So what’s Parker’s ultimate comfort food? On the podcast Ruthie’s Table 4, she shared her go-to: a simple, no-fuss dinner of seared pork or lamb chops.

Her method is refreshingly simple: season pork chops or baby lamb chops generously with salt and black pepper. Then, melt Kerrygold salted butter in a skillet with a splash of olive oil—“just enough so the butter doesn’t burn,” Parker advises.

To cook: Over medium-high heat, sear four 3/4-inch-thick bone-in pork or lamb chops in the skillet for about 3½ to 4 minutes per side, until the internal temperature reaches 140°F. Let the meat rest for 5 to 10 minutes so it finishes cooking and reaches a safe 145°F.

The result, according to Parker? Pure comfort. Or as she puts it: “Ahh, heaven.”
