Looking for a nutritious breakfast that’s both quick and satisfying? Spinach scramble toast is a perfect choice. It’s warm, comforting, and packed with protein, fiber, and flavor, all in under 15 minutes.
This dish starts with a base of golden, toasted bread. Whether you prefer rustic sourdough, hearty multigrain, or even a slice of rye, the toast serves as the perfect platform for the fluffy, savory scramble. The star of the show is the egg and spinach combination, light, creamy scrambled eggs loaded with vibrant green spinach that’s been just lightly wilted to retain its color and nutrients.
To make it, simply sauté fresh spinach in a bit of olive oil or butter until it begins to soften. Then, pour in whisked eggs seasoned with salt and pepper, and gently stir until soft curds form. The key is to cook the eggs low and slow, so they stay tender and don’t dry out. You can also fold in a little crumbled feta or grated cheese for extra flavor if you like.
Pile the warm scramble onto your toasted bread and finish with a sprinkle of chili flakes, herbs like parsley or chives, or even a drizzle of hot sauce if you like a little kick. Add sliced avocado or tomato on the side to turn it into a well-rounded meal.
Spinach scramble toast is ideal for busy mornings, lazy weekends, or even a quick weeknight dinner. It’s light enough to keep you energized but filling enough to satisfy. Plus, it’s easy to customize — use kale instead of spinach, add mushrooms, or top with a poached egg for a twist.
Whether you’re eating solo or serving a small crowd, this simple recipe proves that healthy food can also be fast and incredibly delicious. Keep it in your rotation for when you need something that checks all the boxes: quick, easy, healthy, and tasty.

I don’t get why toast is separate—could’ve just put everything on bread and broil? Still, the flavors were decent.
My kids loved it, they devoured it! Will make again for sure!
This is such a quick, filling breakfast—my kind of thing. The spinach wilted perfectly in about 2 minutes and the cheese option makes it taste super cozy.
Easy to make. My kids loved it! I’ll add some tomatoes next time for color. 😊
This is so yummy! I added some garlic and it was delish.
I dunno. Spinach and eggs… not my thing. I think I’ll stick to my cereal.
Sounds great! Garlic makes everything better! I’ve got to try it with garlic next time.
Pretty good, but I wish the instructions said how runny vs firm to scramble the eggs. I ended up a little overcooked. Still tastes great though.
Totally get that—scrambling eggs is super timing-sensitive. I usually pull mine when they look a little underdone (they keep cooking from the residual heat). Medium-low helps too. Glad it still tasted great though!
Nice recipe! But who needs toast? Just eat the eggs alone! Haha.
Real simple to make, even I can do it! Thx for shareing.
You’re welcome! It’s super easy and a great way to start the day. Enjoy your cooking!
I never cook with spinach, but this recipe was simple. Still, I think addin’ bacon would be better.
Terrible. I burn everything. Also I forgot the cheese and then it was sad. Would not reccomend.
Ugh, that sounds rough 😅 Burning happens fast on medium—maybe try a slightly lower heat and keep an eye on the eggs. Also the cheese is optional, but I get how “sad” it feels without it. Thanks for the warning!
Meh, this was okay. My friend told me to try it, but bread and eggs? Seems weird.
I didn’t have whole wheat bread, used white instead. Still turned out great!
White bread works too! Glad it turned out great for you! 😊
Not sure if I did it right, but mine turned out mushy. Will try less spinach next time.
Not sure what I did wrong but it was pretty bland. Also, not enough salt!
Quick and easy breakfast! My kids liked it, but I think it could use more spices.
Spinach? Eww. But my kids loved it, so I guess it’s good? 🤷♂️
I’m not usually a ‘toast with eggs’ person, but this worked. The combination of spinach and cheese is legit. Salt/pepper really makes it.
Maybe dumb question—do you toast the bread first or after the eggs? I always get the timing wrong. Also I used frozen spinach and it still kinda worked, but was wetter.
Agree! I’m also not normally into toast + eggs, but the spinach/cheese combo really levels it up. I did extra pepper and it was perfect.
My eggs kinda stuck even though I used non-stick. Could be I overheated the skillet? Still ate it all though 😅
spinach is good for health but i hate how it tastes. nah.
Tried this for breakfast—super quick and way better than my usual microwave eggs. The spinach actually tastes fresh, not soggy. I skipped the cheese and it was still great.
Nice! I’ve been trying to make eggs less sad in the morning—this sounds actually legit. Fresh spinach makes a big difference for sure.
Pretty good idea, though I think 2 cups spinach might be a lot if the pan is small. Still, the wholewheat toast + eggs combo is solid. Might add a pinch of garlic powder.
I dunno, didn’t turn out as good as I thought. Maybe too much spinach?
The instructions are clear, but I think “melt a pat of butter” is vague lol. I used way too much butter and it was kinda greasy for me.
I followed the steps pretty much, but my eggs got a little dry. Next time I’ll pull them off the heat sooner—still tasty though.
Good but not great. I think basicaly its just scrambled eggs on toast. Okay recipe.
I disagree! This can be delicious if done right! The spinach adds a nice touch. 😋
My kids loved it! They usually hate spinach, so this one is a win
Why would u put spinach in eggs?? That’s just weird. Eggs are fine on their own.
Easy and quick—like 10 minutes and you’re eating. I added a pinch of garlic powder too and it tasted restaurant-y. Great weekday option.
I don’t eat eggs, so I swapped them for tofu. Still turned out great! 💪
This tasted fine but mine came out watery—maybe my spinach wasn’t fully cooked off. Also I used too much butter and it got kinda greasy.
