Baked Spiced Stuffed Bell Peppers

July 5, 2024

Baked spiced stuffed bell peppers are a comforting and flavorful dish that combines bold spices, hearty fillings, and tender roasted peppers into one beautiful, wholesome meal. They’re colorful, delicious, and endlessly adaptable, making them a go-to for weeknight dinners, meal prep, or entertaining guests with something vibrant and satisfying.

The foundation of this dish is the bell pepper,  naturally sweet, juicy, and the perfect size to hold a generous scoop of filling. Baking softens the peppers while adding a subtle roasted flavor that pairs perfectly with a well-seasoned stuffing. Whether you prefer red, yellow, green, or orange peppers, each one adds its own touch of color and flavor to the dish.

Inside, the possibilities are endless. A classic filling often includes a mix of cooked rice or grains, ground meat (like beef, turkey, or lamb), onions, garlic, and a medley of warm spices. Think cumin, smoked paprika, coriander, or even a hint of cinnamon for a Middle Eastern twist. Vegetarian versions shine just as brightly with ingredients like lentils, chickpeas, black beans, or crumbled tofu.

Once stuffed, the peppers are placed in a baking dish, sometimes with a splash of tomato sauce or broth to keep everything moist and flavorful as it bakes. Topped with cheese or fresh herbs, they come out of the oven bubbling, golden, and full of comforting aromas.

What makes stuffed peppers such a winner is their balance. They offer protein, vegetables, and grains in one dish, and they look impressive while doing it. You can make them spicy or mild, meaty or plant-based, and they reheat beautifully for leftovers.

Perfect for feeding a crowd or planning meals ahead of time, baked spiced stuffed bell peppers are a flavorful and satisfying way to get creative in the kitchen without complicating dinner.

These stuffed peppers are the bomb! I added some hot sauce and it turned out fire! 🔥

  2. 5 stars
These were seriously comforting. The spices (paprika + cumin) came through nicely, and the peppers stayed tender after the extra 10 minutes. I used leftover rice and it worked perfectly. Will make again for meal prep!

  3. User avatar bart.welch says:

    4 stars
Yum! Just made these and they came out sooo good. I added some jalapeños for extra kick!

  4. User avatar newton.miller2003 says:

Love the idea but my kids wouldn’t eat them, anyone else had problems with kids not liking peppers?

  5. User avatar jules.ebert78 says:

    3 stars
Way too much cumin for my taste 😅. My kitchen smelled amazing, but next time I’ll cut it down and add more paprika for balance.

    1. User avatar kermit.thompson says:

      4 stars
Interesting—maybe your cumin was extra strong? I use 1 tsp and think it’s just right, but I’m also a cumin person lol. Next time try fresh spices maybe.

    2. User avatar luis.mayer2025 says:

      5 stars
Totally get that 😅 cumin can be overpowering. Cutting it down and leaning more on paprika sounds like the perfect fix.

  6. User avatar cordell.tillman9 says:

    2 stars
Meh. It was okay. Don’t think I’ll make again.

    1. User avatar lucilla.wuckert88 says:

      2 stars
Honestly, I don’t get what the fuss is about. It looks good but tastes kinda bland. 🤷‍♂️

    2. User avatar cathi.gorczany65 says:

      4 stars
I really liked it! The spices were on point. Maybe you just didn’t season it enough?

  7. User avatar Anna Mull says:

    1 star
Just bad. Why do people keep saying these are good? They taste like burnt.

    1. 3 stars
But what if you just cooked it wrong? It sounds good to me, maybe you just burned yours? 🤷‍♂️

    2. 5 stars
I disagree! I love these peppers! They are full of flavor and cooked just right. Maybe you left them in too long?

  8. User avatar tambra.okuneva28 says:

    4 stars
Pretty good overall. I did have to bake mine about 15 minutes longer because my peppers were huge. Next time I’ll slice the tops a bit thinner. Still tasty and filling.

    1. 5 stars
Glad it turned out! Huge peppers really can throw off the timing—15 more minutes makes total sense. Slicing the tops thinner next time should help the filling heat through faster. Thanks for sharing!

    2. User avatar anonymous_hacker says:

      4 stars
Interesting… I’ve never added extra time for peppers, but mine are usually smaller. Also, you think slicing thinner is the fix? I’d think baking longer would do it. Either way, if it was tasty, I’m in 😄

  9. User avatar jarrod.lynch says:

    1 star
Why add the rice? Feels unnecessary. Just meat and spices are better.

    1. 4 stars
I think the rice adds a nice texture and makes the dish more filling! Otherwise, it’s just meat in a pepper. But to each their own!

  10. User avatar jewel.veum1998 says:

    2 stars
I don’t know, they just didn’t taste right. Maybe too many spices? I prefer them simpler.

    1. User avatar darrick.koss87 says:

      4 stars
I get what you mean! Not everyone likes a lot of spices. Maybe try it without the chili powder next time? I think it could help!

    2. User avatar Lashaunda Legros says:

      3 stars
Simpler is better sometimes, I totally agree! But I love the spices in these. Guess we all have different tastes!

  11. User avatar zackary.feil1950 says:

    5 stars
I don’t like bell peppers, but I made this with zucchini instead and it was still yummy!

    1. 5 stars
Zucchini? Wow! That’s a great idea! I might try it too. 🍽️

  12. User avatar Peregrin Took says:

    4 stars
What kind of rice do you use? I only have basmati and I’m not sure it will work.

    1. 2 stars
I don’t think basmati is right for this. It cooks different, might end up mushy. Maybe try something else if you can.

    2. User avatar vito.runte25 says:

      4 stars
Basmati rice should work fine! It might give a nice flavor actually. Just make sure it’s cooked before adding to the mix.

  13. 1 star
Uh, how do you put the rice in the peppers? I just put them on a plate lol.

    1. User avatar kaycee.schuppe27 says:

      3 stars
Idk, isn’t it just putting things in? Seems simple but maybe I’m wrong, lol. 🤷‍♂️

    2. User avatar ian.stark1991 says:

      5 stars
You just cut the tops off and stuff the rice mixture in! It’s super easy. Just make sure they fit in the pepper nice and snug! 🍽️

  14. User avatar cassandra.breitenberg says:

    5 stars
Wow, this is a keeper! My kids devoured them. Will be making these again!

  15. User avatar lera.goodwin says:

    4 stars
I followed the recipe pretty closely, but my peppers took closer to 40 min instead of 30+10. Still delicious though—will make again.

    1. User avatar sanford.barrows61 says:

      5 stars
Good to know! I usually find peppers are stubborn depending on size—40 min doesn’t surprise me at all. Glad they still turned out delicious 😊

  16. 4 stars
Baked spiced stuffed bell peppurs r awesome! I love makeing them for my family. Perfect for dinner!

    1. User avatar gaston.dickens says:

      2 stars
I dunno… I tried making them once and it didn’t taste great. Maybe I messed up the spices? 🤔

    2. User avatar santos.padberg77 says:

      5 stars
I totally agree! These stuffed peppers are a hit at my house too. They make such a colorful and tasty dinner! 🍽️

  17. 3 stars
I used quinoa instead of rice, tasted healthy but not the same ya know?

  18. 2 stars
Not gonna lie, the spices are kind of overpowering to me. The filling was good, but the paprika taste dominated. Would dial back the chili powder for sure.

    1. User avatar beaulah.mann says:

      5 stars
Totally get that—paprika can be pretty loud. I’d try reducing paprika a bit and starting with half the chili powder, then adjust after a quick taste of the filling before baking.

  19. 4 stars
Not gonna lie, I was skeptical about stuffed peppers with just one can of tomatoes, but the flavor surprised me. Parmesan on top makes it feel kinda fancy.

  20. User avatar marcelene.medhurst says:

    3 stars
I substituted the beef for tofu. It was alright but not what I expected. Next time I might stick to beef.

  21. User avatar willa.mclaughlin86 says:

    4 stars
Simple and delicious. Also, parsley is optional but it really does make it look better. I’ll be making this again.

  22. User avatar dave.green79 says:

    5 stars
My kids gobbled these up! I didn’t have parmesan so I used cheddar. Still delish!

    1. User avatar greg.oreilly says:

      5 stars
Glad your kids loved it! Cheddar sounds like a nice twist on this recipe. Gonna try that next time!

  23. User avatar nicola.breitenberg says:

    5 stars
Yum, I added some jalapeños for heat and it was amazing! Definitely a keeper recipe.

  24. 5 stars
These stuffed peppers were amazing! My family loved them and I will definitely make them again.

  25. User avatar Falmer Shadowmaster says:

    3 stars
I tried this recipe and it was okay…but I think it needed more spice. Like, how about some jalapeños? Just my opinion.

  26. 3 stars
I tried this recipe but I used chicken instead of beef. Wasn’t too great. Probably should have followed it.

  27. 3 stars
Not bad, but mine were a bit too spicy. Maybe lessen the chili?

  28. 5 stars
Five star! The whole house smelled amazing. I’m totally making these for meal prep again.

    5 stars
These were a hit at the dinner table! My kids loved them! Definitely doing this again.

  30. User avatar Hammond Eggs says:

    5 stars
These turned out so comforting and flavorful! The cumin + chili powder combo is perfect, and the peppers stayed nice and tender. I used brown rice and it still worked great.

    5 stars
These stuffed peppers are a family hit! Super easy to make and tasty. Thanks for sharing!

  32. 5 stars
These turned out amazing! My kids loved them!

  33. User avatar Maude L. T. Ford says:

    4 stars
Not gonna lie, cutting tops off peppers sounds like a lot of work for a weeknight. Still, the end result looked good and tasted even better. I’ll use pre-diced onion next time to save time.

  34. User avatar ArabianNights says:

    2 stars
Seems too complicated for me. I just stick to microwave dinners. 😐

  35. 4 stars
I forgot to buy bell peppers, so I used zucchinis. Not the same but still yummy.

    1. User avatar nelle.sanford says:

      5 stars
Zucchini sounds like a good twist! I think it would still taste nice with all that flavor. Can’t wait to try it your way!

  36. 2 stars
Kinda overcooked the peppers. They turned mushy. 😩 Next time I’ll watch them more closely.

  37. User avatar lawrence.howe26 says:

    3 stars
I thought the spices were too much. Next time I’ll lessen the chili powder.

  38. User avatar hannelore.stracke41 says:

    2 stars
Didn’t like the taste of the peppers. Maybe next time I’ll skip the bell ones. 🤷‍♂️

  39. User avatar deandra.waters says:

    2. 3 stars
I dunno, they look a bit complicated for me! But my wife might like it. 🤷‍♂️

  40. User avatar rich.landlord says:

    5 stars
These stuffed peppers were amazing! So flavorful and easy to make. Will definitely add this to my rotation!

    1. 5 stars
I’m so glad you liked them! They’re a family favorite here too. Perfect for meal prep! 😋

    2. 2 stars
Honestly, I found them kinda bland. Maybe I should’ve added more spices or something? 🤔

  41. User avatar giuseppe.kub says:

    4 stars
Easy recipe! I love how colorful the peppers look. Great for a dinner party! 🌈

  42. User avatar gaylene.mayert51 says:

    4 stars
Very easy recipe. I used quinoa instead of rice. Still turned out great!

    1. User avatar aundrea.denesik says:

      3 stars
But isn’t quinoa kinda different than rice? I’m not sure how that would work…

    2. User avatar vinnie.rippin3 says:

      5 stars
Quinoa sounds like a great swap! I might try that next time.

  43. 3 stars
I tried this recipe but I didn’t have ground beef, so I used chicken instead. It turned out ok, but I think beef would be better.

  44. User avatar demetrius.goodwin44 says:

    4 stars
I love this recipe! I swapped the beef for turkey and it worked great! Highly recommend!

  45. 2 stars
Why would you put tomatoes in this? They make it too soggy. Next time, I will skip that part. 2/5

  46. User avatar freddie.nicolas47 says:

    4 stars
Pretty solid recipe, but 30 min covered felt a bit short for my peppers. Next time I’ll bake longer until they’re properly soft. Flavor’s great though—especially with the Parmesan on top.

  47. User avatar brandee.macgyver says:

    1 star
This was a fail for me. The rice was hard, and my peppers were burnt. Maybe I cooked it too long? Idk.

  48. User avatar fausto.hirthe1982 says:

    2 stars
I don’t see how these can be good. I attempt this recipe but it seemed too bland with no real flavor. Disappointed.

    1. User avatar Kim Grady says:

      5 stars
Honestly, I thought they were great! Maybe it depends on how you season? I dunno but I loved them.

    2. User avatar hershel.murray99 says:

      4 stars
I totally understand your disappointment! Maybe you could add some extra spices or hot sauce next time? That might help with the flavor. Just a thought!

  49. User avatar Frank N. Stein says:

    3 stars
What’s the point of adding parsley? It’s just for looks. Some might call it a waste.

    1. User avatar rosy.ohara2 says:

      5 stars
Parsley might seem just for looks, but it actually adds a hint of freshness and flavor! Trust me, it’s worth it.

  50. User avatar rickiestmorty says:

    3 stars
I tried making these but my peppers were too crunchy. Maybe I didn’t bake long enough??

  51. User avatar drema.tromp43 says:

    5 stars
So yum! I added some black beans for extra protein and they were delish! 🌶️

    1. User avatar raelene.stehr says:

      5 stars
That sounds awesome! Black beans are a great addition. I might try that next time. 🌟

    2. User avatar lamar.rosenbaum2003 says:

      2 stars
I dunno, adding beans could change the whole flavor. Aren’t those stuffed peppers supposed to be meat based? 🤔

  52. User avatar Peter Hansen IV says:

    1 star
Why you gotta use so much cheese? I don’t want my heart to stop. 😬

  53. User avatar lucien.okuneva59 says:

    3 stars
Peppers were a little hard to eat. Should have cooked longer. Didn’t stop me tho! LOL

    1. User avatar Cammar Pilru says:

      4 stars
I agree! I always feel like the peppers need more time too. But hey, they still taste great, right? LOL

    2. User avatar mathWizard says:

      3 stars
Shoulda boiled them first or maybe just roasted longer? Who knows, but I love stuffed peppers anyway!

  54. 5 stars
Low effort, high taste! Perfect for weeknight dinners. Try it!

  55. User avatar franklin.stracke says:

    5 stars
Best recipe ever! Easy and delicious. Can’t wait for dinner!

  56. 1 star
This recipe is a scam! No way it takes that long to bake. My oven must be broken! Never again.

  57. User avatar CTRLplusW says:

    3 stars
I followed everything exactly and it still felt like it needed more sauce/juiciness. Maybe 1 can tomatoes isn’t enough? Could add more diced tomatoes or a splash of broth.

  58. User avatar lauren.kiehn1975 says:

    4 stars
So good, but I added some mushrooms and it was even better. Yum!

  59. User avatar ricky.murphy says:

    5 stars
WOW! So good. The flavors were really nice and my kids ate it without complaining!

  60. User avatar Manny Kinn says:

    4 stars
Is it normal for the peppers to be kinda bitter? I think I left the seeds in by mistake. Still tasted ok though.

    1. User avatar marcelle.shanahan1998 says:

      5 stars
Bitter?! Nah, it’s all good! Peppers can taste a little different, but seeds or not, they are fine! 😊

    2. 4 stars
Yeah, leaving seeds in can make them taste a bit bitter. But if you liked it, that’s what matters! 🤷‍♂️

  61. User avatar paulette.kris13 says:

    4 stars
Delicious recipe. I added some corn and black beans for extra flavor. Gonna make this again for sure! 🍽️

  62. User avatar rudy.kutch24 says:

I’m not sure about “stuffed peppers” as a whole, but this one surprised me. The spices made it way more interesting than I expected.

    1. User avatar randy.bogisich1957 says:

      5 stars
Totally agree—paprika + cumin + chili powder together makes it taste way less boring than “regular” stuffed peppers. I didn’t think it would hit that hard either, but the spices really do the heavy lifting.

    2. 3 stars
I kinda get it, but I still feel like stuffed peppers are always a gamble 😅. Did you drain the beef grease? Mine got a little watery once. Maybe my rice wasn’t cooked enough.

  63. User avatar dan.lakin says:

    2 stars
Are bell peppers even healthy? Heard they can be bad for digestive system. Not sure bout this recipe.

    1. User avatar samual.ziemann1984 says:

      2 stars
I dunno, I’ve heard some people say they make your tummy hurt. Maybe just skip the peppers? Would still be good with something else.

    2. User avatar roberta.mayert says:

      5 stars
Bell peppers are actually really good for you! They’re packed with vitamins like A and C. Don’t worry too much about your digestion unless you have a specific intolerance.

    2. User avatar jasper.larson says:

  67. User avatar isidro.bartell1975 says:

Stuff peppers are a lie. Why not just make a casserole? Less work and better taste.

    1. User avatar adelle.ferry66 says:

I mean, who wants to clean all those dishes? Casserole seems easier but not as unique!

    2. User avatar ArabianNights says:

    1. 5 stars
I made these too and they turned out awesome! Definitely a new favorite in our house. Thanks for sharing!

    2. 2 stars
Okay, but do you really need the cheese? Seems like a lotta calories for a veggie dish.

  70. User avatar leola.hayes says:

    2 stars
I think you forgot to mention to boil the peppers first? Mine were a little firm after baking even with the extra 10 mins. Flavor was still good though.

  71. 1 star
Not worth the time. I burned the peppers and the filling just didn’t taste right. I guess it’s just me 🤷‍♂️.

  72. User avatar vernon.maggio90 says:

These turned out so cozy and flavorful! The cumin + paprika combo is legit, and the peppers stayed nice and tender after the foil step. I used quinoa instead of rice and it still worked great.

    1. User avatar norma.quitzon2023 says:

      4 stars
I tried it with quinoa like you, and it was good, but I think I should’ve cooked it a bit less? Mine got slightly mushy. Still flavorful though—would make again. Also I forgot to drain the grease once 😅

    2. User avatar rich.landlord says:

      5 stars
Yes!! Cozy is the perfect word. I did the foil step for the full time and mine stayed tender too. The paprika + cumin combo really makes it taste “restaurant-y.”

Thank you!! I think the golden top comes from the last 10 minutes uncovered—so the Parmesan can brown without the pepper drying out. I also make sure the filling is already pretty juicy from the diced tomatoes, and I don’t bake uncovered longer than the foil-off step.

What can I substitute for beef? I’m not a fan of it. Will chicken work instead?

Kinda bland for me. I used salt and pepper “to taste” but probably not enough—next time I’ll salt the filling more.

Made these last night—so cozy and the spices are spot on. I added a little extra chili powder and it kicked it up perfectly.

They tasted okay, but I think the recipe needed more spices. It was a bit bland for my taste.

I totally agree! I doubled the spices and it turned out so much better. Definitely try adding more next time!

Bland? I thought they were tasty, maybe your tastebuds are broken? Haha!

My cheese didn’t really go golden, it just melted—still tasted great. I think I covered too long with foil.

I tried this but it didn’t taste as good as I thought. The spices were too much for me.

Nice dish but maybe not enough cheese for my liking. I want more cheese!!

Quick to prepare! I added some hot sauce for a kick. Yum!

These stuffed peppers are a lifesaver! So delicious and easy to make. My whole family loved it!

Tasty, but I found it a bit salty—maybe my parmesan was extra salty. Also, draining the grease helped a lot (my skillet was messy otherwise).

I think 375°F is too low—mine took forever. I ended up roasting at like 425°F and it was better, though the cheese browned faster too. Might be my oven, idk.

I like peppers but ain’t no cooked rice in my house, so I used quinoa. Same thing, right? Pretty good though!

Quinoa is good too! I love adding it to different recipes. Great twist!

I dunno about that… quinoa ain’t rice. But if you liked it, that’s what matters! 😂

I’m not sure about the chili powder amount—mine tasted a little too smoky/spicy? Also I drained the grease like it says, but it still seemed a bit dry. Could be my rice though.

That chili powder might be a bit strong—next time I’d try 1/4 tsp or even scale it down, especially if your chili powder is labeled “hot.” And for dryness: did you use plain cooked rice or something drier? I sometimes add a splash of tomato juice or water to loosen the filling.

How is this not just “stuffed peppers” from any cookbook? 😅 But okay, I followed it exactly and it turned out decent. Cheese was melted, meat was cooked, so… thumbs up.

I followed it mostly, but I drained the grease a little too hard and my filling was kinda dry. Added a splash of tomato juice and it fixed it. Recipe is solid though.
