There’s something comforting about a breakfast skillet sizzling on the stove. The aroma of savory sausage mingling with earthy mushrooms is the kind of smell that draws everyone to the kitchen. A sausage and mushroom breakfast skillet is hearty, flavorful, and perfect for mornings that need a little extra warmth.
This dish is all about simplicity and balance. Sausage brings richness and spice, while mushrooms offer a deep, umami taste that rounds everything out. Whether you’re using mild Italian sausage, spicy chorizo, or a classic breakfast blend, the meat provides a flavorful base that transforms a handful of ingredients into a satisfying meal.
Mushrooms are the unsung heroes of breakfast. Their meaty texture holds up well in a skillet and they absorb all the surrounding flavors beautifully. When paired with sausage, they create a rustic, savory foundation that’s both filling and packed with character.
A good breakfast skillet isn’t just about taste – it’s about how it makes you feel. It’s cozy and nourishing, the kind of breakfast you eat slowly with a hot cup of coffee on the side. It’s ideal for weekends, brunch with friends, or any morning when you want something more special than cereal or toast.
This dish is also highly customizable. Some like to throw in diced potatoes for extra heartiness, others add greens like spinach or kale to bring in freshness. Topping it with eggs or shredded cheese is optional but always welcome. The skillet itself does most of the work, blending flavors together in one pan and making cleanup easy.
Whether you’re feeding a hungry family or making breakfast just for yourself, a sausage and mushroom skillet is a no-fuss way to bring big flavor to the table. It’s a reminder that a good day often begins with a good meal, and sometimes, the best meals are the ones that start in a single, sizzling pan.

Ingredients
- 1 lb sausage
- 8 oz mushrooms sliced
- 1 bell pepper diced
- onion small, diced
- 2 cloves garlic minced
- 6 eggs
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- parsley for garnish
Instructions
- In a large skillet, cook the sausage over medium heat until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, add the mushrooms, bell pepper, onion, and garlic. Cook until vegetables are softened and mushrooms have released their liquid.
- Meanwhile, in a medium bowl, whisk together the eggs, salt, and pepper.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Cook, stirring occasionally, until the eggs are scrambled and cooked through.
- Return the cooked sausage to the skillet and stir to combine.
- Sprinkle the shredded cheddar cheese on top and cover the skillet until the cheese is melted.
- Garnish with fresh parsley and serve hot.
I would love the recipe for my breakfast, I know that it will be good and nutritional for me, and, by the way instead of using pork sausage maybe use beef sausage instead.
Not gonna lie, I was skeptical about covering it for the cheese. But it actually worked and melted evenly. Next time I’ll use more mushrooms (8 oz seems kinda low).
Pretty solid. I think I could’ve browned the sausage a little more and cooked the veggies longer so the moisture really cooks off. Still, the scrambled eggs were nice and fluffy-ish.
Pretty easy and tasty. I used turkey sausage and it still worked great, though the skillet got a little dry—next time I’ll add a small splash of water or cook the veggies a touch less.
Isn’t bell pepper a fruit??? Anyway, good recipe. Will make again!
Wow, really? I thought they were veggies! Either way, looks yummy! I’ll try it.
Yes, bell peppers are technically fruits! Glad you liked the recipe, it’s one of my favorites too!
This is basically a frittata but faster? I was skeptical but it turned out great. I’ll definitely add hot sauce next time. 👍
Made this for brunch and it was a hit. The mushrooms really give it that savory, juicy vibe and the cheddar melts perfectly. I used breakfast sausage—still great.
Love this combo—mushrooms + sausage is always a win. 🧡 I also did exactly what you said with cheddar melting over everything… so good!
The instructions are solid, but 6 eggs felt like a lot for a 12-inch skillet. I ended up with a thinner scramble than expected. Still tasty though, just adjust the pan size.
Super easy and honestly tastes like something you’d get at a diner. My only tweak was adding a pinch of red pepper flakes. Yum.
I used turkey sausage and it tasted a bit dry. Maybe because I cooked it longer than the recipe said. Still edible though.
This is my go-to breakfast now! So hearty and delicious!
Sounds good but 6 eggs seems like a lot for a pound of sausage. I might half it next time, unless serving a crowd.
6 eggs is fine, honestly. Eggs make it fluffier and more filling. I’d even add a lil more cheese and cook the mushrooms longer so they’re not watery.
Yeah, 6 eggs for 1 lb sausage is definitely on the egg-heavy side. I’d half it too unless you’re feeding a bunch—this is basically more like an egg skillet than a sausage skillet. 😄
Yummy! I added some hot sauce and it turned out great. Will make again!
Hot sauce? That sounds interesting! I never thought of adding that. Definitely going to try it next time!
I tried it but my cheese never really melted right—kept clumping. Maybe my cheddar was too old or the heat was too high? Anyway, not bad, just frustrating.
Quick and easy! I added some spinach and it turned out great. Will make again!
I followed it pretty closely but my eggs ended up a little too dry. Next time I’ll lower the heat and stir less. Still good flavor though.
I don’t know… It sounds good but I don’t like mushrooms. Can I just leave them out?
I dunno, isn’t mushrooms like, the main part? What if you put in zucchini instead? But I guess it could work without them.
You can totally leave out the mushrooms! Just add more bell peppers or something else you like. It’ll still taste great!
Yummy! This is just like what my grandma used to make. 😍
I don’t usually cook but this was easy. Even I can do it. Happy!
That’s awesome! Cooking can be fun and so rewarding. Glad you enjoyed it!
I dunno, it sounds kinda simple… but good for you for trying! The eggs can be tricky tho.
Super easy and filling. I used turkey sausage and added a pinch of smoked paprika—next time I’ll probably go a bit heavier on the garlic.
Agreed! This is exactly the kind of “weeknight breakfast” I like—filling without being fussy. I also do turkey sausage and it still tastes great. Garlic-forward is the way to go 👌
Hmm I tried it but mine got a little watery from the mushrooms. I think I should’ve cooked them longer before adding the eggs. Still good though—maybe more garlic and less pepper next time? Also, I didn’t have cheddar so I used mozzarella and it didn’t melt quite the same.
This is sooo good! Made it for breakfast today and we devoured it! Thanks!
Looks good, but I think adding a few more spices could really boost the flavor. Anyone else feel that way?
I tried it too! Best breakfast ever! Shredded cheese makes all the diff.
Soo good, but why is there no bacon? Everything is better with bacon! 😋
Not sure about covering the skillet—my cheese got kinda oily and the eggs underneath were overcooked. Could be my pan though. Still edible.
If you cook the veggies until they release liquid, do it—otherwise the skillet gets watery and the eggs won’t set right. Learned that the hard way 😅
The veggie timing matters. Mine got a bit too watery before the eggs went in, but once I cooked it a little longer it turned out fine.
I had the opposite problem… I think I overcooked the veggies though, ‘cause my eggs came out kinda rubbery. Still tasted good with the cheddar, so I won’t complain 😅
Totally agree—mushrooms can dump a ton of water. I usually cook the veggies a little longer until it looks drier before adding the eggs so they don’t turn runny.
Really solid and easy. My only tweak: I browned the sausage a bit longer so it got crispier, and I used smoked paprika in the eggs. Would make again for sure.
Sounds good, but wouldn’t the smoked paprika make the eggs a bit too smoky? I usually just do regular paprika or none at all. Still—if you say it works, I’ll try it.
Love the idea of crisping the sausage a little longer—that’s probably the best part. Smoked paprika with the eggs sounds awesome too. Going to steal that tweak next time!
Wow, this was amazing! My husband said it’s the best breakfast he’s ever had!
Not gonna lie, I was skeptical about adding cheese only at the end, but it worked. Next time I’ll add a pinch of smoked paprika though—would be 🔥
Looks good. Gonna try!
Nice! Hope it turns out great—don’t skip covering it to melt the cheese.
Quick and easy! My kids loved it. Even picky eaters had seconds!
Mine turned out a little watery at first because the mushrooms really dumped liquid. I just cooked the veggies a few extra minutes and it fixed it. Still good!
Not bad. Could use a little more spice. I ended up adding pepper flakes.
Tasty but I think my skillet was too small—the eggs cooked unevenly and I had to keep spreading them out. Still delicious though, especially with the cheddar.
Too much sausage for my taste. I like to keep it a bit lighter.
I get that! You can always use less sausage and add more veggies if you want. That’s what I do.
But sausage is what makes it hearty! You can skip it, but you’ll lose the flavor!
Idk, eggs got a little rubbery for me. I followed steps, but maybe my skillet runs hot? Flavor is good, just texture wasn’t there.
That happened to me too, but I think you should’ve used milk or cream in the eggs. Also maybe 6 eggs is too many for one skillet? Idk, my aunt always says rubbery = overcooked. Flavor still good tho—so it’s probably heat.
Hmm, rubbery eggs usually means they cooked a bit too long or the pan was running hot. Next time try lowering the heat right when you add the eggs and stir less—scramble until they’re just set (a little soft is good) then cover for only the last minute for the cheese.
Eggs and sausage? Ugh, no thanks. Not for me.
I totally understand, not everyone likes breakfast meats! But this dish is really about the flavors mixing together. You might find it more appealing than you think! 🤔
This is basically my kind of breakfast. One pan, hearty, and not complicated. Added hot sauce after cooking and it was 🔥.
This was absolutely delicious! Perfect for Sunday brunch. Will definitely make again!
This breakfast skillet is amazing! So hearty and filling.
Not bad, but it could use some spice. Like, throw in some hot sauce or something.
Seems easy but I don’t get why you push veggies to the side. Just cook them together, right? 🤨
Sausage and mushrooms?! Yes, please! I added some hot sauce and it was fire! 🔥
I followed the recipe but forgot the pepper… still was good!
This dish is amazing! I added some spinach and it turned out delicious. My family loved it!
I dont like mushrooms but my husband does. He loved it!
That’s awesome that your husband loved it! Maybe next time, you could try a version without mushrooms? Maybe add some spinach instead!
Not my fave. I felt like it needed more cheese and maybe some spinach or something. Otherwise it’s just sausage and eggs with veggies.
Made this this morning and it turned out so good—savory, hearty, and the mushrooms really add depth. I used turkey sausage and it still tasted amazing.
easy to make, my kids loved it! I added some spinach too.
Sausage, eggs, mushrooms… all good stuff! Can’t go wrong! 😋
Totally agree! This recipe sounds delicious. I love how simple it is to make too! 😍
I don’t know, seems kinda basic. Just sausages and eggs? Where’s the creativity? 🤔
This is like restaurant breakfast energy. I served it with toast and it looked fancy. Also garlic + onion = undefeated combo.
Totally agree—garlic + onion really is undefeated. The toast pairing sounds perfect too, and that combo with sausage and mushrooms definitely gives “restaurant breakfast” vibes.
Could be me, but my eggs overcooked when I stirred too much. Otherwise flavors were solid—would recommend lowering heat for the scramble step.
Not gonna lie, I was skeptical about scrambling the eggs next to the veggies, but it actually came out fluffy. Cook time was about the same as I expected.
Same here—I was convinced the veggies would make the eggs watery, but fluffy is a great sign. I’ll definitely try scrambling it the way you did!
Not bad, but I expected more flavor. I think the salt/pepper amount is doing a lot of work here, and I didn’t have enough time to properly brown the sausage.
Why do we need garlic? I never used it in breakfast before. Is it necessary?
Made this for brunch and it was seriously perfect—savory sausage with the mushrooms’ juices is such a good combo. I added a little hot sauce at the end and wow.
Sausage and eggs? Seems like a classic combo but I don’t think I’d make this again. Just meh.
Eggs got a little watery on my end, probably because I didn’t cook the mushrooms until the liquid cooked off. Otherwise the flavors were decent and it’s definitely a hearty breakfast.
Seems a bit too greasy for my taste. I think I would skip the sausage next time.
I’m not usually a mushroom person but this recipe converted me. The combination with the sausage is honestly comforting and the skillet method is great.
I tried it but my eggs didn’t scramble right. What did I do wrong? Wish I could give it a higher rating.
I can’t believe how fast this was! Breakfast in like 15 mins. Bam!
Really tasty! The cheese makes it extra yummy 😍.
6 eggs sounds like a lot but it’s actually right. Very filling. My partner asked me to make it again. 🥚
Eggs came out kinda tough for me—like rubbery—probably my fault because I kept stirring too much. But flavor was good!
I dunno about this one… The mushrooms just don’t seem right to me. Maybe try spinach?
I think mushrooms add a nice flavor, but spinach could work too! Just make sure not to overcook it.
The instruction says whisk eggs with salt and pepper, but no mention of how much salt. I guessed. Turned out okay, but I wish it had measurements.
I mean, you can’t really “measure” pepper to taste 😂 I usually just go heavier on salt than I think, because sausage is salty too. But yeah, a ballpark would’ve helped—still, your save is pretty normal.
Totally get that—“salt and pepper to taste” can be annoying when the eggs are the main thing. If you want a starting point, I usually do about 1/4 tsp salt for 6 eggs and then adjust. Glad it still came out okay!
The directions are fine, but my skillet got kinda watery from the mushrooms even after ‘until softened.’ I had to crank the heat and cook longer. Tasted good anyway—just more effort than expected.
Huh, I think your skillet was too full or the heat was too low. I always keep it like a high sizzle after the mushrooms go in. Also, maybe you used wet mushrooms from the fridge? Idk but good job pushing through 😅
Yeah, that happens with mushrooms. Mine do the same if they’re not browning first—next time I’d let them cook uncovered longer so the moisture cooks off instead of just “softened.” Still glad it tasted good though!
Made this for brunch and it was a hit. The mushrooms really add that savory depth, and the cheddar melt on top is perfect. I added a pinch of smoked paprika and it bumped the flavor a lot.
I used turkey sausage (cause health lol) and it came out a little bland. Would help to add more pepper or even a pinch of smoked paprika.
Pretty solid, but I think it needed a little more seasoning. Also my eggs cooked too fast on the second step—watch the heat.
