In a large bowl, combine warm milk, sugar, and yeast. Let it sit for about 5 minutes until it becomes foamy.
Add the flour and salt to the yeast mixture and mix until smooth.
Beat in the eggs one at a time, then stir in the melted butter.
Cover the bowl with a clean towel and let the batter rise in a warm place for about an hour.
Heat a non-stick skillet over medium heat and lightly coat with butter or oil.
Pour a small amount of batter onto the skillet for each blini, about one tablespoon per blini.
Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Serve warm with desired toppings.
