Spiced Red Wine Reduction with Bacon

Ingredients

  • 1 l Red wine
  • 100 g Bacon
  • 2 piece Garlic clove
  • 1 tsp Cinnamon
  • 1 piece Clove
  • 1 tbsp Brown sugar
  • 300 ml Hot water
  • 1 piece Orange

Instructions

  • In a saucepan, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pan.
  • Add minced garlic to the pan and cook for about 1 minute until fragrant.
  • Pour in the red wine and hot water, stirring to combine. Bring to a gentle boil.
  • Add cinnamon, clove, and brown sugar to the mixture, stirring until the sugar dissolves.
  • Reduce the heat and let the sauce simmer for about 20-30 minutes, allowing it to thicken.
  • Zest the orange and add the zest along with the juice to the reduction mixture.
  • Stir in the crispy bacon pieces and cook for an additional 5 minutes.
  • Strain the sauce if desired, and serve warm over your choice of meat, or use as a unique sauce for pasta.
