Ingredients
- 2 tbsp olive oil
- 1 onion medium, diced
- 1 red bell pepper diced
- 2 cloves garlic minced

- 1/2 tsp chili powder

- 1 can diced tomatoes 400g
- 4-6 eggs large
- parsley chopped fresh for garnish

- Add the onion and bell pepper and sauté until softened, about 5 minutes.
- Add the garlic, cumin, smoked paprika, chili powder, salt, and black pepper. Cook for 1 minute.
