Banana Crumb Muffins

October 3, 2023

Banana crumb muffins are one of those comforting baked goods that feel like a warm hug. They’re soft, fluffy, and packed with banana flavor, but it’s the crumb topping that takes them to the next level. That sweet, buttery layer with just the right amount of crunch adds texture and makes these muffins feel like they came straight from a fancy café.

What makes banana muffins so special is how they turn overripe bananas into something delicious. Instead of tossing out those spotted bananas on your counter, they become the star of the show. The riper the banana, the sweeter and more flavorful your muffins will be. It’s also a great way to reduce food waste while making something your whole family will love.

The batter comes together quickly with pantry staples like flour, sugar, eggs, baking powder, and a splash of vanilla. Adding sour cream or yogurt helps keep the muffins moist and tender. You don’t even need a mixer—just a couple of bowls and a spoon will do. The real magic happens when you sprinkle the crumb topping over each muffin before baking. Made from flour, butter, and brown sugar, the topping bakes into a golden, slightly crispy layer that perfectly contrasts the soft muffin underneath.

Banana crumb muffins are perfect for breakfast, brunch, or as a grab-and-go snack. They also freeze well, so you can make a batch and save some for later. Serve them warm with a pat of butter or a drizzle of honey for an extra treat. You can even toss in some chopped walnuts or chocolate chips if you’re feeling indulgent.

There’s something incredibly satisfying about baking your own muffins, especially when they’re as easy and delicious as these. Whether you’re baking for your family or just want something cozy with your morning coffee, banana crumb muffins hit the spot every time.

While Banana Crumb Muffins may not be the healthiest option out there, they do offer some nutritional value. Bananas are a great source of potassium, which can help regulate blood pressure and support heart health. Additionally, these muffins contain fiber and provide a good amount of energy to keep you going throughout the day.

Made these today—so easy and the banana flavor is super comforting. The crumb topping actually gives a nice little crunch. Will definitely bake again.

There are way too many steps for muffins. I like my quick and easy. Guess I won’t be making these.

  4. 3 stars
Okay, but why do we need both white and brown sugar? Seems unnecessary. I just used brown sugar.

I dunno, I think one sugar is enough. Why complicate it? Just seems like a waste to me.

    2. User avatar ardella.wisoky says:

Brown sugar adds moisture and a deeper flavor! That’s why both are used. Trust me, you’ll love the result!

Baking soda + baking powder combo—does this really rise? Mine barely puffed. Flavor is fine, but it’s more like banana bread muffins.

  6. User avatar brianna.hettinger6 says:

They were okay… I’ve had better banana muffins elsewhere. Could use more flavor.

I think adding more spices like nutmeg or vanilla could really boost the flavor! Just a thought.

But these muffins are good! Maybe you just had some super special ones before?

Loved it! My kids ate them all! 😍

  8. User avatar Dr. Erasmo Mayer says:

Pretty good overall. I used slightly bigger bananas and ended up with a bit thicker batter, but they still baked up nicely. Could’ve used a touch more cinnamon in the topping for my taste.

  9. User avatar ronny.yundt7 says:

These came out super moist and the crumb topping is legit. I used a bit more cinnamon and they smelled like a bakery. Will make again!

can I use oat flour instead of regular flour???

    1. User avatar rickey.dicki42 says:

      2 stars
No way! Regular flour is a must for this recipe. Oat flour might ruin it.

    2. User avatar rolf.maggio1987 says:

      4 stars
Yeah, you can! Oat flour should work fine. It may change the texture a bit though.

Love these muffins! They made my kitchen smell wonderful. My kids gobbled them up in no time. Definitely making again!

These muffins are AMAZING! So moist and flavorful. Will definitely make again!

  13. User avatar raylene.kuhic62 says:

This was an ok recipe, but I think it could use more banana flavor. I used only 2!

  14. 4 stars
Used 4 bananas instead of 3. A bit too sweet but still good! Also baked for 25 min.

    1. User avatar Paula Nancy Millstone Jennings says:

      3 stars
I think 4 bananas might be too much for the recipe, but I’m glad you liked it! Maybe try it with 3 next time? 🤔

  15. User avatar Feyd-Rautha Rabban says:

    5 stars
Man, my kids love these! They disappear in seconds! Thanks for the recipe. 5 stars!

  16. 2 stars
I don’t know, my muffins turned out kinda weird. Maybe I mixed it wrong? The texture was off.

  17. 4 stars
Pretty good comfort muffins. Mine were a little too sweet with both white and brown sugar, so next time I’ll cut the white sugar down a bit.

  18. User avatar moshe.stracke45 says:

These muffins are a hit at my house! Super easy to make and they taste amazing. Definitely a 5!

  19. User avatar sharonda.wilkinson says:

I thought the recipe was too sweet. Maybe less sugar next time?

    1. User avatar zack.zieme1975 says:

      4 stars
I thought it was perfect! The sweetness is what makes them so delicious. Maybe you just need to adjust your taste buds a bit? 😋

  20. User avatar jimmy.koepp56 says:

I followed the measurements but the batter felt thick like cookie dough. Maybe my bananas were smaller? They tasted great though.

    1. User avatar charlotte.reynolds2009 says:

      5 stars
Totally possible—if the bananas were smaller (or more dry), you’ll end up with less “wet” and the batter can get thick like cookie dough. Next time, I’d mash the bananas really well and consider adding 1–2 tbsp milk (or a splash of water) if it looks too stiff.

    2. User avatar luis.konopelski90 says:

      4 stars
Huh, I made these and it was never cookie-dough thick for me. I’m thinking maybe you overmixed at step 5? Also are you sure you used melted butter and not creamed? Either way—great that the flavor still came out good!

  21. User avatar beverley.bashirian59 says:

    3 stars
I dunno, mine came out super dense. Maybe I did somethin wrong? Not gonna blame the recipe tho. 3 stars for effort.

    1. User avatar Lesley Bode says:

      4 stars
Hey, don’t feel too bad! Sometimes it just depends on how ripe the bananas are or if we mix too much. Yours might still be tasty! 🍌

  22. User avatar Leto Atreides says:

    4 stars
My muffins overflowed! I must’ve put too much batter in. Whoops.

  23. User avatar rey.marvin1951 says:

    2 stars
Not sure if I trust a banana muffin recipe with no vanilla… just sayin.

  24. User avatar donovan.gerhold60 says:

    2 stars
They’re okay… not gonna lie. I think 3 bananas might be a lot? Mine tasted slightly sweet and a little “bread-y.”

    1. User avatar anonymous_hacker says:

      3 stars
Huh, mine are always amazing. I use extra mashed bananas and it comes out super moist. Maybe you overmixed or cooked too long? 18-20 mins seems short but it matters.

    2. User avatar hermine.dibbert says:

      4 stars
Totally get you—3 bananas can be a lot depending on how big/sweet they are. If your batter turned out a bit “bread-y,” you might try mashing and using slightly less banana next time or reducing the white sugar a touch.

  25. User avatar patricia.emard34 says:

    3 stars
They were okay, but kinda dense. Maybe I did something wrong?

  26. User avatar tissues_with_issues says:

    5 stars
These muffins are amazing! So fluffy and full of flavor. I added some walnuts too and they were a hit! 🍌

  27. User avatar marcos.treutel says:

I burnt mine, lol. I guess I gotta watch the oven more closely next time. Also the bananas were too ripe for my taste. 1 star.

  28. User avatar hilario.fadel says:

    4 stars
Mmm, these sound nice. I like bananas but not too many. Might try making them with less sugar.

    1. User avatar Dr. Jerrell Emard says:

      3 stars
Bananas are already sweet, why add more sugar? But hey, to each their own! Good luck with the muffins!

    2. 4 stars
Less sugar sounds like a great idea! I always find banana recipes too sweet. Let us know how it turns out!

  29. 2 stars
I messed up and used salted butter—oops. They were still good, just a little too salty for my taste. Cinnamon helped balance it out.

    1. User avatar emmanuel.botsford says:

      5 stars
Oh no 😅 but honestly that cinnamon move is smart. Next time maybe slightly reduce the salt in the batter, since salted butter brings its own salt.

    2. User avatar milissa.robel says:

      4 stars
I always use salted butter by accident too lol. I think 1/2 tsp salt might be too much if butter is salted—maybe try unsalted or cut the salt. Still sounds yummy though!

  30. 2 stars
I don’t get why people love bananas so much. Muffins were okay but not great…

    1. User avatar cornelius.parisian1978 says:

      3 stars
Bananas are overrated, I agree. But muffins? They can be better with other fruit! Try blueberry next time.

    2. User avatar nicholas.quigley46 says:

      5 stars
I don’t know how you can’t love bananas! They give muffins such a nice flavor. Maybe try them with chocolate chips next time!
