Balkan Blini are delicious, small, fluffy pancakes that are a staple in many Balkan cuisines. They are often served with a variety of toppings such as sour cream, caviar, or fruit preserves.

Ingredients
  

  • 1 cup flour
  • 1 cup milk warm
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tbsp active dry yeast
  • 2 eggs
  • 2 tbsp butter melted
  • as needed butter or oil for cooking

Instructions
 

  • In a large bowl, combine warm milk, sugar, and yeast. Let it sit for about 5 minutes until it becomes foamy.
  • Add the flour and salt to the yeast mixture and mix until smooth.
  • Beat in the eggs one at a time, then stir in the melted butter.
  • Cover the bowl with a clean towel and let the batter rise in a warm place for about an hour.
  • Heat a non-stick skillet over medium heat and lightly coat with butter or oil.
  • Pour a small amount of batter onto the skillet for each blini, about one tablespoon per blini.
  • Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  • Serve warm with desired toppings.

    Yeast didn’t foam for me after 5 minutes (maybe my milk was too hot/cold?). I added a bit more time and eventually it came back, but I was stressed the whole hour.

      Mine take forever too 😩 I think medium heat is too low with thicker batter. I bump it to a bit higher and cook faster, just watch so they don’t brown too quick.

      Totally get you—1 tbsp can be tough if your pan runs smaller or the batter is thicker. Next time try measuring by drop/ladle and look for a thin, even circle. How thick was your batter?

    I tried this and it was kinda bland. I used salted butter by mistake and still needed more salt. Also, the batter took longer to rise than an hour for sure.

    I followed it but my yeast didn’t foam. Might’ve been the warm milk (I think I overheated it). Still ate them as flat pancakes… not bad, just not blini.

      Ahh that makes sense—if the milk was too hot it can kill the yeast, so no foaming. Flat blini are still edible though!
