Ingredients
- 4 Bell peppers large,
- 1 cup cooked rice
- 1 lb ground beef
- 1 onion diced
- 2 cloves garlic minced
- 1 can diced tomatoes
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
- 1/4 cup parmesan cheese grated
- parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground beef, onion, and garlic until the beef is browned and the onion is translucent. Drain any excess grease.
- Stir in the cooked rice, diced tomatoes, paprika, cumin, chili powder, salt, and pepper. Cook for an additional 5 minutes, until well combined.
- Fill each bell pepper with the beef and rice mixture. Place the peppers in a baking dish.
- Sprinkle grated Parmesan cheese over the top of each bell pepper.
- Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, until the peppers are tender and the cheese is melted and golden.
- Garnish with fresh parsley and serve hot.
