Garlic Chicken with Broccoli and Tomatoes

Ingredients

  • 1 piece Chicken
  • 100 g Broccoli
  • 2 piece Tomatoes
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Lemon juice

Instructions

  • Start by marinating the chicken. In a bowl, mix olive oil, minced garlic, salt, black pepper, and lemon juice.
  • Add the chicken piece to the marinade and let it sit for at least 30 minutes.
  • While the chicken is marinating, bring a pot of water to a boil and blanch the broccoli for about 2 minutes until bright green and tender-crisp. Drain and set aside.
  • Heat a pan over medium heat and add the marinated chicken, cooking for about 6-7 minutes on each side until fully cooked through.
  • In the same pan, add the blanched broccoli and chopped tomatoes. Sauté for an additional 3-4 minutes until the tomatoes are softened.
  • Serve the cooked chicken on a plate with the sautéed broccoli and tomatoes on the side.
