Ingredients
  

  • 1 1/2 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 bananas mashed
  • 3/4 cup white sugar
  • 1 egg lightly beaten
  • 1/3 cup butter melted
  • 1/3 cup brown sugar packed
  • 2 tbsp all-purpose flour
  • 1/8 tsp ground cinnamon
  • 1 tbsp butter

Instructions
 

  • Preheat oven to 375 degrees F (190 degrees C).
  • Lightly grease 10 muffin cups or line with muffin liners.
  • In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt.
  • In another bowl, beat together bananas, sugar, egg and melted butter.
  • Stir the banana mixture into the flour mixture just until moistened.
  • Spoon batter into prepared muffin cups.
  • In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon.
  • Cut in 1 tablespoon butter until mixture resembles coarse cornmeal.
  • Sprinkle topping over muffins.
  • Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

    Pretty good overall. I used slightly bigger bananas and ended up with a bit thicker batter, but they still baked up nicely. Could’ve used a touch more cinnamon in the topping for my taste.

      Totally possible—if the bananas were smaller (or more dry), you’ll end up with less “wet” and the batter can get thick like cookie dough. Next time, I’d mash the bananas really well and consider adding 1–2 tbsp milk (or a splash of water) if it looks too stiff.

      Huh, I made these and it was never cookie-dough thick for me. I’m thinking maybe you overmixed at step 5? Also are you sure you used melted butter and not creamed? Either way—great that the flavor still came out good!
