Aji (Colombian Salsa)

February 12, 2026

Aji is a vibrant and zesty Colombian salsa that brings a burst of flavor to any meal. Unlike heavy sauces or complex condiments, aji is fresh, bright, and incredibly versatile. In Colombia, it’s a staple at every table, whether served alongside grilled meats, fried snacks, empanadas, or even just plain rice and beans. Its charm lies in its simplicity and the way it elevates everyday dishes into something memorable.

The base of aji is usually a combination of fresh ingredients: hot peppers, tomatoes, onions, cilantro, lime juice, and a touch of vinegar. Each ingredient contributes to the sauce’s bold yet balanced flavor. The heat from the peppers is lively but not overwhelming, while the acidity from lime juice and vinegar keeps the salsa fresh and tangy. The cilantro adds a subtle herbal note, and the tomatoes mellow everything into a harmonious blend. What makes aji particularly special is that it can be adjusted to taste, spicier for those who love heat, or milder for a family-friendly version.

Making aji is as much about intuition as it is about ingredients. The peppers can be finely chopped or blended for a smoother texture, and onions can be raw or lightly sautéed depending on how pungent you want the flavor. Some variations include bell peppers or even a touch of garlic for extra depth. The end result is a sauce that is lively, colorful, and irresistible.

Colombians often use aji as a finishing touch, adding a spoonful to grilled steak, roasted chicken, or fried fish just before serving. It’s also perfect for dipping chips, plantain fritters, or empanadas, adding a zesty kick that complements the richness of fried foods. Even simple meals like rice and beans become elevated when aji is on the side.

Aji is more than a salsa, it’s a reflection of Colombian culture: vibrant, bold, and full of life. Its freshness, ease of preparation, and versatility make it a must-have for anyone who enjoys cooking with bright, fresh flavors. Once you try it, it’s hard to imagine a Colombian table without a small bowl of this lively, flavorful salsa.

Eeh, my mom makes it better. But this was alright I guess.

  8. 1 star
Meh. Just tasted like spicy vinegar to me. Not worth the hype.

    1. User avatar Hillman Hunter says:

      4 stars
I kinda liked it! Maybe you just didn’t let it sit long enough? The flavors really come together after chilling.

  9. User avatar timmy.weimann91 says:

Not sure if “Aji” is supposed to taste this sour. I might’ve overdone the lime. It was good, but I’d reduce vinegar a bit if you’re not into sharp flavors.

    1. 5 stars
Yeah the lime can absolutely run the show in this one. I usually start with a little less lime juice, then add more after it sits in the fridge for ~15 minutes—sharpness mellows a bit.

  10. 5 stars
Five stars! I tried it with grilled chicken and it made everything taste restaurant-level. Also, the cilantro amount is perfect.

  11. User avatar moses.wiegand says:

Loved it! Great balance between tangy and spicy. I used it on grilled chicken and it was gone fast.

  12. User avatar rosalia.lemke says:

I followed it but my jalapeño was too small? I ended up barely tasting the heat. I’d use a bigger pepper next time, or add a pinch of chili flakes.

    1. User avatar kenya.schinner60 says:

      5 stars
Yeah, jalapeños vary a *lot* in heat. A small one can totally mellow out the salsa—your fix sounds spot on.

  13. User avatar jeffrey.mann says:

    4 stars
I skipped the jalapeños by accident and it was still tasty. Just more of a dressing than salsa.

  14. 2 stars
Salsa? Never heard of it. Is this like ketchup??

  15. User avatar divina.mraz2011 says:

    4 stars
Simple and tasty. I was surprised how much the fresh lime juice matters—store-bought just won’t cut it.

  16. User avatar tenesha.daugherty26 says:

    5 stars
Super easy to make! I’ll definitely keep this recipe in my regular rotation.

    1. 5 stars
I’m glad to hear that! This salsa is so refreshing and really elevates any dish!

    2 stars
I don’t know, seems like it needs more flavor. Didn’t impress me much.

  18. User avatar Tricia McMillan says:

    4 stars
Followed the recipe but I added an extra pinch of salt because my tomato was really juicy. Delicious though!

  19. User avatar ALTplusF4 says:

    5 stars
This turned out super fresh and bright—exactly what I want for empanadas. The jalapeño + vinegar combo is perfect.

  20. User avatar roselia.gottlieb47 says:

    3 stars
Not bad, but I think it needs garlic or something. Also 1/2 tsp salt might be too low depending on your tomato—taste first like the instructions say.

  21. User avatar corrie.kub14 says:

    3 stars
Why is it called aji? It’s just like any other salsa, right?

  22. User avatar smartestRedditor says:

    2 stars
I might be doing something wrong—mine was way too sharp from the vinegar. Next time I’ll use a little less vinegar or more lime.

  23. User avatar federico.schneider84 says:

    4 stars
I tried this but used green pepper instead of jalapeño. Still good.

    2. 3 stars
This is too spicy for me. How do you make it less hot?

  29. User avatar sherri.hermann says:

    4 stars
Pretty good salsa, but I think it need more heat! Next time I’ll add more jalapeños.

  30. User avatar mayola.williamson says:

This aji is fire! I used it with grilled chicken and it was a hit at the BBQ! 🔥

    1. User avatar Sheh Rata says:

      2 stars
I don’t know…sounds a bit bland to me. How spicy is it really? Can you add more jalapeños?

    2. User avatar geoWizard says:

      5 stars
I totally agree! This salsa is so fresh and easy to make. It elevated my entire meal!

  31. User avatar sallie.spencer says:

    4 stars
Not bad, but 10 minutes in the fridge feels short. I let mine sit like an hour and it tasted way more “messed together” (in a good way).

  32. User avatar dean.keebler1963 says:

    2 stars
I didn’t like it at all. Too tangy for my taste. Sorry, not sorry.

    1. User avatar donald.herman says:

      4 stars
I actually loved it! The tanginess is what makes it refreshing! Maybe you could add more tomato next time to balance it out.

  33. User avatar aliza.bailey says:

    5 stars
My family says it tastes like restaurant salsa. I used red onion instead of green onions once and it was still good.

  34. User avatar Wilson Hickle says:

    5 stars
Yum! So fresh and tasty! My grandma makes something like this but without the cilantro.

  35. User avatar terry.hodkiewicz says:

    3 stars
Kinda bland for me at first, but after adjusting salt/pepper it came alive. I guess it depends on the tomato.

  36. User avatar dell.glover56 says:

    3 stars
What even is aji? I thought this was gonna be a different recipe… confused!

  37. User avatar salome.schmidt76 says:

    5 stars
This is exactly the kind of salsa I love—bright, tangy, and not too fussy. The jalapeño + vinegar combo is 🔥. I let it sit longer than 10 minutes and it got even better.

  38. User avatar MrsLucyG says:

    3 stars
I followed it and it came out kinda watery? Maybe my tomato was too juicy. Still tasted good though—just not as thick as I expected.

    1. 4 stars
That makes sense—juicy tomatoes can totally thin it out. Next time, try seeding it really well or patting the diced tomato dry before mixing. Also, chilling longer than 10 minutes helps it thicken a bit.

    2. User avatar jannet.erdman17 says:

      3 stars
Watery salsa?? Sounds like too much tomato water got in. Mine is thick when I use less vinegar maybe? Idk, but I’d drain the tomato like you would for pico. Still good though, so you did okay 😅

  39. User avatar cammie.shields says:

    5 stars
I made it with a bit more lime and one extra jalapeño (because I’m brave). Turned out super bright and flavorful. Great balance of vinegar + citrus.

    1. User avatar edison.heidenreich54 says:

      5 stars
Love that you went a little extra—brave jalapeño energy 😄 Bright, acidic, and punchy is exactly what this salsa should be. Thanks for sharing how it turned out!

  40. User avatar Treebeard says:

    2 stars
Meh. Too much vinegar, not enough flavor depth. I’d add garlic or cumin or something next time.

  41. User avatar talisha.kling87 says:

    4 stars
I think the vinegar measurement is spot on, but my tomato was super watery, so it turned kind of runny. Still tasty though—just drain the tomato next time.

  42. User avatar melba.hegmann63 says:

    4 stars
Made it with a little less jalapeño since the kiddos are picky. Still had great flavor. Next time I’ll seed the jalapeño better because mine was way spicier than expected.

  43. User avatar lavina.morissette37 says:

    4 stars
I’m skeptical about raw tomato in salsa—feels kinda like salad dressing. But wow, it works. The acid kind of “cooks” it in a way? Either way, good stuff.

  44. 4 stars
Pretty good, but mine was a little sharp from the vinegar. Next time I’ll reduce the vinegar slightly or add more tomato/juice to mellow it out.

  45. 5 stars
Super easy! I didn’t even refrigerate the full 10 minutes and it was still tasty with empanadas. I’ll probably chill it next time just for max flavor.

    1. User avatar Death Hound says:

      5 stars
Love this! I always forget the full chill time, but yeah—still tastes great. Next time I’ll refrigerate the whole 10 for the extra flavor.

  46. User avatar providencia.rath says:

    5 stars
This is exactly the kind of salsa I want with empanadas—fresh, tangy, and not too complicated. I let it chill longer than 10 minutes and it got even better.

    1. User avatar curt.hettinger says:

      5 stars
Love this! Fresh + tangy salsa with empanadas is the move. I also always chill it longer than 10 minutes—totally agree it gets better.

  47. User avatar mariann.predovic88 says:

    2 stars
Way too acidic for my taste. I couldn’t really get past the vinegar, and I hate jalapeño seeds so I removed everything and it still felt intense.

    1. User avatar Charles Darwin says:

      3 stars
I feel you—vinegar is strong. But honestly I don’t seed jalapeños, it’s the heat that balances it for me. Try adding more tomato/green onion next time or a tiny pinch of sugar to cut the bite.

    2. User avatar connie.ratke35 says:

      5 stars
Hmm that vinegar/lime combo can definitely hit hard. I usually start with less—like 1 tbsp vinegar and 1/2 tbsp lime—then add more only if it needs brightness. Also letting it sit 20-30 min helps it mellow a bit.
