Ingredients
- 1 cup Rice
- 2 piece Tomatoes
- 50 g Cheese
- 1 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Oregano
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat the olive oil over medium heat.
- Add the rinsed rice and toast for 2-3 minutes until it turns slightly golden.
- Chop the tomatoes and add them to the pot along with 2 cups of water.
- Season with salt, black pepper, and oregano. Bring to a boil, then reduce heat to low.
- Cover the pot and simmer for about 18-20 minutes or until the rice is cooked and water is absorbed.
- Once cooked, remove from heat and let it sit for 5 minutes.
- Fluff the rice with a fork, then stir in the cheese until melted.
- Serve warm and enjoy your Cheesy Tomato Rice!
