Tomato Coconut Salad

February 12, 2024

Tomato coconut salad is a vibrant, refreshing dish that brings together the juiciness of ripe tomatoes and the tropical sweetness of shredded coconut. It’s a simple yet unique combination that adds a burst of flavor to any meal, perfect for warm-weather lunches or as a light side dish for dinner. The fusion of ingredients offers a delightful contrast in textures and tastes, making it a memorable addition to your table.

The salad starts with fresh, juicy tomatoes, cut into wedges or chunks depending on your preference. The tomatoes provide a burst of sweetness and a bit of acidity, which pairs beautifully with the richness of the coconut. Shredded coconut adds a subtle tropical flavor and a chewy texture that complements the crispness of the tomatoes. For added crunch, you can also toss in some thinly sliced red onions or cucumber, bringing more freshness and a hint of savory flavor.

A light, tangy vinaigrette ties everything together. You can keep it simple with a combination of olive oil, lemon juice, or lime juice, along with salt and pepper to taste. The citrusy notes enhance the sweetness of the tomatoes and coconut, while a touch of honey or agave can balance the flavors with a little extra sweetness. Fresh herbs like cilantro or mint can be sprinkled on top to add an aromatic kick and a pop of color.

This salad is incredibly versatile and can be adjusted based on your tastes. For a more savory flavor, you could add crumbled feta cheese or a few olives. If you like a little spice, a pinch of chili flakes or diced chili peppers will give it a subtle heat.

Tomato coconut salad is light, refreshing, and perfect for any occasion. Its tropical flavors and simple preparation make it a great dish for picnics, barbecues, or as a side to grilled meats or seafood. The natural sweetness from the coconut and the tanginess of the tomatoes make each bite feel like a taste of summer, no matter the season.

This salad is not only delicious but also packs a nutritional punch. Tomatoes are rich in antioxidants, vitamins, and minerals that promote overall health and well-being. Coconuts provide healthy fats and fiber, helping to support heart health and digestion. Together, these ingredients create a nourishing and satisfying dish that can be enjoyed guilt-free.

Yummy! I love coconut and tomatoes. Great combo! 👍

  3. 4 stars
Tried it as a side with grilled chicken—worked really well. I used a bit more onion because I like the bite. Nice and light.

  4. User avatar Rowan Boatman says:

This sounds like a super fresh combo—tomato + coconut is unexpected but in a good way. The lime and cilantro should really make it pop. I’d absolutely try it with a pinch of chili flakes too.

    1. User avatar thaddeus.will2017 says:

      3 stars
I’m not sure about the coconut here… like, will it be sweet or overpower the tomatoes? Also isn’t cilantro supposed to be cooked? (I’m kidding—mostly.) Still, I’d try a small bowl first.

    2. User avatar kristopher.heathcote48 says:

      5 stars
Yesss. Tomato + coconut sounds weird at first, but the lime/cilantro combo totally makes sense. I’d add chili flakes too—maybe even a little garlic. 😄

TOMATO COCO😳? what? Why? Never heard of that before!!

  6. User avatar eugenio.hahn says:

Meh. Tomatos and coconut sound wrong. I guess it’s edible, but I wouldn’t request it. Also my knife skills are bad, so my dice was huge.

  7. User avatar antony.bode1977 says:

Not convinced. Coconut in a salad just sounds wrong to me, but I tried it anyway. It’s edible, I guess—my kids liked it though.

  8. User avatar dusti.langworth30 says:

    3 stars
This is okay, but it’s kinda bland unless you go heavy on salt. I’d also add cucumber or maybe a spoon of yogurt for creaminess.

  9. User avatar dean.romaguera65 says:

    3 stars
Pretty tasty, but I think the coconut could be toasted first. Mine tasted a little bland until I added extra lime and salt. Still good though.

    1. User avatar Marcel Armstrong says:

      5 stars
Totally agree—toast the coconut first and it adds way more depth. I’ve found it also helps with the “bland” issue before the lime kicks in. I usually start with a little extra salt too. Great call!

  10. User avatar Dominic Vernius says:

    1 star
Why would anyone put coconut in salad? That’s just wrong!

  11. User avatar Daedric Prince says:

I don’t know about this… Tomato and coconut? Seems strange. Not sure I’ll try it.

    1. User avatar jona.hickle says:

Tomato and coconut?? No way, that ain’t gonna work. Stick with normal salads!

    2. User avatar Erwin Torphy II says:

I get what you mean! Tomato and coconut sounds weird but sometimes the craziest combos taste the best! Maybe give it a shot?

  13. 5 stars
This salad is incredibly refreshing! Perfect for summer days.

  14. User avatar Falmer Spellsword says:

    5 stars
Super refreshing! The lime + coconut combo is surprisingly good, and the cilantro makes it taste bright. I’ll definitely make this again for summer lunches.

    1. User avatar anonymous_hacker says:

      5 stars
Yes! I was skeptical about coconut in a salad but the lime definitely makes it pop. Perfect for hot days.

    2. 3 stars
Huh, i tried similar once and it was kinda sweet… do you think shredded coconut makes it more dessert-y? still sounds good tho.

  15. User avatar Effrafax of Wug says:

    3 stars
I liked the idea, but 1/2 cup coconut felt like too much for my taste. Next time I’ll use less and maybe toast it first.

  16. User avatar archie.howell says:

    5 stars
Yum! I added some diced jalapeños for a kick!

  17. User avatar kip.dicki1994 says:

Tried it with avocado too, and it was amazing! 🌟

  18. User avatar Sahasrahla says:

Tomato and coconut? Sounds kinda strange, but I tried it and it’s actually good!

  19. User avatar terminatorXYZ says:

I didn’t like it. The coconut was too weird with the tomatos.

  20. User avatar ferdinand.homenick80 says:

    5 stars
This sounds surprisingly refreshing—tomato + lime with coconut and cilantro is a great combo. I’ll definitely try it as a light side.

  21. User avatar edwin.hermiston says:

    1 star
Bad idea imo. Coconut in salad never works. 😅

    1. User avatar angelique.treutel16 says:

      4 stars
I actually get what you mean, but coconut works here because it’s shredded and the lime cuts through it. If you hate it, try using toasted coconut next time—it’s way more salad-friendly.

    2. User avatar yi.cummerata says:

      5 stars
Nah I disagree tbh. Coconut + tomatoes + lime sounds weird but it’s like a sweet-tang combo. I made it and it was good. Maybe your coconut was too fresh or not shredded right 😅

  22. User avatar arlie.lebsack says:

    4 stars
Lowkey? The tomatoes were super juicy, so it got watery. Next time I’ll salt the tomatoes first and drain a bit before mixing.

  23. User avatar regina.treutel69 says:

    4 stars
So simple and delicious! I added some avocado and it took it to the next level. Will definitely make again!

    1. 5 stars
I love the idea of adding avocado! I never thought of that. I’ll try it next time for sure.

    2. User avatar Super Saiyan Vegeta says:

      2 stars
Seems a bit too simple for me. Where’s the flavor? It looks bland.

  24. User avatar Dionne Kovacek says:

    5 stars
I loved this! Had it as a side with some grilled chicken and it was a hit.

  25. 4 stars
Easy to make! I used sweet limes instead and it was good.

  26. User avatar bernie.crooks56 says:

    2 stars
Not sure about the coconut with tomato… kinda weird. I tasted it anyway and it was decent, but I wouldn’t call it a salad I crave.

  27. User avatar Hotblack Desiato says:

    4 stars
Super refreshing and honestly way easier than I thought it would be. The cilantro makes it feel fresh-farm style. I used green onion instead of red and it still worked.

  28. 2 stars
Step 5 says serve immediately, but salads usually taste better after like 10 minutes. I’d test it either way. Also, how big are the tomatoes? 2 medium? Kinda vague.

    1. User avatar adrian.fadel88 says:

      5 stars
Good catch on the “serve immediately” part—10 minutes can definitely help the flavors meld, especially with the lime and salt. I’d do both: let it sit briefly, then serve. And for the tomatoes, I meant about 2 medium tomatoes (roughly ~1 to 1 1/2 cups diced). If yours are small, just use a bit more to match the volume.

  29. User avatar julian.maggio57 says:

    2 stars
Not sure about this one. Coconut in a salad feels kinda weird, and mine tasted flat until I added more lime and salt.

  30. User avatar cheryle.kassulke says:

    5 stars
just made this and my friend said it was weird but I loved it! different flavors, good, yummy! 🌟🌟🌟

  31. User avatar luigi.leannon56 says:

    5 stars
This recipe is so fresh and delicious! Loved it! 🍅🥥

  32. 3 stars
I think it needs more flavor, maybe some garlic?

  33. User avatar rodrigo.wuckert83 says:

    5 stars
Really simple and quick! Perfect for summer!

  34. 4 stars
I made something similar once and it was surprisingly good. The only thing is 1/2 cup coconut might feel a little much if the tomatoes are juicy—maybe toast the coconut for extra flavor?

    1. User avatar thaddeus.gusikowski81 says:

      5 stars
Good tip! I like toasted coconut with tomatoes—it adds that extra crunch and nutty flavor. I’ll try it next time for sure.

  35. User avatar virgina.bosco83 says:

    3 stars
Super easy recipe, but I think it needs some kind of dressing to make it pop!

  36. 3 stars
Can I use dried coconut instead? Gotta improvise when you’re on a budget.

    1. User avatar cassidy.kreiger31 says:

      4 stars
Yeah, you can use dried coconut, but it won’t be as fresh! It’ll taste different, just a heads up! Good idea to save money tho!

  37. 4 stars
So easy and delicious! Just tossed it together in 10 minutes. Will definitely make again!

  38. User avatar lavon.dibbert1990 says:

    1 star
Tomatoes should not go with coconut… this is just wrong! Who came up with this recipe?

  39. User avatar Frankie and Benjy says:

    1 star
idk… coconut in salad just sounds wrong 😅

  40. 4 stars
I was skeptical about shredded coconut in a salad, but it works. Texture is nice and the red onion gives it a little bite. Would make again.

    1. 5 stars
Honestly I was on the fence too, but the coconut + lime combo makes sense. The crunch/bite from the onion is exactly what I want in a salad. 😋

    2. User avatar quinton.crona says:

      3 stars
Shredded coconut in salad sounds weird to me ngl, but if it works it works. I might use sweetened coconut? Not sure—might be too dessert-y.

  41. User avatar edwin.bruen7 says:

    3 stars
Very simple stuff, I mean, do we really need a recipe for this? But whatever.

  42. User avatar john.blanda says:

    4 stars
Yum! I didn’t have cilantro, so I used parsley and it was still good!

  43. 4 stars
Not gonna lie, I was skeptical about sweet coconut with tomatoes. But it tastes like a tropical salsa. Would make again for sure.

  44. User avatar Random Dent says:

    4 stars
Made it today and it was a nice light side. The shredded coconut gave a little crunch, and the lime really brightened everything up. Would do again.

    1. User avatar trang.hammes98 says:

      5 stars
Love this—simple and bright. I’ve been looking for a lighter side like this. Did you toast the coconut or keep it plain? Either way sounds delish!

  45. 4 stars
Weirdly delicious! My sister said it was “like a tropical salsa” and yeah… pretty accurate. Also, don’t skip the salt.

    1. User avatar deena.murray says:

      5 stars
Totally agree—tropical salsa is the exact vibe. I also never skip the salt; it really wakes up the lime/coconut combo!

  46. User avatar kristel.zieme72 says:

    2 stars
Wow, bland. The lime is there, but there’s not enough flavor beyond that. I’m sorry but I wouldn’t serve this to guests.

  47. 3 stars
Idk bout dis lol. Too sour from the lime maybe? I added more tomatoes and it got better. Still pretty good for a quick thing.

  48. User avatar Hillman Hunter says:

    2 stars
Not sure about this one… coconut feels kinda weird with tomatoes. Also, 2 tomatoes isn’t much, so I had to double everything to feed 2 people.

    1. 4 stars
I totally get the concern—coconut + tomatoes sounds odd at first, but the lime and cilantro really brighten it. If you’re not into sweet notes, use unsweetened coconut.

    2. User avatar jenee.bins1953 says:

      4 stars
Coconut with tomatoes is actually a thing in some cuisines! It’s like a creamy contrast. Next time, try adding a pinch of chili or cumin to balance it.

  49. User avatar ALTplusF4 says:

    1 star
    meh

  50. User avatar mario.padberg says:

    5 stars
This salad is so refreshing! I love the combination of coconut and tomatoes. Perfect for summer!

  51. User avatar Heimerdinger says:

    2 stars
Too much lime for my taste. Also I think I used the wrong coconut (the sweet kind). Might try unsweetened next time because it got a bit too dessert-y for me.

  52. User avatar jae.shanahan says:

    5 stars
Very good. My kids ate it and asked for more which never happens with salads lol. I cut the onion smaller so it wasn’t overpowering.

    1. 5 stars
That’s awesome—kids actually asking for more is the best review 😂 I’m definitely trying it with smaller onion next time too.

    2. User avatar wilfred.metz says:

      4 stars
Huh, tomato + coconut salad sounds kinda odd to me, but if your kids loved it I guess it works. I’d probably use way less onion too… mine would be overpowering for sure.

  53. User avatar tad.bruen83 says:

    4 stars
I was skeptical about coconut with tomatoes, but the lime really ties it together. Next time I’ll use a bit less onion though.

    1. User avatar ernie.turcotte says:

      3 stars
Ngl coconut + tomatoes sounds weird 😅 but i guess the lime saves it. I might add garlic or somethin, and i’d use less onion for sure, mine was strong.

    2. 5 stars
I was worried too, but I tried it and yeah—the lime makes it work. I also think the onion can be a bit intense; next time I’ll do less like you said.

  54. User avatar Robbie Cruickshank says:

    4 stars
I was skeptical at first, but I actually liked it. 3.5 stars.

    1. User avatar shawna.witting2025 says:

      4 stars
I’m glad you gave it a shot! It’s surprising how coconut can change the vibe of a salad.

    2. User avatar Prostetnic Vogon Jeltz says:

      5 stars
3.5 stars? Really? I think it deserves at least 4.5, it’s so fresh!

  55. User avatar marylin.oconnell1972 says:

    2 stars
Can I substitute the coconut for something else? Not a fan. 😕

  56. User avatar torrie.watsica56 says:

    3 stars
Simple and quick, but I think 2 tomatoes might be small for 1/2 cup shredded coconut—felt a little too coconut-heavy for me.

  57. User avatar winford.bartoletti67 says:

    4 stars
Pretty tasty and super easy, but I think it needs a pinch more salt. Also, I used sweetened coconut once by accident and it was meh.

    1. User avatar amado.pacocha29 says:

      5 stars
Glad you liked it! Yeah, a pinch more salt can really make the tomatoes pop. I also agree about sweetened coconut—this one’s better with unsweetened shredded coconut so it doesn’t taste dessert-y.

  58. User avatar oPandariaNo says:

    3 stars
Not sure about the coconut with tomatoes… feels kind of like a smoothie salad? But I guess if it’s limey enough it could work. Would’ve liked instructions for how long to let it sit.

  59. 2 stars
Not sure about the coconut in a salad. Sounds weird…

  60. User avatar suspiciousCommentator says:

    2 stars
Not sure about this combo. Tomatoes and coconut? Seems a bit strange to me. What was the creator thinking?

    1. 2 stars
Seems weird for sure, but I guess people have different tastes. I prefer my tomatoes in a salad with vinaigrette, not coconut!

    2. User avatar Dwarven Shpere says:

      4 stars
I actually think it’s a unique combo! The sweetness of coconut might balance the acidity of tomatoes. Can’t wait to try it!

  61. User avatar tracey.becker says:

    5 stars
This sounds super refreshing—tomato + lime + coconut is a combo I wouldn’t think of, but it makes sense. I’ll try it with extra cilantro!

  62. User avatar Chas Weissnat says:

    4 stars
The coconut caught me off guard, not gonna lie. It’s good, but I think next time I’ll toast the coconut a little so it has more flavor.

  63. 2 stars
Coconut in a salad feels kinda weird to me. Also “serve immediately” is hard when you’re feeding people at once. But okay, I guess.

  64. User avatar monte.konopelski says:

    5 stars
This is such a refreshing combo—tomato + coconut surprised me in a good way. The lime really ties it together. I’ll definitely make it again.

    1. User avatar muriel.rice says:

      5 stars
Totally agree—tomato + coconut sounds weird at first, but the lime really makes it pop. 😄 I’m stealing this idea for my next lunch.

  65. User avatar Sebastian Glover says:

    3 stars
I followed it exactly, but my coconut ended up a bit chewy after sitting. Next time I’ll serve right away like it says (and maybe lightly toast the coconut).

    1. 5 stars
Totally makes sense—shredded coconut can get a little chewy once it absorbs the tomato/lime juices. Serving right away is definitely key. Lightly toasting the coconut sounds like a great fix too!

  66. User avatar jeramy.koepp2015 says:

    3 stars
I’m not sure about the shredded coconut in a salad. It tastes fine, but the texture caught me off guard. Still, it’s not bad at all—just weird in a good way?

    1. User avatar raymon.fadel55 says:

      5 stars
Haha I get what you mean—coconut in salad sounds odd until you actually taste it. The lime + onion really balance out the sweetness, and the texture turns into a nice little crunch when it’s not over-mixed. I like to serve it right away too.

  67. User avatar angele.reinger says:

    4 stars
I liked it, but my tomatoes were super juicy so it felt a little watery. Next time I’ll salt the tomatoes first and drain off the extra liquid.

  68. User avatar Everette Baumbach says:

    4 stars
Made it today and it was actually really good. The coconut adds a nice texture, and the red onion gives it that little kick.

    1. User avatar laveta.stanton30 says:

      4 stars
I tried it but I think my onion was way too strong 😅 next time I’ll soak the red onion in cold water for a bit. Still tasty though!

    2. User avatar Arwen Evenstar says:

      5 stars
Love hearing this! The coconut + red onion combo sounds like the perfect contrast—fresh but with a little zing. I’m definitely making it again.

  69. User avatar mitch.balistreri2024 says:

    3 stars
I followed it exactly and it turned out okay, but the shredded coconut felt a little dry/chewy. Maybe toast it next time?

  70. User avatar corey.hermiston96 says:

    5 stars
This salad is super refreshing! I love the coconut in it. Makes a perfect side dish for BBQs.

  71. User avatar elizbeth.blick47 says:

    3 stars
Honestly, I think this recipe needed more ingredients. It’s kinda bland. Like, where’s the spice?

    1. User avatar johnathon.nicolas92 says:

      3 stars
Nah, it’s not bland if you add enough lime! Trust me, this is fresh and tasty!

    2. User avatar Dominic Vernius says:

      4 stars
I get what you mean! A bit of chili or cumin would’ve been perfect. Next time I’ll definitely add some spice! 🌶️

  72. 3 stars
I made it, but mine turned watery. I think the tomatoes were too juicy. Still tasted fine though—just not as thick/“salad-y” as I expected.

  73. User avatar candra.stehr54 says:

    3 stars
I think the lime amount might be slightly off—mine felt too sour. Maybe different tomatoes vary? I added a tiny bit of sugar and it balanced out.

  74. User avatar bert.schowalter says:

    5 stars
So good! I added some chopped cucumber and a little chili flakes and it instantly became my go-to summer side.

  75. User avatar norman.reilly48 says:

    5 stars
This combo is surprisingly good—fresh tomatoes with sweet-ish coconut is such a nice contrast. The lime really ties it all together. I used a bit more cilantro and it was perfect.

    1. User avatar terminatorXYZ says:

      3 stars
Hmm I tried this and it was okay, but my coconut tasted kinda “dry” and I felt like it needed more lime or maybe a splash of something? Next time I might add a little honey. 😅

    2. User avatar rachael.oberbrunner says:

      5 stars
Totally agree—didn’t expect coconut with tomatoes to work, but that lime + cilantro combo is magic. I’ll be making this again for sure!

  76. User avatar jimmie.rolfson says:

    2 stars
“Shredded coconut” is doing a lot here. I used sweetened coconut and it turned weirdly dessert-y. Use unsweetened if you want it to taste right.

  77. User avatar suspiciousCommentator says:

    5 stars
This surprised me—in a good way. The coconut + lime combo is bright, and the tomatoes stay juicy. I’d add a pinch of chili next time for a little kick.

  78. User avatar efrain.schmidt says:

    5 stars
This is such a bright combo—tomato + coconut is unexpectedly good. The lime really ties it together. I used fresh cilantro and it felt super summery!

    1. 5 stars
Totally agree—tomato + coconut sounded weird to me at first, but the lime makes it click. Fresh cilantro is the move. 😊
