Sashimi Salad with Soba Noodles

August 8, 2023

If you’re craving something light yet satisfying, sashimi salad with soba noodles checks every box. It’s a refreshing mix of clean flavors, vibrant colors, and nourishing ingredients that come together in one beautiful bowl. Perfect for warm days or when you want a meal that’s both healthy and exciting, this dish delivers on taste without weighing you down.

At the heart of this salad is sashimi-grade fish. Tuna and salmon are classic picks, but yellowtail or even scallops can work just as well. The key is using the freshest fish you can find. Slice it thinly so it pairs well with the delicate textures of the noodles and greens.

Soba noodles, made from buckwheat, add a nutty flavor and a slightly chewy texture. They’re quick to cook and can be served chilled or at room temperature. After boiling, rinse them under cold water to stop the cooking and remove excess starch. This helps them stay light and separate in the salad.

Now for the greens. A mix of crisp romaine, baby spinach, or arugula works nicely. Add julienned cucumbers, thinly sliced radishes, avocado slices, and shredded carrots for extra crunch and color. You can also throw in some edamame or seaweed salad for even more variety and flavor.

What ties everything together is the dressing. A simple soy-sesame vinaigrette made with soy sauce, rice vinegar, sesame oil, a touch of honey, and grated ginger gives the dish a tangy, slightly sweet punch. Drizzle it generously over the salad and noodles, then toss gently to combine.

Top everything with the sliced sashimi, a sprinkle of sesame seeds, and perhaps some chopped scallions or a squeeze of lime. For a little heat, add a dab of wasabi or a few slices of chili.

This sashimi salad with soba noodles is everything a modern meal should be, simple, nourishing, and full of clean flavors. It’s ideal for lunch or dinner when you want something beautiful, balanced, and fast to make.

Just okay. Soba noodles were a bit slippery, and I didn’t have cilantro sooo I used parsley instead. Not the same.

OK, but isn’t this just fancy sushi? I’m not convinced it’s a salad. 3 stars.

Looks good, but I’m not a fan of raw fish. Can it be made with cooked fish instead? 🤔

I’ve made this salad a few times, and it’s always great! Peanuts are nice, but they aren’t necessary. Glad you enjoyed it!

Really? No peanuts? I think that’s like a crime against Sashimi Salad! lol. But hey, if it tastes good without them, who am I to judge?

Not as fancy as it looks in the pic, but still really good. Love the peanuts!

I made this last night and it looked so pretty on the plate, my guests loved it!

Can you use regular pasta instead of soba? I can’t find those anywhere!

Way too many herbs for me. Cilantro and mint together usually tastes like toothpaste, no offense. I’d cut it in half next time.

Totally fair—herbs can be a lot. I usually do cilantro + mint heavy only if I’m using a milder base, but halving them sounds like the move. Thanks for the tip!

Y’all, it did not taste good. My fish was fishy and the sauce was too sour. Won’t be trying this again.

    1. 3 stars
Sorry to hear that! Maybe the fish wasn’t fresh? Sashimi should be tasty, but sometimes it can go wrong. Did you try using different fish or adjusting the dressing?

Isn’t soba noodles made from wheat? I thought they were gluten-free? 🤔

This is such a fresh, light combo—love the soba + herbs + lime. The dressing tasted balanced and the honey cut the sharpness nicely.

  16. 3 stars
I tried this recipe and it was just okay. The dressing was too strong.

I don’t think honey belongs in savory dishes. Can’t recommend it. 🤷‍♂️

Who puts honey in salad? Seems kinda weird. Not for me. 🥴

  19. 2 stars
The ingredients seem way too fancy for a simple salad. I dont have half these herbs. Just regular greens should work.

Fancy ingredients? I dont know. Just mix whatever you have, it’ll still taste good! Just make sure that fish is fresh, or else 🤢.

    2. 4 stars
I totally get what you mean! Not everyone has a full herb garden at home. I think just using regular greens would be fine. Maybe add a bit of lemon for some zing?

No way I’m eating raw fish. This dish is not for me.
