Not sure about the ratios—3 tbsp olive oil seems like a lot? I used a smaller amount and it still worked. Also, 1 cup mozzarella is a lot, but I’m not mad about it.
I use way more mozzarella 😅 but I’ll admit 1 cup is not crazy. If it melts and gets a little golden on top, that’s basically the win.
Totally get the hesitation—3 tbsp olive oil sounds like a lot until you remember it’s coating 4 breasts. I’ve made it both ways and it still comes out juicy either way. Your smaller amount probably just made it slightly less “basted.”
