Souvlaki Breakfast Skillet with Beef and Veggies

August 9, 2023

Who says souvlaki has to wait until lunch or dinner? This Souvlaki Breakfast Skillet with Beef and Veggies brings bold Mediterranean flavor straight to your morning table. It’s hearty, colorful, and packed with protein and veggies to start your day on a strong and savory note.

Inspired by the classic Greek street food, this breakfast skillet swaps the skewers for a one-pan approach. Tender marinated beef is the star, seasoned with garlic, lemon juice, oregano, and olive oil, then quickly seared until juicy and golden. The marinade is simple but powerful, giving the meat a tangy, herby kick that screams souvlaki.

The skillet is built up with a mix of sautéed vegetables. Bell peppers, zucchini, and red onion bring brightness and crunch, while cherry tomatoes add a juicy burst of flavor. Everything gets cooked together in the same pan, soaking up the leftover beef drippings and forming a savory base that tastes like it’s been roasting in a taverna kitchen.

For the breakfast twist, you’ll crack a few eggs right into the skillet and let them cook until the whites are set but the yolks are still runny. The richness of the eggs pairs beautifully with the charred beef and veggies. Sprinkle on some crumbled feta cheese just before serving, and you’ve got a satisfying, flavor-packed breakfast that feels both rustic and refined.

Serve this straight from the pan with warm pita on the side or a few roasted potatoes if you’re really hungry. It’s the kind of breakfast that doesn’t feel rushed, one that makes you slow down, savor, and maybe even imagine you’re enjoying it on a sunny balcony somewhere in Athens.

Whether you’re feeding a crowd or treating yourself to a weekend brunch, this Souvlaki Breakfast Skillet is a delicious way to reinvent traditional flavors with a morning-friendly twist. One skillet, tons of flavor, and a guaranteed satisfying start to your day.

Not sure what souvlaki is but I used some other spices. Came out ok, but what’s with the eggs on the beef?

Made it for brunch and it was honestly better than I expected. I used a little extra pepper and it still wasn’t too salty. Super filling.

Wow, this sounds like a winner. I usually mess up skillets and end up with bland beef, but adding the souvlaki seasoning to the veg makes sense. I’ll try it for brunch—thanks!

I’m not sure about combining beef and eggs like that. Seemed a bit weird to me. I’ll stick to my omelet.

I tried this too and it was super good! Didn’t know cooking could be this easy. I used chicken instead of beef, still yum! 😋

I dunno, it seems a bit too much to cook for breakfast. Sounds fancy for an early meal. How does that even work?

You didn’t measure? I would be worried it wouldn’t taste right. But if it worked for you, that’s cool!

That sounds awesome! Sometimes the best meals come from just throwing things together. 😋

Is it really necessary to use souvlaki seasoning? Can’t I just season with salt and pepper?

  14. User avatar syble.sipes2000 says:

I don’t even know what souvlaki seasoning is. Can I buy it at the store or what?

  15. 5 stars
It tastes like a takeout version of breakfast, which is awesome. I added a squeeze of lemon at the end and it made it pop even more. Would make again.

Totally agree—this does taste like legit takeout breakfast. I’m glad the lemon tip worked too; I bet it really brightens up the souvlaki seasoning. Making this again for sure.

Souvlaki seasoning? Never heard of it. Don’t think I’ll make this again. Sounds complicated.

Not bad but kind of salty for me. Also 2 tbsp seasoning seems like a lot—maybe depends on brand. I’ll reduce next time and add more veggies.

    1. User avatar johnnie.stiedemann99 says:

2 tbsp seems like a LOT ngl 😅 but maybe my seasoning blend is stronger. I’d add salt last instead of with it—some mixes already have it. Thanks for the heads-up!

Totally get it—souvlaki seasoning can be super salty depending on the brand. I usually start with like 1 tbsp and then taste. Next time you’ll be set!

Um, can you use chicken instead? I’m not a beef fan, but I want to try this. Would that work?

    1. User avatar lacy.okuneva says:

      2 stars
I guess you could, but I’ve never tried it with chicken. Wouldn’t soy sauce or something work better?

    2. User avatar ezekiel.cartwright25 says:

      5 stars
Yes, you can definitely use chicken! Just make sure to adjust the cooking time since chicken might cook a bit differently than beef. You can marinate it with the souvlaki seasoning too for extra flavor!

  19. 3 stars
I followed the recipe exactly, and the eggs turned out rubbery. Maybe cook ’em less? Not sure I’d make it again.

    1. 4 stars
I had the same issue with the eggs! They were way too firm for my taste. Maybe next time try cutting down the cooking time like you said. Hope it helps!

Just beef and eggs? Not for me, man. I like my breakfast sweet. But whatever!
