When it comes to a satisfying brunch, few things hit the spot like a bacon and egg croissant. It’s the kind of recipe that feels indulgent yet is easy to put together, ideal for slow weekend mornings or casual get-togethers.
The magic starts with the croissant itself. Buttery, flaky, and golden, it sets the stage for everything else. You can use bakery croissants for convenience or bake your own if you’re feeling adventurous. Warm them slightly before assembling to enhance the flavor and texture.
Next comes the filling: perfectly scrambled or fried eggs and crispy bacon. The eggs should be soft and fluffy, seasoned simply with salt and pepper. For extra richness, add a splash of cream while whisking. The bacon, meanwhile, should be cooked to your preferred level of crispiness. If you’re serving a crowd, baking bacon in the oven saves time and keeps everything uniform.
Melty cheese . like cheddar, gouda, or Swiss, pulls it all together. A quick trip to the oven or pan allows the cheese to melt into the eggs and bacon, making every bite gooey and satisfying.
Want to elevate it even more? Add a swipe of Dijon mustard, a slice of tomato, or a few leaves of arugula for contrast. Avocado slices or a drizzle of hot sauce are also welcome additions for those who love a bit of flair.
Serve the croissant warm, alongside a fresh fruit salad or a cup of coffee, and you’ve got a brunch plate that’s both comforting and impressive. It’s the kind of meal that makes you slow down, sit back, and savor the morning.
Whether you’re feeding overnight guests, celebrating a birthday breakfast, or just treating yourself, this bacon and egg brunch croissant brings all the flavor without the fuss.

I added some cheese and it was amazing! Don’t forget the cheese, people!
This recipe is sooo good! Can’t believe how easy it was to make.
This sounds amazing! Can’t wait to try it. I love brunch recipes!
Really? I don’t get how this is easy. Seems like a lot of work for croissants and eggs.
This looks amazing! Can’t wait to try it for brunch this weekend. 😍
I made this last weekend and it was a hit! So delicious! 👏
Super easy! My kids loved it. They actually called it “Yummy Sandwiches”. Will make again!
Wow, that sounds great! I can’t wait to try it myself. Thanks for sharing!
Low effort, high reward 😄 Bacon got crispy like the recipe said. Scrambled eggs were fluffy. Chives on top is a great touch, don’t skip it!
I’m so sick of breakfast foods, but this was okay I guess.
Just made this for my friends, but I accidentally burned the bacon. Still tasted good tho!
Bacon and eggs belong on toast, not croissants! Just saying!
This was delish! Perfect for brunch. 😋
Sounds good, but I wonder if it needs something more? Maybe some cheese?
Yum! I’m definitely trying this for my next brunch. Thanks for sharing! 🥳
This is such a solid brunch idea—croissants + crispy bacon + soft scrambled eggs is exactly my vibe. I added a little cheese and it turned out amazing. Definitely making again!
I don’t see how this is brunch material. Croissants are too flaky, I prefer toast.
But don’t you think toast is a bit boring? Croissants add a special touch to brunch!
I think croissants are perfect for brunch! Flaky and buttery, what more could you want?
Croissants are better than bread. SRY not SRY 😜
I dunno, bread can be pretty good too. But bacon and eggs in a croissant? That’s gotta be tasty!
Totally agree! Croissants are flaky and delicious, way better than plain bread. This recipe sounds great! 😍
This looks dangerously good. I love that you toast the croissants first so they don’t get soggy—great brunch move.
I tried it, but my eggs were too runny. Maybe I did something wrong? Need help!
I made it for a party but honestly it was a bit underwhelming, maybe add spices?
Yum! This looks amazing. Can’t wait to try it on the weekend!
I’m skeptical about the “scramble and stir constantly” part because my eggs always go rubbery if I do that. Any trick for keeping them creamy?
I do it but on low/medium-low and only stir a little, like you push them around every few seconds. If you go too hot, yeah rubbery city 😅
Totally get you—“stirring constantly” can overcook them fast. I pull the pan off the heat when the eggs still look a little glossy, then keep stirring off-heat. Creamy every time for me.
Bacon and eggs in croissants!? Yes, please! 😍
OMG, this sounds heavenly! Can’t wait to try it! 😍
This was a hit! Loved the bacon and eggs in the croissant. It was devoured in minutes!
Sounds amazing! I’m definitely trying this recipe this weekend! 😋
I tried it but the bacon burnt a bit. Make sure to watch it! Not everyone has a fancy oven.
I mean bacon and eggs are great but why croissants? Seems extra to me. 🤔
