375°F for 20 mins is totally short if your peaches ain’t super ripe. I tried it with firmer peaches and they stayed kinda “peachy but dry.” I’d either use riper ones or bake longer, no doubt.

If you don’t have threads, you can usually use saffron powder, but start with a *tiny* amount—powder is more concentrated. I’d do a pinch (about 1/8 tsp max) steeped with the honey for the 5 minutes. If you skip it entirely, the peaches will still taste great, just less aromatic/“saffron-y.”
