Baked Italian Chicken

June 19, 2024

Baked Italian chicken is the kind of dish that feels like home, no matter where you’re from. It’s comforting, flavorful, and effortlessly elegant, perfect for a family dinner or a casual meal with friends. The beauty of this dish lies in its simplicity. A handful of herbs, a good splash of olive oil, and the rich, savory essence of garlic and tomatoes come together to create something deeply satisfying.

There’s a rustic charm to Italian cooking that makes even the most basic ingredients feel special. With baked chicken, that magic is in the layers. Think juicy, bone-in chicken pieces nestled in a baking dish with cherry tomatoes bursting from the heat, slivers of onion melting into the sauce, and rosemary or oregano lending their earthy aroma. It’s a one-pan wonder that fills the kitchen with the kind of scent that makes everyone wander in, wondering what’s for dinner.

What sets this dish apart is how customizable it is. Some like to add bell peppers for sweetness, while others tuck in olives or capers for a little salty bite. A sprinkle of Parmesan before baking gives the skin a golden crispiness that’s hard to resist. Whether you’re making it with thighs, drumsticks, or a whole cut-up chicken, the result is the same: tender meat, infused with flavor, served alongside pasta, roasted potatoes, or even a chunk of crusty bread to soak up the juices.

Baked Italian chicken isn’t just a meal – it’s an experience. It feels like a Sunday at grandma’s house or a quiet evening in a small trattoria in Tuscany. It reminds us that good food doesn’t have to be complicated to be memorable. It’s the kind of recipe that doesn’t need measuring cups or timers once you’ve made it a few times. You just know. A drizzle of this, a pinch of that, and the result is pure comfort.

Pair it with a glass of red wine, a green salad on the side, and you’ve got yourself a meal that hits all the right notes: simple, soulful, and satisfyingly Italian.

My grandma would never approve of chicken like this.

  2. User avatar goldie.bednar5 says:

Not sure about the ratios—3 tbsp olive oil seems like a lot? I used a smaller amount and it still worked. Also, 1 cup mozzarella is a lot, but I’m not mad about it.

    1. User avatar joesph.prohaska13 says:

      5 stars
I use way more mozzarella 😅 but I’ll admit 1 cup is not crazy. If it melts and gets a little golden on top, that’s basically the win.

    2. User avatar geoWizard says:

      4 stars
Totally get the hesitation—3 tbsp olive oil sounds like a lot until you remember it’s coating 4 breasts. I’ve made it both ways and it still comes out juicy either way. Your smaller amount probably just made it slightly less “basted.”

  3. User avatar stan.nitzsche says:

Too much cheese for my taste. Maybe cut it down next time?

    1. User avatar Paula Nancy Millstone Jennings says:

      4 stars
I totally agree! I think it overpowers the chicken. Less cheese next time, pleeeease!

  4. 4 stars
Quick weeknight meal. The spice mix smells amazing while it bakes. My kid even asked for seconds, so yeah, it passed the test.

    1. User avatar billy.kling53 says:

      5 stars
I made this tonight and it really is a great weeknight bake—my whole kitchen smelled amazing too. Kid-approved is the best review 😄

  5. User avatar julissa.sanford44 says:

    5 stars
Five stars if you like bold seasoning. My kids aren’t usually fans of red pepper flakes but they didn’t even notice—guess we got lucky.

Not gonna lie, I expected more ‘Italian’ from the title. The chicken was good, but the herbs tasted more generic than I thought.

    1. User avatar Thufir Hawat says:

      4 stars
Yeah, I get that—“Italian” can be pretty vague. Maybe the Italian seasoning blend you used is more like an all-purpose herb mix. If you want it more Italian, try adding extra oregano/basil (or even a pinch of thyme) and a little more garlic/pepper. Still, glad the chicken turned out good!

  7. 5 stars
Omg, this is the best chicken dish ever!! So cheesy and flavorful, I’m in love. ❤️

  8. User avatar Galadriel says:

    5 stars
Made this tonight and it came out super juicy. The seasoning blend is spot on, and the cheese top is such a good finishing touch. Will definitely repeat.

  9. User avatar alfonzo.effertz8 says:

    3 stars
Eh, it was alright. I’ve tasted better chicken recipes. 🍗

  10. User avatar johnson.gibson says:

    2 stars
Way too salty for my family. I reduced the salt to 1/2 tsp next time and it was much better.

  11. User avatar shizuko.nicolas says:

    3 stars
The measurements are clear, but I accidentally mixed up garlic powder and onion powder (I know, I know). Still tasted good though? Kinda backwards but yummy.

  12. User avatar geoWizard says:

    3 stars
Not bad, but I prefer breading my chicken. This is more like “seasoned chicken with melted cheese” than a full-on crispy meal.

  13. 4 stars
Good flavor, but 30 min felt a little short for my chicken breasts (mine were thick). I ended up baking closer to 40, then the cheese part was perfect.

  14. User avatar Dominic Vernius says:

    3 stars
I’m skeptical about how much salt is in there (1 tsp). Still, it tasted fine and the cheese layer was nice.

  15. 5 stars
Yummy!! Best hen recipe I ever made. Will make again for sure!

  16. User avatar chasidy.zulauf77 says:

    4 stars
Did anyone try this with chicken thighs? Curious to know! 🤔

    1. 4 stars
I haven’t tried it with thighs, but I think it could work! Thighs are juicier, right?

  17. 1 star
Not worth it. I can just grill the chicken out on the BBQ. This one seems complicated for nothing.

    1. User avatar MAGA2024.Trumpster says:

      4 stars
I think it doesn’t have to be complicated! Baked chicken can be so flavorful, and it’s nice not to stand over the grill. Plus, the cheese makes it a real treat! 🌟

    2. User avatar Edgardo Satterfield II says:

      2 stars
But grilling chicken is way easier, I don’t see the point in baking it when BBQ flavor is the best! 🤷‍♂️

  18. 4 stars
I changed the recipe a bit and added some bell peppers. It was delish! ⭐⭐⭐⭐

  19. User avatar Bertha D. Blues says:

    5 stars
Made this tonight and it was seriously so good—juicy chicken and the seasoning tastes like an Italian deli. Next time I’ll add a squeeze of lemon on top for extra pop.

  20. User avatar basementDweller says:

    2 stars
I followed the recipe exactly but it ended up dry. What did I do wrong?

  21. User avatar kris.paucek82 says:

Is Italian seasoning even real? I just used salt and pepper.

  22. User avatar doretha.grant says:

I don’t know… It seems too simple. I thought it would taste bland.

Not for me. My chicken was dry 😩. Maybe I did it wrong…

  29. User avatar rema.metz35 says:

    2 stars
I don’t know what I did but mine was kinda dry. Maybe my chicken breasts were thin, or I overbaked. Flavor was good though, so I’ll try again with a thermometer.

    1. User avatar Falmer Spellsword says:

      5 stars
Totally sounds like overbaking. 30 min + 10 min can dry out thinner chicken breasts—I’d pull it when the thickest part hits ~165°F. Also letting it rest 3–5 min helps it stay juicy. Next time you could cover loosely with foil for the first half too.

  30. 5 stars
This was finger-lickin’ good! My whole family loved it!

  31. User avatar The Allitnils says:

    2 stars
Too much seasoning, it tasted like a Italian spice bomb went off. Yikes!

  32. 3 stars
Honestly, not that great. Chicken was dry after baking.

    1. User avatar raymon.simonis says:

      4 stars
I had the same issue! I added some chicken broth to keep it moist next time. Maybe try that?

  33. User avatar nicolas.konopelski says:

    3 stars
Sounds good but I aint got half these ingredients on hand. Can I use any chicken?

    1. 4 stars
Yeah, any chicken should be fine! Just adjust the cooking time if it’s a different cut.

    2. 3 stars
I think chicken thighs might work better, they stay juicier. I ain’t no chef tho!

  34. 5 stars
Chicken rocked!! Best dinner dish ever!!!

    1. User avatar Mayor Dotour says:

      2 stars
Really? I tried it but wasn’t impressed. The chicken seemed dry. Did you change anything?

    2. 5 stars
I’m so glad you loved it! This dish is a favorite in our house too. The cheese makes it so yummy!

  35. 2 stars
Looks good, but I don’t think it’s Italian without tomatoes! Just saying.

  36. User avatar regan.tremblay15 says:

    4 stars
Yummm! But I used chicken thighs instead of breasts, came out great!

  37. User avatar lewis.ernser56 says:

    5 stars
This was so easy and delicious! The chicken was juicy and the cheese melted perfectly. Definitely making this again!

  38. 3 stars
Did anyone else find it too salty? 1 tsp of salt seemed too much for me.

  39. 5 stars
Baking chicken is so easy and this recipe is the best. My kids loved it, thanks!

  40. 5 stars
This was amazing! The flavors were so rich and gooey from the cheese.

  41. User avatar clair.fadel50 says:

    4 stars
Baked this last night, but forgot to add garlic. Was still tasty!

    1. User avatar deangelo.hane12 says:

      5 stars
Glad it turned out tasty! Garlic does add a nice flavor, but sounds like you nailed it anyway! 🍗👍

  42. 2 stars
Seems like a lot of oil, ain’t it? I might use less olive oil. 🤷‍♂️

  43. User avatar kori.hickle79 says:

    3 stars
I followed the recipe but I think the chicken was a bit dry. Maybe you should marinate it first? I’m rating 3.

  44. User avatar Glossu "Beast" Rabban says:

    2 stars
Hmmm, is that really gonna taste right? I dunno man.

  45. 4 stars
Easy recipe, but I think 30 min might be a little long for smaller breasts. I pulled mine early and added the cheese step when it was already cooked through. Still great flavor.

  46. User avatar Spider Soldier says:

    3 stars
I’m skeptical about the bake time without mentioning thickness. Mine were thick and took closer to 45 minutes before the middle was done. Flavor still good.

  47. 4 stars
I followed it exactly and the whole kitchen smelled amazing. Only thing: I wish the red pepper flakes were a little more punchy, but maybe that’s my taste.

  48. 5 stars
This was amazing! The chicken was so juicy and flavorful.

  49. User avatar ArabianNights says:

    2 stars
I thought this recipe would be better. The chicken turned out dry and the seasonings weren’t strong enough for my taste.

    1. User avatar avril.leuschke49 says:

      4 stars
I had a similar experience with my chicken! I think it just needs more marinade or maybe cooking it a bit less. Keep experimenting!

  50. User avatar tamisha.mitchell says:

    5 stars
Made this tonight—super flavorful. The Italian seasoning + garlic/onion powders combo is spot on, and the cheese gets that perfect golden top.

    1. User avatar King of Red Lions says:

      3 stars
Hmm I followed it but my chicken came out a little dry after 30+10 min. Maybe my breasts were thicker? Still tasty though—cheese flavor is solid.

    2. 5 stars
Yes!! I made this too and totally agree about that golden cheese top. I added a squeeze of lemon at the end and it was next level 😋

  51. User avatar derek.schmidt says:

    5 stars
My kids loved it! Definitely a keeper. Will make again next week!

    1. 5 stars

I tried it but my kids were like, ‘eww mom, no thanks!’ Maybe I did something wrong? 🤷‍♀️

  52. User avatar dalton.donnelly27 says:

    3 stars
I followed the recipe to the letter but it turned out too salty for my liking. Next time I’ll cut back on the salt.

  53. User avatar henry.osinski says:

    3 stars
How did it say 375 degrees for 30 mins? I put at 400 and it cooked faster.

  54. 2 stars
I burnt mine because I forgot to set a timer 😓. Still tasted okay tho.

  55. User avatar alejandro.pollich1961 says:

    2 stars
375F is pretty low for chicken breast i think—mine took forever. But at least it cooked through safely.

  56. User avatar kristofer.moen says:

    5 stars
    Yum! 🍗👍

  57. User avatar inell.schneider1994 says:

    5 stars
So good! I added a splash of lemon after baking and it totally brightened it up. This is going into my regular chicken rotation.

I replaced the mozzarella with cheddar and it was lit!!! 🔥🔥

  60. User avatar zachary.gleichner says:

Could use more sauce or something—mine felt a little dry even with the olive oil. Next time I’ll add a splash of broth to the pan.

Best? Really? I thought it was just okay. Too much cheese for my taste, I guess.

  62. 4 stars
Pretty good, but 30 minutes felt a bit short for my thick breasts. I ended up doing ~40 minutes total and it came out perfect.

  63. User avatar wen.lang59 says:

    4 stars
I added some vegetables to the dish, made it healthier! 🌽

  64. User avatar terminatorXYZ says:

    3 stars
I don’t really trust recipes with “just bake it 30 min” lol—chicken thickness varies so much. But the seasoning amount was solid.

    1. User avatar ernest.wolff1981 says:

      5 stars
Totally get you. “30 min” is wild—mine always comes out under/over depending on thickness. I usually bake until it hits temp instead of relying on the timer. But yeah, the seasoning blend sounds really solid.

    2. 4 stars
I mean… it worked for me lol. If the chicken is pretty even, 30+10 is fine. I added a little extra cheese too. Maybe trust the recipe more than the chicken thickness 😂

  65. User avatar maxwell.berge1978 says:

    3 stars
Too much cheese, I think. I might cut it in half next time. 🙂

  66. User avatar katelin.emard24 says:

Chicken + cheese = happiness. Definitely a repeat recipe! Just what I needed.

Baked chicken is great too! I mean, grilling is nice, but sometimes you just wanna throw it in the oven and relax!

I also thought it was a grill dish first! But baking it was pretty tasty, right? Helps keep it juicy!

    1. User avatar Dr. Wanita Gusikowski says:

      5 stars
Glad the flavor was there! Yeah, 1 tsp salt can be a lot depending on the salt you use—cutting it in half and adding later is a great call.

I like that it’s simple and uses everyday spices. The parsley garnish makes it look fancy even when you’re just cooking for yourself.

    1. User avatar sharie.welch34 says:

Simple is good, but 30 minutes feels kinda short for chicken breasts? Mine usually needs longer unless they’re thin. Still, the cheese combo sounds great.

    2. User avatar maddie.crooks82 says:

I’m jealous 😄 I’ve made a couple baked chicken recipes but they always come out a bit dry—super glad yours stayed juicy. The combo of Italian seasoning + garlic/onion powders sounds exactly right. Gonna try this for dinner this week!

  78. User avatar shona.kemmer32 says:

Easiest chicken recipe ever! I didn’t have red pepper flakes so I used chili powder. Still turned out great!

    1. User avatar Eccentrica Gallumbits says:

Glad to hear it turned out great! I usually add a bit more garlic for flavor.

    2. User avatar delinda.parker says:

      2 stars
Chili powder instead of red flakes? Hmm, not sure that’s a good swap. Might change the flavor too much!

  79. 3 stars
Quick question: does the oven temp mean 375 *C*? My brain read it as Celsius at first 😅 Either way, it was tasty.

  80. User avatar Tartarus says:

    5 stars
Made this tonight and it turned out super flavorful—especially with the Italian seasoning and the red pepper flakes. The cheese topping came out nice and golden.

      5 stars
Absolutely! I’m always looking for quick meals. Can’t wait to try it!

  85. 4 stars
Pretty tasty, but 30 minutes was not enough for my chicken breasts (they were thick). I ended up baking closer to 40 before the cheese looked right.

    1. 5 stars
Totally agree—30 minutes is usually too short for thicker breasts. I do the same thing and aim closer to 35–40 depending on thickness. Cheese golden + chicken cooked through is the real marker.

  86. User avatar ricky.spencer7 says:

    5 stars
Simple & delicious. Cheese on top is the best part. 375 and 40 minutes is my new go-to.

  87. 2 stars
Eh, I didn’t really like it. My friend said it was good tho. Guess it depends on your taste.

  88. User avatar Rudy Schuppe says:

    2 stars
I followed this recipe but somehow destroyed it. I think I burnt the cheese? Not doing it again.

  89. User avatar geralyn.marquardt says:

This recipe was fantastic! So flavorful and juicy, my family loved it.

  90. 2 stars
Eh, not great. The cheese was too much for me. I like things simple. 2 stars.
