Ingredients
- 1 Sweet potato large, washed and scrubbed
- 1/2 cup Black beans drained and rinsed
- 1/4 cup Corn kernels fresh or frozen
- 1/4 cup Salsa store-bought or homemade
- 2 tablespoons Chopped cilantro fresh
- 2 tablespoons Greek yogurt for garnish
- to taste Salt and pepper
