. I added some feta cheese to mine, and it made it even better!

    2. 3 stars
Looks good, but is it really that easy? I always mess up the dough part. What if I don’t have sumac?

  97. User avatar rickiestmorty says:

    2 stars
Wow, what a mess. Followed the recipe, but they just wouldn’t stay closed. Ended up with a filling explosion. 😩

    1. User avatar cheryll.goyette25 says:

      5 stars
I’ve made these before and they turned out great! Maybe you just need to practice sealing them better. Don’t give up! 🙌

    2. 4 stars
Oh no! That sounds really frustrating! Maybe your dough was too dry or you didn’t pinch the edges well enough? It’s tough when recipes don’t turn out as expected. 😟

  98. User avatar asa.yundt says:

    3 stars
I’m skeptical about using only 2 cups flour for that much dough, but it turned out fine after kneading a little longer. Texture was nice.

  99. 5 stars
Fatayer are the best! Love them! ❤️

      5 stars
Absolutely! They are so delicious and perfect for any occasion! 😍

Dough is supposed to be elastic?? I just mix and bake usually. Hmmm.

  101. User avatar liberal.hero says:

    3 stars
Not sure what went wrong, but mine turned out kinda soggy. Maybe I added too much water? 🤔

  102. User avatar leopoldo.stracke1 says:

These came out *so* golden and the filling was perfectly juicy. I used frozen spinach and squeezed it dry—still great. Will make again for sure.

  103. User avatar basil.gerhold48 says:

    3 stars
I’m skeptical about 20 minutes at 375°F for 6-inch pockets. Mine were a little pale inside. Could be my oven runs cool, but I’ll bake longer next attempt.

  104. User avatar rich.landlord says:

    4 stars
Yummy!!! I didn’t have sumac, so I used lemon. Still nice! Definitely gonna brag to my friends about how good they were.

  105. User avatar Super Saiyan Vegeta says:

    2 stars
The dough didn’t rise for me 😩. Could be my yeast or warm water temps. Anyone else had that happen?

  106. User avatar brain.little95 says:

    5 stars
375°F for 20 minutes is perfect. Got that golden top without burning. The spinach wilted nicely—no watery filling here.

  107. User avatar ha.simonis12 says:

    3 stars
Not sure about 1 tsp sugar in the dough—won’t that make it slightly sweet? I like them savory.

  108. User avatar leonard.fadel says:

    2 stars
Just okay. Don’t think I’ll be making these again. Maybe I need to stick with simpler recipes.

  109. User avatar elwood.wunsch1961 says:

    5 stars
These came out super flavorful—sumac is doing the heavy lifting. Dough was easy to work with and 20 minutes was the perfect bake time for me.

  110. User avatar synthia.boyle says:

    4 stars
Super easy recipe! My kids loved them, and they were fun to make together.

  111. User avatar kathy.prohaska85 says:

    4 stars
I was skeptical but these are surprisingly good! I think I might have added too much cumin tho….

  112. User avatar jonelle.cole1980 says:

    3 stars
Not bad! The filling was flavorful, but I ended up with too much liquid from the spinach even after cooking. Next time I’ll cook it down more.

  113. User avatar bettyann.borer says:

    2 stars
Honestly, I think you can just buy frozen ones! Making dough seems like too much work.

  114. 4 stars
The instructions are clear, but 20 minutes might be short depending on your oven. I added 5 more minutes and finally got that crisp edge.

  115. User avatar katharyn.white1986 says:

    3 stars
I followed it pretty closely, but my dough didn’t seem to rise much after 1 hour. Could my yeast be the issue? Still tasted good.

    1. User avatar kendra.macgyver1985 says:

      5 stars
It could totally be the yeast. Instant yeast usually doesn’t need “proofing,” but if the water wasn’t warm enough (or was too hot), it won’t wake up. I’d try warmer water next time—like just comfortably hot to the touch—then give it a bit more than 1 hour if your kitchen is cool.

  116. User avatar romeo.gorczany34 says:

    5 stars
These came out super tasty—my dough actually rose nicely even though I was a little worried. The sumac with the spinach is such a good combo. Will definitely make again!

    1. 5 stars
Love this! I’m always nervous about yeast dough rising too, so your result makes me feel a lot better. 😄 Sumac + spinach really is such a great combo.

  117. User avatar gail.macgyver says:

    4 stars
The filling smelled amazing while cooking. I’m not sure if I chopped the spinach too finely, but it got a little watery—just drained it and it was fine. Flavor is on point.

    1. User avatar chantelle.volkman says:

      5 stars
Totally agree on the smell 😍 I’ve had the same watery issue with spinach—draining after wilting is the move. Glad the flavor still came out perfect!

  118. User avatar rodolfo.heidenreich1969 says:

    3 stars
I followed it pretty closely but my dough felt a bit dry after kneading. Ended up adding a tiny bit more warm water. Still delicious though—would just tweak the dough next time.

  119. User avatar scotty.jaskolski70 says:

    5 stars
These came out really tasty and not too hard to make. The sumac flavor is legit—makes it feel restaurant-level. I’ll definitely make them again.

    1. User avatar lissa.little87 says:

      5 stars
Love hearing this! The sumac really does make them taste like they came from a proper spot—glad you nailed it.

  120. User avatar chance.harber80 says:

I made these for a party and they disappeared fast. The parchment paper helped a lot—no sticking, easy cleanup.

    1. User avatar Mrs. Jona Champlin says:

      5 stars
Love hearing this! Parchment really is a game-changer for these—glad they didn’t stick and were easy to clean up. Did you use fresh spinach or frozen?

  121. User avatar joshua.lesch49 says:

    4 stars
Good recipe overall! My dough was a little sticky after mixing, but a bit more flour fixed it. Next time I’ll try letting it rise a touch longer than an hour.

    1. User avatar floy.lowe23 says:

      4 stars
Sticky dough happened to me too, but I didn’t add extra flour—I just let it sit covered like 20 min and it firmed up. Not sure if your flour amount works though.

    2. User avatar sima.koepp1959 says:

      5 stars
Thanks for sharing! I’ve noticed dough can get sticky depending on how warm your water is—more flour or a longer knead usually helps. Letting it rise longer sounds spot on.

  122. User avatar tiffani.hettinger1950 says:

    5 stars
This looks delicious! Can’t wait to try it!

    1. 5 stars
I’m so excited for you to try it! It’s one of my favorites! 😊

Looks good, but I dunno, does beef really belong in pastries? Seems odd to me…

  123. 2 stars
I followed it mostly, but I think my yeast was old? The dough didn’t rise much after an hour. I still cooked them and the filling was good—just kinda dense dough. Live and learn.

  124. User avatar winfred.hoeger25 says:

    4 stars
Can you replace beef with chicken? I’m not a fan of beef.

  125. User avatar synthia.kemmer says:

These came out so golden and the spinach filling was super flavorful. I used a little extra sumac and it totally leveled it up. My family asked for more—will definitely make again!

    1. User avatar Dremora Lord says:

      5 stars
Yesss! That golden color + flavorful filling is exactly what I want from fatayer. Love the sumac upgrade—good call.

  126. User avatar pansy.berge says:

So good, simple! I made these for a party and everyone loved them. Thank you!

  127. 4 stars
Pretty solid recipe. My dough was a little dry at first, so I splashed in a bit more warm water while kneading. Also, I think 20 minutes was close—maybe 22 for my oven.

    1. User avatar CTRLplusW says:

      5 stars
Thanks! I’m glad it worked for you. Dry dough happens—adding a splash of warm water while kneading is exactly the kind of adjustment this recipe needs. And yeah, ovens run hot/cold, 22 minutes sounds reasonable.

  128. User avatar marita.parisian96 says:

    3 stars
The dough was hard to roll out! Maybe you should say how thin to make it?

    1. User avatar hyacinth.gusikowski1977 says:

      4 stars
I had the same problem! Maybe the dough needs more water? What do you think?

    2. User avatar CTRLplusW says:

      3 stars
Yeah, I thought the same. They could’ve included a thickness or tips on rolling. But maybe I’m just doing it wrong?

  129. User avatar shayla.corkery says:

    4 stars
Pretty good! I used frozen spinach and squeezed it dry, which helped a lot. Next time I’ll add a touch more pepper.

  130. 4 stars
I followed everything but mine leaked a bit while baking—maybe my pinching was too lazy 😅 Still tasted amazing though.

  131. User avatar felipa.reynolds29 says:

    4 stars
The recipe is pretty straightforward. I used frozen spinach and just squeezed it well, and it still worked great. Flavor was on point.

    1. 5 stars
Nice! I love when recipes are actually straightforward like this. Good to know frozen spinach works too—mine usually tastes watery if I don’t squeeze it well.

    2. User avatar angelo.stoltenberg says:

      3 stars
Hmm I’m not sure about baking at 375 for only 20 mins. My dough usually needs more time to get properly golden—maybe depends on thickness?

  132. User avatar kyle.fadel69 says:

    5 stars
These came out SO good—golden edges, and the spinach + sumac flavor is perfect. I added a tiny squeeze of lemon at the end and it totally woke everything up.

    1. User avatar Dr. Gero says:

      5 stars
Yes!! The sumac really pops—mine did the same. Love that you added lemon at the end 🙌

  133. 4 stars
I followed the steps and it actually worked (rare for me). The dough was elastic, not tough. Sumac + cumin is a winning combo.

  134. User avatar geralyn.dubuque48 says:

    3 stars
My dough didn’t rise much after 1 hour, but I think it was my yeast (old). Still tasty, just more bready than fluffy.

  135. 5 stars
Wow, these taste like something I’d buy at a bakery. My kids ate them fast. Would absolutely make again!

  136. User avatar regenia.tillman72 says:

    3 stars
Not bad, but I’m skeptical about 20 minutes at 375°F. Mine were pale inside and I had to bake longer. Also 8 portions felt like big circles—still tasted good though.

  137. User avatar jarred.legros says:

I tried folding but the seals popped open lol. Maybe I overfilled them. Next time I’ll use less filling.

    1. User avatar Eddie Bull says:

      5 stars
Ahhh I’ve had that happen too 😂 Overfilling will absolutely make the seals pop. Less filling + sealing a bit tighter usually fixes it.

  138. 5 stars
These came out so good—my dough was super soft and the sumac really brightened the whole filling. I’ll definitely make these again.

  139. 2 stars
I’m skeptical about the rise time. Mine didn’t double much after 1 hour, but I baked anyway—still okay though. Also, kneading for only 5 minutes felt short? Idk.

  140. User avatar diego.rohan94 says:

    5 stars
    Yum! 😋

    1. 5 stars
Right?! 😋 The sumac + cumin combo is so good in these.
