Beef and Spinach Fatayer are savory Middle Eastern pastries filled with a seasoned ground beef and spinach mixture, wrapped in a soft dough and baked until golden. These little hand pies are popular across the Levant and make a perfect appetizer, lunchbox item, or snack for gatherings.
The filling starts with sautéed ground beef, usually cooked with finely chopped onion, garlic, and a blend of warming spices like allspice, cinnamon, black pepper, and a touch of cumin. Once the beef is browned and fragrant, fresh spinach is added and wilted down into the mixture. A squeeze of lemon juice or a spoonful of pomegranate molasses is sometimes added to brighten the flavor and give the filling a bit of tang.
The dough is soft, pillowy, and easy to work with. It’s typically made from a yeast-based mixture of flour, warm water, oil, sugar, and salt. After resting and rising, the dough is rolled out and cut into small rounds. Each round is filled with a spoonful of the beef and spinach filling, then folded into a triangle or boat shape and pinched closed.
Once shaped, the fatayer are brushed with egg wash or oil and baked until the tops are golden and the dough is cooked through. They’re delicious served warm or at room temperature, and they travel well, making them great for picnics or packed lunches.
These pastries combine hearty, spiced meat with earthy greens in a satisfying, handheld form. You can easily make them ahead and freeze them either baked or unbaked for a quick meal later. Whether you serve them with a yogurt dip, a side salad, or just on their own, Beef and Spinach Fatayer offer a delicious taste of Middle Eastern home cooking that’s both comforting and flavorful.

Ingredients
- For the dough: For the dough
- 2 cups all-purpose flour
- 1 tsp salt
- 1 tsp sugar
- 1 tsp instant yeast
- 1/2 cup warm water
- 1/4 cup vegetable oil
- For the Filling:
- 1 pound ground beef
- 1 onion finely chopped
- 2 cups spinach chopped, fresh
- 1 tsp cumin
- 1 tsp sumac
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- In a large mixing bowl, combine the all-purpose flour, salt, sugar, and instant yeast.
- Add warm water and vegetable oil to the dry ingredients, and mix until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
- Place the dough in a greased bowl, cover with a towel, and let it rise for 1 hour, or until doubled in size.
- While the dough is rising, prepare the filling. In a skillet, cook the ground beef and onion until the beef is browned and the onion is soft.
- Add the chopped spinach, cumin, sumac, salt, and black pepper to the skillet. Cook for another 5 minutes, until the spinach wilts.
- Preheat the oven to 375°F (190°C).
- Divide the risen dough into 8 equal portions. Roll out each portion into a circle with a diameter of about 6 inches.
- Place a spoonful of the beef and spinach filling in the center of each dough circle. Fold the edges of the dough over the filling, pinching them together to seal.
- Arrange the fatayer on a baking sheet lined with parchment paper. Bake for 20 minutes, or until golden brown.
- Serve the beef and spinach fatayer warm as an appetizer or snack.
Dough was too hard for me. Had to throw it away. Not worth it.
Sorry to hear that your dough didn’t work out! Making dough can be tricky sometimes. Did you knead it long enough?
I had the same problem! My dough was real hard too. Maybe the measurements were wrong or somethin’.
Yum! I added some feta cheese to filling, and it was a hit at my party.
Made these for my kids and they loved! Easy to hold and eat. 10/10!
Do you really need yeast? I didn’t use it and they turned out fine. 🤷♂️
I don’t get why everyone loves these so much. The dough didn’t rise for me and they turned out flat. Not a fan.
Flat dough? Idk, maybe it needed more time to rise? I always let mine rise in a warm place. Also, not a fan of spinach, so def won’t be making these again!
Sorry to hear that! Sometimes the dough just doesn’t cooperate. Maybe your yeast was old? That can happen. I had a similar problem once until I checked my ingredients. Give it another try!
I think sumac is overrated. I left it out and they were still nice. But maybe I’m wrong?
Really bad! I think I did something wrong, they came out flat and weird. Not a fan.
I’m not a fan of spinach but gave it a try. Actually, it was better than I expected!
This is authentic! My grandma used to make these. Only thing I changed was adding feta. So good!
Can I use another meat? I don’t eat beef. 🐓
Wait, can you actually replace beef with chicken? Sounds risky…
You can use chicken! Just adjust the cooking time a bit since chicken cooks quicker. 🍗
Not sure if I did it right. My fatayer fell apart… My dough was a disaster!
Super easy and delicious! You can also use chicken instead of beef, just saying.
This recipe is complicated for me. I’m not a cook and it made my head hurt!
I found the dough tricky to handle. It kept sticking to my hands. Maybe too much water??
I tried making these, but the dough didn’t rise at all. What did I do wrong? 😕
Dough is tricky! Did you use fresh yeast? If not, that could be why! Also, double-check your measurements next time. 🙈
It sounds like you may not have let the dough get enough warmth or time to rise! Make sure your water is warm but not hot, and give it more time if it’s chilly in your kitchen. Good luck next time! 😊
Yummy! These are perfect for parties! Just made a batch last night. Everyone loved them!
So glad to hear everyone loved them! They were a hit at my party too! 🤩
I made these last week and my family thought they were too spiced. Do you really need that much cumin?
So good! 😍 Just like my grandma used to make!
Yum! My kids gobbled these up! Super quick and easy, too. Will make again!
I don’t even know what sumac is! But these still tasted good. Don’t forget to add some hot sauce!
Sumac is a spice! You should try it next time. Trust me, it adds a unique flavor. Hot sauce is a great idea too! 🥳
I don’t get why people use exotic spices like sumac. It sounds complicated, but I guess your fatayer was okay. Hot sauce works just as well, right?
I followed the steps but they didn’t come out right. The dough was too sticky even with flour.
Looks good, but can I use chicken instead of beef? My partner won’t eat beef. 🤔
These fatayers are incredible! I can’t believe how easy they were to make. Definitely a new favorite in my house! 🌟
Fatayer? Sounds like something I get at the fair. Delicious!
Made these last night and they were okay but not great. I thought I could taste the flour too much. 😕
Is sumac necessary? I didn’t have any and used paprika instead.
These fatayers were amazing! So flavorful and crispy. Will make again for sure!
Honestly, this recipe is just like my mom used to make, but she used chicken instead of beef. Still delicious, tho.
The rising time for the dough is too long. I’m impatient, haha!
I totally get you! Waiting is the worst, but trust me, the result is worth it! Maybe try a quicker recipe next time? 😊
1 hour seems long, but good things come to those who wait. Just get a snack while you wait! 😂
Fatayer? Sounds fancy! I made these while watching TV, nice snack!
These fatayers are amazing! I made them for my family, and we devoured all of them in one go! 5 stars!
This recipe is amazing! The flavors blend so well together. Will definitely make again!
I totally agree! The flavors are just perfect. I added some feta cheese to mine, and it made it even better!
Looks good, but is it really that easy? I always mess up the dough part. What if I don’t have sumac?
