Baileys Chocolate Mousse

February 27, 2026

Baileys Chocolate Mousse is a luxurious dessert that combines the rich, velvety texture of chocolate with the smooth, creamy flavor of Baileys Irish Cream. It’s indulgent yet airy, making it the perfect treat for special occasions, dinner parties, or a cozy evening when you want something elegant and decadent.

The base of this mousse is high-quality dark or semi-sweet chocolate, melted gently to preserve its deep, intense flavor. Whipped cream is folded in carefully to create a light, airy texture that melts in your mouth. The addition of Baileys brings a subtle warmth and complexity, adding hints of cream, whiskey, and cocoa that elevate the dessert to something truly special.

Preparation is simple but effective. The chocolate is combined with a small amount of warm Baileys or homemade Baileys, and whipped egg whites or cream to achieve a fluffy consistency. Folding must be gentle to maintain the mousse’s airy structure while ensuring the chocolate and liqueur are evenly incorporated. The result is a glossy, smooth dessert that holds its shape beautifully in serving glasses or bowls.

Baileys Chocolate Mousse can be served on its own or garnished for extra flair. A dollop of whipped cream, shaved chocolate, or a sprinkle of cocoa powder enhances the presentation and adds layers of flavor. For a touch of crunch, crushed biscotti, chocolate-covered espresso beans, or toasted nuts work perfectly.

This dessert is as versatile as it is indulgent. It can be made ahead of time, allowing the flavors to meld and the mousse to set in the refrigerator. Each spoonful is rich yet light, with the creamy Baileys flavor shining through alongside the chocolate’s depth.

Baileys Chocolate Mousse proves that elegance doesn’t have to be complicated. Its combination of creamy texture, rich chocolate, and liqueur-infused flavor creates a dessert that is both decadent and memorable. Every bite feels indulgent, making it a perfect finale to any meal.

Honestly, kinda bland. Needs more flavor. I added some vanilla.

  2. User avatar katheleen.anderson37 says:

    3 stars
I found it a bit too sweet for my taste. Maybe less sugar next time?

Yum! I made this for a party and it was a hit!

    1. 2 stars
I dunno… isn’t it too sweet with all that cream and chocolate? I prefer more bitter desserts. 🤔

That sounds amazing! I can’t wait to try it for my next gathering. Thanks for sharing!

  4. 1 star
Mousse is supposed to be fluffy, right? This was more like pudding. 🤷‍♂️

    1. 4 stars
I had the same issue! I think I overmixed mine. 😩 Mousse should have some air in it for sure.

  5. User avatar terry.heidenreich99 says:

    2 stars
Is it really mousse if there’s alcohol in it? Just asking.

    1. User avatar clayton.quitzon22 says:

      2 stars
I don’t know if I’d call it mousse, seems kinda weird to me. Chocolate’s good tho!

    2. User avatar lynda.bogisich14 says:

      5 stars
Yes, it’s still mousse! The alcohol just adds flavor. No rules on that!

  6. User avatar kimiko.pfeffer2 says:

    4 stars
Super easy to make! My kids loved it. Will definitely try again!

  7. User avatar charlesetta.jacobs77 says:

This mousse is divine! The Baileys adds a nice touch.

  8. User avatar catherin.boehm1987 says:

Great recipe but my chocolate seized up. Any tips?

    1. User avatar wilfredo.crona22 says:

      4 stars
Oh no! Make sure the chocolate doesn’t get too hot, or it can seize. Try adding a little butter or oil next time while melting.

  9. User avatar sydney.ritchie68 says:

    5 stars
This is dangerously easy. The texture came out silky, and the Baileys flavor is just perfect—not too boozy. I let it chill closer to 3 hours and it set really nicely.

  10. 5 stars
This turned out so rich and smooth! I was worried about the chocolate seizing, but letting it cool a bit helped a lot. The Baileys flavor is perfect—not too boozy.

  11. User avatar lenora.johnson2018 says:

    4 stars
I was worried the chocolate would seize when I added the Baileys, but it actually stayed smooth after mixing. Chilled for 3 hours and it set nicely.

  12. User avatar delmar.braun says:

    3 stars
Could use more instructions on whipping the cream—mine got a bit grainy. I think I overmixed. Otherwise, it’s a cute dessert.

  13. User avatar Dremora Lord says:

    3 stars
Ok but why is there no mention of tempering the chocolate? I melted it and it seized up a bit when I added the Baileys, so I had to start over. Maybe my chocolate was the issue.

  14. 2 stars
I tried this and it turned out like chocolate pudding? Still edible, just not mousse-y. Maybe my folding was too aggressive.

  15. User avatar rolland.waelchi5 says:

    2 stars
Meh. Too rich for me. Also I didn’t have Baileys so I used something else and it tasted kinda weird.

  16. User avatar Torchbugs says:

    5 stars
Not gonna lie, I was skeptical about no-bake mousse with just chocolate + cream + Baileys… but it actually worked. Smooth and creamy!

  17. User avatar herman.botsford31 says:

    5 stars
Made this last night—so rich and silky. I was worried about the chocolate seizing, but letting it cool a bit helped. Tasted like dessert shop mousse.

  18. User avatar orval.pagac16 says:

    3 stars
Not gonna lie, mine turned out a little bitter. I think my dark chocolate was too high in cocoa %, or I didn’t cool it enough before adding the Baileys.

  19. 5 stars
Baileys + chocolate is basically cheating. The texture was light and creamy, not too sweet. I used less powdered sugar and it was perfect.

  20. User avatar bradley.rutherford says:

    2 stars
Meh… tasted okay but I wanted more chocolate punch. Also I got impatient and didn’t refrigerate long enough, so it kinda melted on me.

  21. User avatar lemuel.schmidt says:

    2 stars
I tried it but my whipping cream didn’t make soft peaks (maybe I used the wrong cream? it was like 30%?). Ended up more like chocolate cream than mousse. Still good though.

  22. User avatar maria.kassulke says:

    3 stars
I’m not sure about using only 100g chocolate for a whole cup of cream. It was tasty, but I wanted it thicker and more chocolatey.

    1. User avatar tommy.mraz93 says:

      5 stars
That makes sense—100g for a whole cup of cream can end up more “moussey” than super chocolate-forward. If you want it thicker and darker, try adding another 25–50g chocolate (just melt and fold the same way).

  23. User avatar Phuong Oberbrunner says:

    4 stars
Not gonna lie, I thought it would be too boozy. But once it chilled, the flavor mellowed a lot. Very balanced.

  24. User avatar daniel.rowe89 says:

    3 stars
Not gonna lie, I don’t trust recipes with only 4 ingredients. It’s a dessert, sure, but this feels too simple. Still… it tastes pretty good.

  25. User avatar dayle.cremin2023 says:

    2 stars
Eh. I followed it exactly and still felt kinda bland. Maybe my Baileys was old? Or I should add more sugar? Idk.

  26. User avatar contessa.langworth says:

    4 stars
The instructions say “soft peaks,” but mine stayed liquid until I whipped longer. After chilling the flavor really came together. Would make again.

    1. User avatar Chi Shenlong says:

      5 stars
Yep, I had the same issue—“soft peaks” is vague. Mine didn’t firm up until I went longer and made sure the cream was really cold. Chilling makes it taste way more chocolatey too. Definitely making again!

    2. User avatar gino.gerhold says:

      3 stars
I think I overwhipped, it got kind of thick and grainy (maybe the chocolate cooled too much?) 😅 Still ate it though. Next time I’ll watch the peaks more carefully and chill it longer like you said.

  27. User avatar ronald.jones1991 says:

    3 stars
I followed the steps exactly and it still looked grainy. Maybe my chocolate wasn’t finely chopped enough? Also, my Baileys separated a bit, but I saved it by folding gently.

  28. User avatar Samwise Gamgee says:

    4 stars
Is 100 grams of chocolate only? That seems kinda low for how rich it tastes. I guess the cream makes up for it, but I’d try more next time.

  29. User avatar erminia.leannon1986 says:

    4 stars
2 hours is not enough for my fridge, i think. After 4 hours it set better. Also, I chopped the chocolate too big at first, but microwaving fixed it.

    1. User avatar Godiva Headache says:

      4 stars
2 hours works for me only if my fridge is really cold. If it’s not, it’s still a little pudding-like 😅

    2. User avatar Mr. Prosser says:

      5 stars
I agree—2 hours doesn’t seem long enough. Mine always firms up way better after closer to 4 hours, too.

  30. User avatar Lintilla says:

    5 stars
This is dangerously easy. I let the chocolate cool just a bit and it turned out silky. The Baileys flavor is spot on—dessert glasses disappeared fast.

  31. User avatar Chaurus Hunter says:

    4 stars
2 hours is NOT enough for me. I left it overnight and it was perfect—thicker and cleaner in texture. Next time I’ll plan ahead.

    1. 4 stars
Hmm, I did only 2 hours and mine was kinda like a soft pudding… not bad, but not mousse-y. So I believe you—maybe my fridge is colder than yours? 🤷‍♀️

    2. User avatar tissues_with_issues says:

      5 stars
Overnight makes sense! I’ve noticed chocolate-based desserts get that thicker, “cleaner” set once they’ve had more time to chill. I’ll be planning ahead too next time.

  32. User avatar Super Saiyan 3 Goku says:

    3 stars
Okay, so I followed it but my mousse came out a little runny. I think I under-whipped the cream—next time I’ll whip longer. Still tasty though!

  33. User avatar dot.jacobson says:

    4 stars
Made it exactly as written. Mine was a little too soft after only 2 hours, so I think chilling longer really matters. Otherwise, super tasty and not overly sweet.

  34. 4 stars
Why “simmering water” when microwave is easier? I did microwave and it worked, so I guess the method isn’t that strict.

  35. User avatar shannon.schulist60 says:

    4 stars
I followed it pretty closely, but my chocolate seized a little when I melted it. Still tasted great though. Maybe I needed to cool the chocolate more first.

  36. User avatar linn.glover44 says:

    5 stars
What a fun little fancy thing to make. I piped it into glasses and it looked like a restaurant dessert. My guests asked for the recipe.

  37. User avatar dusty.ferry43 says:

    5 stars
This looks insanely good. I made it for a dinner and everyone kept going back for “one more bite.” The 2 hours chill is key—don’t rush it!

  38. User avatar athena.jenkins2025 says:

    4 stars
Pretty good dessert, but my mousse felt a little too soft after 2 hours. I think I under-whipped the cream or my chocolate cooled too fast. Still tasty though!

  39. User avatar vito.gusikowski28 says:

    4 stars
This feels kinda too easy? Like, it can’t really be real mousse if it’s just chocolate + cream + booze… but it actually is. Lol. 10/10 for the vibes.

    1. User avatar Falmer Shaman says:

      5 stars
Right?! I’m always skeptical of “3-ingredient” desserts, but this one actually makes sense. The chocolate + cold whipped cream texture is the magic. Might try adding a pinch of salt next time.

    2. User avatar tissues_with_issues says:

      3 stars
Sounds legit… but 2 hrs in the fridge is it really enough? Also do you melt the choc all the way or keep some chunks? I’m confused lol. Still, I’ll try.

  40. User avatar karole.kemmer18 says:

    5 stars
So good!! I piped mine into glasses and they looked fancy. My partner said it tastes like a cafe dessert. Next time I’ll use 85% chocolate for more depth.

  41. User avatar ellis.trantow says:

    4 stars
I tried it but my mousse got a little runny, I think I didn’t fold gently enough. Still tasted great though, like a fancy pudding.

  42. User avatar dario.bruen says:

    2 stars
I’m not sure about the microwave step… melted chocolate works fine, but mine tasted slightly burnt even though it wasn’t black. Use low power!

  43. User avatar hae.oconner59 says:

    5 stars
Made this last night and it turned out silky and not overly sweet. The Baileys flavor really comes through—perfect for guests.

  44. User avatar genaro.heller94 says:

    2 stars
Not gonna lie, 100g chocolate feels like too much with only 2 tbsp sugar. Mine was kinda bitter. Maybe use milk chocolate next time?

    1. User avatar cameron.reichert4 says:

      4 stars
Maybe your chocolate was super dark? I used 60% and it was rich but not bitter. Milk chocolate might definitely fix it though.

    2. User avatar stevie.swift says:

      5 stars
I totally get that—100g dark chocolate can be intense. I usually do 2–3 tbsp sugar (or go half milk/half dark) if it tastes bitter.

  45. User avatar lori.schowalter2019 says:

    2 stars
I followed it exactly and it never got smooth—grainy like chocolate chunks. Maybe my chocolate wasn’t chopped fine enough. Disappointing.

    1. User avatar yolande.ferry84 says:

      2 stars
Ugh, grainy mousse is so disappointing. Even if you followed it, chocolate can seize or set too fast if it’s not fully melted or cools before mixing. Did you melt it gently (no boiling water touching the bowl) and stir until it’s *completely* glossy? Also, folding matters—if the chocolate firms up even a bit, you’ll get chunks.

  46. User avatar reanna.sawayn says:

    1 star
    Looks easy… we’ll see 😅

  47. 4 stars
Pretty simple, and the flavor is great. I only had regular cream (not heavy) and it still worked, just a bit softer. Next time I’ll follow the heavy cream part.
