- 3 cup Carrots
- 100 g Dark brown sugar
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 teaspoon Cinnamon
- 1 teaspoon Nutmeg
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cut the carrots into uniform sticks or rounds.
- In a large bowl, toss the carrots with olive oil, salt, black pepper, cinnamon, and nutmeg until well coated.
- Spread the carrots evenly on a baking sheet lined with parchment paper.
- Roast in the preheated oven for about 25 minutes, or until they are tender and caramelized.
- In a small saucepan, melt the dark brown sugar over low heat until it becomes syrupy.
- Drizzle the brown sugar glaze over the roasted carrots and toss to combine.
- Serve warm as a delicious side dish.
