Baked Spiced Stuffed Bell Peppers

July 5, 2024

Baked spiced stuffed bell peppers are a comforting and flavorful dish that combines bold spices, hearty fillings, and tender roasted peppers into one beautiful, wholesome meal. They’re colorful, delicious, and endlessly adaptable, making them a go-to for weeknight dinners, meal prep, or entertaining guests with something vibrant and satisfying.

The foundation of this dish is the bell pepper,  naturally sweet, juicy, and the perfect size to hold a generous scoop of filling. Baking softens the peppers while adding a subtle roasted flavor that pairs perfectly with a well-seasoned stuffing. Whether you prefer red, yellow, green, or orange peppers, each one adds its own touch of color and flavor to the dish.

Inside, the possibilities are endless. A classic filling often includes a mix of cooked rice or grains, ground meat (like beef, turkey, or lamb), onions, garlic, and a medley of warm spices. Think cumin, smoked paprika, coriander, or even a hint of cinnamon for a Middle Eastern twist. Vegetarian versions shine just as brightly with ingredients like lentils, chickpeas, black beans, or crumbled tofu.

Once stuffed, the peppers are placed in a baking dish, sometimes with a splash of tomato sauce or broth to keep everything moist and flavorful as it bakes. Topped with cheese or fresh herbs, they come out of the oven bubbling, golden, and full of comforting aromas.

What makes stuffed peppers such a winner is their balance. They offer protein, vegetables, and grains in one dish, and they look impressive while doing it. You can make them spicy or mild, meaty or plant-based, and they reheat beautifully for leftovers.

Perfect for feeding a crowd or planning meals ahead of time, baked spiced stuffed bell peppers are a flavorful and satisfying way to get creative in the kitchen without complicating dinner.

Love the idea but my kids wouldn’t eat them, anyone else had problems with kids not liking peppers?

I really liked it! The spices were on point. Maybe you just didn’t season it enough?

Just bad. Why do people keep saying these are good? They taste like burnt.

    1. 3 stars
But what if you just cooked it wrong? It sounds good to me, maybe you just burned yours? 🤷‍♂️

    2. 5 stars
I disagree! I love these peppers! They are full of flavor and cooked just right. Maybe you left them in too long?

  6. User avatar jarrod.lynch says:

Why add the rice? Feels unnecessary. Just meat and spices are better.

    1. 4 stars
I think the rice adds a nice texture and makes the dish more filling! Otherwise, it’s just meat in a pepper. But to each their own!

I don’t know, they just didn’t taste right. Maybe too many spices? I prefer them simpler.

I get what you mean! Not everyone likes a lot of spices. Maybe try it without the chili powder next time? I think it could help!

    2. User avatar Lashaunda Legros says:

      3 stars
Simpler is better sometimes, I totally agree! But I love the spices in these. Guess we all have different tastes!

I don’t like bell peppers, but I made this with zucchini instead and it was still yummy!

    1. 5 stars
Zucchini? Wow! That’s a great idea! I might try it too. 🍽️

What kind of rice do you use? I only have basmati and I’m not sure it will work.

    1. 2 stars
I don’t think basmati is right for this. It cooks different, might end up mushy. Maybe try something else if you can.

    2. User avatar vito.runte25 says:

      4 stars
Basmati rice should work fine! It might give a nice flavor actually. Just make sure it’s cooked before adding to the mix.

  10. 1 star
Uh, how do you put the rice in the peppers? I just put them on a plate lol.

    1. User avatar kaycee.schuppe27 says:

      3 stars
Idk, isn’t it just putting things in? Seems simple but maybe I’m wrong, lol. 🤷‍♂️

    2. User avatar ian.stark1991 says:

You just cut the tops off and stuff the rice mixture in! It’s super easy. Just make sure they fit in the pepper nice and snug! 🍽️

  13. 3 stars
I used quinoa instead of rice, tasted healthy but not the same ya know?

  14. 2 stars
Not gonna lie, the spices are kind of overpowering to me. The filling was good, but the paprika taste dominated. Would dial back the chili powder for sure.

    1. User avatar beaulah.mann says:

      5 stars
Totally get that—paprika can be pretty loud. I’d try reducing paprika a bit and starting with half the chili powder, then adjust after a quick taste of the filling before baking.

  15. User avatar marcelene.medhurst says:

I substituted the beef for tofu. It was alright but not what I expected. Next time I might stick to beef.

  16. User avatar dave.green79 says:

  20. 3 stars
I tried this recipe but I used chicken instead of beef. Wasn’t too great. Probably should have followed it.

  21. 3 stars
Not bad, but mine were a bit too spicy. Maybe lessen the chili?

  27. 4 stars
I forgot to buy bell peppers, so I used zucchinis. Not the same but still yummy.

    1. User avatar nelle.sanford says:

      5 stars
Zucchini sounds like a good twist! I think it would still taste nice with all that flavor. Can’t wait to try it your way!

  28. 2 stars
Kinda overcooked the peppers. They turned mushy. 😩 Next time I’ll watch them more closely.

  29. User avatar lawrence.howe26 says:

    3 stars
I thought the spices were too much. Next time I’ll lessen the chili powder.

  30. User avatar hannelore.stracke41 says:

Didn’t like the taste of the peppers. Maybe next time I’ll skip the bell ones. 🤷‍♂️

But isn’t quinoa kinda different than rice? I’m not sure how that would work…

    2. User avatar vinnie.rippin3 says:

      5 stars
Quinoa sounds like a great swap! I might try that next time.

  35. 3 stars
I tried this recipe but I didn’t have ground beef, so I used chicken instead. It turned out ok, but I think beef would be better.

  36. User avatar demetrius.goodwin44 says:

    4 stars
I love this recipe! I swapped the beef for turkey and it worked great! Highly recommend!

  37. 2 stars
Why would you put tomatoes in this? They make it too soggy. Next time, I will skip that part. 2/5

  38. User avatar brandee.macgyver says:

    1 star
This was a fail for me. The rice was hard, and my peppers were burnt. Maybe I cooked it too long? Idk.

  39. User avatar fausto.hirthe1982 says:

    2 stars
I don’t see how these can be good. I attempt this recipe but it seemed too bland with no real flavor. Disappointed.

    1. User avatar Kim Grady says:

      5 stars
Honestly, I thought they were great! Maybe it depends on how you season? I dunno but I loved them.

    2. User avatar hershel.murray99 says:

      4 stars
I totally understand your disappointment! Maybe you could add some extra spices or hot sauce next time? That might help with the flavor. Just a thought!

  40. User avatar Frank N. Stein says:

    3 stars
What’s the point of adding parsley? It’s just for looks. Some might call it a waste.

    1. User avatar rosy.ohara2 says:

      5 stars
Parsley might seem just for looks, but it actually adds a hint of freshness and flavor! Trust me, it’s worth it.
