Banitsa With Cabbage is a traditional Bulgarian dish that combines flaky pastry with a savory cabbage filling. It’s perfect as a side dish or a main course for a light meal.

Ingredients
  

  • 1 kg cabbage shredded
  • 1 large onion finely chopped
  • 4 tablespoons vegetable oil
  • 3 sheets phyllo pastry
  • to taste salt
  • to taste black pepper freshly ground
  • 1 egg beaten, for brushing

Instructions
 

  • Preheat your oven to 180°C (350°F).
  • In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  • Add the shredded cabbage to the skillet, season with salt and pepper, and cook until the cabbage is softened and reduced in volume, about 10-15 minutes.
  • On a clean surface, lay out one sheet of phyllo pastry. Lightly brush it with vegetable oil, then fold it in half.
  • Place a portion of the cabbage filling along the long edge of the folded pastry. Roll it up tightly into a cylinder.
  • Repeat the process with the remaining pastry sheets and filling. Arrange the rolls in a lightly greased baking dish.
  • Brush the tops of the rolls with the beaten egg for a golden glaze.
  • Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and crisp.

      That sounds like a portioning/folding issue. With 3 sheets, you might be using bigger rolls or leaving less surface area for dough. I usually stretch the sheets a bit and make the filling more evenly spread so it’s not “all cabbage, no phyllo.”

      Ugh, I’ve had the same issue—mine unrolled too. What helped for me was pressing the seam down hard and brushing a little egg/oil right on the edge before rolling. Also, try not to overfill the roll.
