Cheesy Tomato Rice

Ingredients

  • 1 cup Rice
  • 2 piece Tomatoes
  • 50 g Cheese
  • 1 tablespoon Olive Oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 0.5 teaspoon Garlic Powder
  • 0.5 teaspoon Oregano

Instructions

  • Rinse the rice under cold water until the water runs clear.
  • In a pot, heat 1 tablespoon of olive oil over medium heat.
  • Add the rinsed rice and toast for 1-2 minutes, stirring frequently.
  • Add 2 cups of water (or broth) to the pot, along with 0.5 teaspoon of salt, and bring to a boil.
  • Reduce heat to low, cover, and simmer for about 15-20 minutes until rice is cooked.
  • While the rice is cooking, chop the tomatoes into small pieces.
  • Once the rice is done, remove from heat and stir in the chopped tomatoes and 50 grams of cheese until melted.
  • Season with black pepper, garlic powder, and oregano to taste.
  • Fluff the rice with a fork and serve warm.
