Cheesy Tomato Rice

Ingredients

  • 1 cup Rice
  • 2 piece Tomatoes
  • 50 g Cheese
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Oregano

Instructions

  • Rinse the rice under cold water until the water runs clear.
  • In a pot, heat the olive oil over medium heat.
  • Add the rinsed rice and toast for 2-3 minutes until it turns slightly golden.
  • Chop the tomatoes and add them to the pot along with 2 cups of water.
  • Season with salt, black pepper, and oregano. Bring to a boil, then reduce heat to low.
  • Cover the pot and simmer for about 18-20 minutes or until the rice is cooked and water is absorbed.
  • Once cooked, remove from heat and let it sit for 5 minutes.
  • Fluff the rice with a fork, then stir in the cheese until melted.
  • Serve warm and enjoy your Cheesy Tomato Rice!
