Stuffed peppers are a timeless comfort food, and when you give them a Mediterranean twist, they become something truly special. These Vegan Greek Stuffed Peppers with Rice and Olives are colorful, hearty, and bursting with the bright, bold flavors of the Aegean coast. They’re the kind of dish that brings summer to your plate any time of year.
At the heart of this recipe are bell peppers, which act as edible vessels for a savory filling of fluffy rice, briny olives, and aromatic herbs. When baked, the peppers become soft and sweet, perfectly balancing the salty and herby stuffing. The combination of Kalamata olives, fresh dill, parsley, and a splash of lemon juice gives the dish a distinctly Greek flavor profile. It’s vibrant and zesty, but still comforting and wholesome.
What makes this dish especially appealing is its simplicity. The ingredients are pantry-friendly and come together with minimal fuss. You can prep the filling in advance, stuff the peppers, and bake them when ready. It’s ideal for meal prep, family dinners, or even casual entertaining. Whether served warm or at room temperature, they hold up beautifully.
This vegan version skips the cheese but doesn’t sacrifice taste. If you want an extra touch of creaminess, a drizzle of tahini or a sprinkle of vegan feta adds a satisfying finish. For added texture, pine nuts or toasted breadcrumbs can be scattered over the top before baking.
Vegan Greek Stuffed Peppers are not only delicious but also nourishing. They offer fiber, healthy fats, and plant-based protein in every bite, making them a balanced option for lunch or dinner. Plus, they look stunning on the plate with their mix of colors and fresh herbs.
Whether you’re following a plant-based lifestyle or just looking to lighten up your weekly menu, this dish delivers. It brings a taste of Greece into your kitchen while staying entirely vegan and incredibly satisfying. Perfect for those who love food that’s both good for you and full of flavor.

I’m confused—do you cook the rice first or use instant? I used leftover rice and it was fine, though the texture was more mushy than I expected.
I tried making these but it just didn’t taste right. Maybe I did something wrong? 🤷♂️
These are simply divine! The flavors are so vibrant. 😍
Super easy to make. Love how colorful they look! 🌈
Only gave 3 stars. Not enough flavor for me, and I couldn’t find olives.
5/5. I swear the olives made it taste like actual Greek food. My whole family ate it up.
Love hearing this! The olives + lemon + oregano combo really nails that Greek vibe. 😄
These stuffed peppers are a wonderful idea! I love how healthy they are and they tasted amazing! 5 stars!
Simple and easy! But I added cheese… just makes everything better! 🧀
I made this but used yellow rice instead. Not sure if that was a good idea.
Yellow rice sounds interesting! I wouldn’t worry about it too much; it might add a nice flavor.
These turned out amazing! So full of flavor, and my family loved them. Definitely a repeat!
Sounds delicious! Can’t wait to try this recipe myself. Thanks for sharing!
Are black olives really Greek? Idk, but they worked! Can’t wait to show these off!
Solid recipe! My peppers took closer to 55 minutes to get tender, but once I added the extra time they were great. Wish I’d sliced the olives a bit smaller.
Pepper got all mushy. Should’ve put them in the fridge first maybe?
I don’t get the hype around stuffed peppers. They always seem too mushy.
I totally get what you’re saying! Stuffed peppers can be hit or miss with the mushy texture. But maybe trying them with a firmer rice or adding some nuts might help with that? Just a thought!
Way too much lemon for my taste. I think I’ll skip it next time.
These turned out so flavorful—lemon + olives is a great combo. I used brown rice and it still worked perfectly.
Can I use quinoa instead of rice? Seems healthier, right? 🤔
Yeah, quinoa is great! It’s packed with protein and fiber. I used it once instead of rice, and it was yummy! 😋
Really good, and easy for a weeknight. I added a little feta-style vegan crumble on top and it made it taste even more “Greek.”
Ooh that feta-style crumble sounds amazing—adds that salty tang without any extra work. Definitely trying this next time!
Sounds good but I’m not sure about putting olives *and* tomatoes together—won’t it get kinda salty? I guess the lemon helps though. 🤔
This recipe is just a bunch of veggies, where’s the meat? 😂
I tried this recipe and it didn’t come out right. The peppers were too hard even after baking for an hour. I followed the steps but am not sure what went wrong.
These are so good! I love Greek flavors! Will make again!
Made this last night and it was a hit! Everyone loved it!
So glad to hear that! This recipe is a real winner! 😄
Honestly didn’t expect them to be this tasty. But wow! Great stuff!
I totally agree! These taste way better than I thought they would. Great recipe!
I usually hate olives but it worked here. Surprising!
I’m glad you liked it! Olives can be tricky, but they really add a nice flavor. 👍
I tried making these, but the rice turned out way too soggy. Don’t know what went wrong.
Good recipe, but took longer than expected! Followed it exact. Next time I’ll try a faster version!
I hear ya! These things always take longer than they say, right? But they are super delish! Maybe try a microwave method next time? 🍽️
I’ve never liked olives, but I gave it a shot. Honestly, it was pretty good! Not my fave, but still enjoyed it.
Kinda bland the first time. I think I under-salted the filling. After I adjusted salt, it was way better.
Totally agree—mine was kinda bland until I salted more too. After that it tasted way brighter, especially with the lemon + olives.
I don’t really trust vegan recipes, but decided to try. They were surprisingly tasty! 😊
Easy to make! I omitted the olives ’cause I hate them, still tasted great!
Glad to hear it! I also skip the olives sometimes. Tastes just as good!
I dunno about this… don’t know if vegan dishes is my thing. Plus, why no meat?
Yum! Even my husband who hates veggies liked these! Love the recipe!!
Wow! So tasty. This is my new favorite way to eat veggies. 😍
I tried this. Came out okay. Kinda boring tho, like green pepper w rice. Next time I’ll add more cheese… except I guess not.
Totally get it—mine was a little bland the first time too. Next time I’d bump up the seasoning (more oregano + garlic), and add something briny like more olives or capers. Also try a squeeze of lemon right before serving. Not boring, just needs more “pop.”
Not gonna lie, I was skeptical about vegan stuffed peppers. But the rice + tomatoes + olives combo actually works. The browned tops were the best part.
I ain’t got no parsley, can I use something else? Or just skip it? Anyway, dope recipe.
The instruction says cover with foil for 40 min—my peppers stayed crunchy at that point. Could be my peppers were huge or my oven runs cold.
Mine stayed kinda crunchy too. Maybe the rice wasn’t cooked enough? But you said “cooked rice,” so idk… I used regular white rice and still crunchy. Next time I’ll lower oven temp? 🤷♂️
Totally possible—40 min covered can be enough for smaller peppers, but if yours were big/thick they’ll stay crunchy. I’d try slicing the peppers a bit thinner or adding 10–20 min before removing the foil (or both).
I thought this would be good but it was kinda bland, needs more spices!
I totally agree! I added cayenne pepper and it made a huge difference! 😋
Bland? I dunno, I thought it was pretty good. Maybe you just don’t like these flavors?
Is it really stuffed if it’s not full? Mine looked kinda empty smh.
I followed it pretty much exactly, but it felt a little bland before I tasted it. After adding more salt and a pinch of chili flakes, it was way better.
Delicious and super healthy! Even my picky eater likes them!
I used brown rice instead of whatever “cooked rice” I had. Worked, but it needed a splash more lemon juice at the end for my taste.
Good to know! Brown rice can definitely change the flavor a bit—glad it still worked. I’ll add a note in the lemon juice step to adjust to taste. Thanks!
Vegan?? Are you kidding me? How can that even be filling? No thanks.
I liked it, but mine were a bit watery. Next time I’ll drain the diced tomatoes better—maybe even use fire-roasted.
Could you use quinoa instead of rice? I’m not a fan of rice. 🤔
Quinoa would be great! It’s healthy and adds a nice flavor. 👍
Guys, my daughter is SO picky and she ate two of these! 🤯 Thank you for the recipe!
That’s awesome to hear! Kids can be so picky, so I’m glad your daughter loved them! 😄
These were absolutely delicious! The olives really added a nice flavor. My family loved them!
Horrible. Can’t even taste anything but pepper.
Not a fan of olives, it made it taste weird for me. Sad face. 😞
But those olives are what makes them Greek! you gotta give them another chance! 😄
I totally get you! Olives can be really strong in flavor. Maybe you could try it without them next time? 🌶️
Not bad. The seasoning is solid, but 40 min felt short for my peppers (they were huge). I needed closer to 55 min total.
Good point—huge peppers definitely take longer. I’ve found 40 min is more like “start,” and 50–55 total makes sense depending on thickness. Thanks for the timing adjustment!
Vegan? No thanks, I need my meat! 🍗
Stuffed what? Never heard of this, but I tried it. Not bad!
I loved every bite! Perfect for my family dinner. Will make again!
TOO much lemon! Next time I’ll cut it down. My family didn’t like it that much.
What is the point of vegan? Just eat the real stuff, man.
Followed the recipe pretty much exactly. My peppers were tender at the 40 + 10 mark, and the olives made it taste very “Greek.”
Loading all that stuff into a pepper? Seems like a lot of work for one pepper! 🤔
I get what you mean, but it really is worth it! The flavors all blend together so well. 😋
Can I freeze these? I made a lot and don’t wanna waste. They’ll be great for lunch!
Yes, you can freeze them! Just make sure to let them cool completely before wrapping them up. They’ll be perfect for lunch later!
Pretty good, but 375°F felt a bit low for my oven. I had to go closer to 60 minutes total to get the peppers soft.
375 felt low to me too 😂 Mine never got soft in just 40 + 10. I ended up just cooking till they looked right, like 1 hour-ish. Maybe check with a fork.
Good point—ovens vary a lot. I’ve found peppers can take closer to 50–60 minutes depending on size. Next time I’ll bump the time before taking the foil off.
These stuffed peppers are fantastic! So fresh and hearty. Will make again for sure! 🌟
The instructions were clear, but I somehow forgot to cover with foil and they got kinda dry. Still edible—just not as juicy.
Wait… you forgot the foil and they still tasted ok? Mine get crunchy if I don’t cover, like raw pepper vibes. Also I think 40 min is short—maybe cook longer? But hey, at least edible, right. 🙂
Ugh, that foil step is sneaky! 😅 Dry peppers usually means too much direct heat. Next time I’d definitely keep them covered the full 40, and maybe add a splash of water or extra tomato juice in the baking dish so it steams a bit.
I think the recipe needs more spices. It was kinda bland for me.
They looked nice, but I’m not into veganisms. No meat? No thanks.
Veganism is just a fad, right? Who doesn’t love a good steak instead of some peppers? 😒
I get what you’re saying, but you don’t have to be a vegan to enjoy this! The flavors are still great without the meat.
These were surprisingly flavorful! The lemon + oregano combo makes the rice taste way more interesting than plain stuffed peppers.
Yes!! I did lemon + oregano with quinoa instead of rice and it was still super bright. Definitely beats plain stuffed peppers.
Yum! These were a hit at my dinner party. Everyone loved them, even the meat lovers! 😋
That’s awesome to hear! I love when vegan dishes surprise even the meat lovers. 🥳
Super easy and healthy! I added some feta cheese on top at the end, didn’t follow the recipe 100%, but it was fantastic!
That sounds delicious! Adding feta is a great idea! I love how versatile this recipe is!
Feta cheese? Isnt that not vegan? Makes me doubt it a bit.
Kinda boring tbh. I thought it would be spicier. Next time I’ll add jalapeños or something.
These stuffed peppers are delicious! So fresh and flavorful!
This is better than I thought. My kids even liked it! 😋
Meh. The rice texture didn’t really “stick” together inside the peppers for me. Might be because my rice was undercooked?
