Ingredients
  

  • 4 artichokes large,
  • 1/2 pound shrimp peeled and deveined
  • 1 cup breadcrumbs
  • 1/2 cup parmesan cheese grated
  • 2 cloves garlic minced
  • 2 tbsp parsley chopped fresh
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Prepare the artichokes by cutting off the top third and the stem. Remove the tough outer leaves and trim the sharp tips from the remaining leaves. Using a spoon, scoop out the choke from the center of each artichoke. Place the prepared artichokes in a large pot of boiling water and cook for 15 minutes or until the leaves are tender. Remove the artichokes from the pot and let them cool slightly.
  • In a bowl, combine the breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, olive oil, salt, and pepper. Mix well to combine.
  • Stuff the breadcrumb mixture into the center of each artichoke, making sure to get some between the leaves as well.
  • Place the stuffed artichokes in a baking dish and drizzle with olive oil. Bake in the preheated oven for 45 minutes or until the breadcrumbs are golden brown and the artichokes are tender.
  • While the artichokes are baking, cook the shrimp in a separate pan until pink and cooked through.
  • Serve the baked stuffed artichokes with the cooked shrimp. Enjoy!

    The ingredient list is solid, but I’m not sure 1 cup breadcrumbs is enough for 4 big artichokes. Mine usually eat more stuffing than that 😅

      Good point 😄 I’ve done this and 1 cup can be a little tight for large artichokes—especially if you really pack it between the leaves. I’d probably add a few extra tablespoons (or even scale up to ~1.5 cups) if your artichokes are monsters.

    375°F for 45 minutes seems long to me for the bread crumbs unless you like them super browned. I’d start checking at 30 minutes and rotate the dish.

      Totally agree—45 minutes at 375F can go from “golden” to “too browned” real fast. I usually start checking around 25–30 and rotate. Works great.

    I followed it pretty much exactly and they came out tender, but my stuffing dried out a bit after 45 minutes. Next time I’ll add a splash more olive oil or cover with foil halfway.
