Ingredients
  

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 1 tbsp ground cinnamon
  • 3 eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 3 tsp vanilla extract
  • 2 cups zucchini grated
  • 1 cup walnuts or pecans chopped

Instructions
 

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour two 8x4 inch loaf pans.
  • Sift flour, soda, salt, baking powder, and cinnamon together in a bowl.
  • Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
  • Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
  • Wrap in plastic wrap and store in refrigerator.

    My oven runs hot, so I needed to lower to like 300°F. Otherwise the outside browned before the middle set. But once adjusted, it was great.

      300°F?? My oven doesn’t even go that low right… 😅 I usually just bake longer and cover with foil once it browns. Did you cover it at all or just cook steady?

      Maybe your oven runs cool? I set mine higher to like 350 and it’s done faster, but I guess the recipe says 325 for a reason. Also did you squeeze the zucchini dry? Mine was kinda wet once lol.

      That makes sense—too much moisture from zucchini can definitely turn it dense. Squeezing/rinsing and then patting dry (or even salting briefly and draining) helps a lot. Also, make sure you measure the zucchini after grating—if it’s packed in the cup, it’s basically extra water. I like to bake closer to the longer end if the center isn’t fully set.
