Spiced Carrots with Brown Sugar Glaze

Ingredients

  • 3 cup Carrots
  • 100 g Dark brown sugar
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg

Instructions

  • Preheat your oven to 400°F (200°C).
  • Peel and cut the carrots into uniform sticks or rounds.
  • In a large bowl, toss the carrots with olive oil, salt, black pepper, cinnamon, and nutmeg until well coated.
  • Spread the carrots evenly on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for about 25 minutes, or until they are tender and caramelized.
  • In a small saucepan, melt the dark brown sugar over low heat until it becomes syrupy.
  • Drizzle the brown sugar glaze over the roasted carrots and toss to combine.
  • Serve warm as a delicious side dish.
