When you’re craving something wholesome and satisfying, a Provencal Vegetable and Lentil Casserole is the perfect solution. This dish is packed with earthy lentils, hearty vegetables, and aromatic herbs, all simmered together in a savory, comforting casserole. Inspired by the flavors of Provence, it’s a colorful and nourishing meal that’s as vibrant as it is filling.
The base of this casserole is a medley of vegetables, including zucchini, tomatoes, onions, and bell peppers. These are gently sautéed to bring out their natural sweetness, and then combined with protein-rich lentils that add both texture and heartiness. The lentils soak up all the wonderful flavors from the vegetables and the broth, creating a dish that feels rich and satisfying without being heavy.
What makes this casserole truly special is the infusion of Provencal herbs like thyme, rosemary, and basil. These herbs infuse the entire dish with their fragrant, earthy aroma, evoking the sun-soaked fields of southern France. A dash of garlic and a splash of olive oil complete the savory flavor profile, bringing everything together in a perfect balance.
As the casserole bakes, the flavors meld together, creating a comforting, almost stew-like consistency that’s perfect for cooler days. The lentils break down slightly, thickening the dish and adding a wonderful creaminess. You can top it with a sprinkle of cheese, like goat cheese or Parmesan, for an added creamy touch, or keep it vegan for a lighter, plant-based option.
Provencal Vegetable and Lentil Casserole is perfect for meal prep or a weeknight dinner. It’s simple to make and packs a punch when it comes to flavor. Serve it on its own, or with a side of crusty bread for a complete meal. It’s also a great dish to make ahead, as the flavors continue to develop as it sits.

Why do ya need the fancy herbs? Just toss some garlic salt and call it a day! 3 outta 5.
It was okay, but I think it needed more salt or spices. Kinda bland for my taste. 3/5
Casserole??? More like mushy veggie soup! Sorry but not for me.
I had to improvise because I didn’t have green lentils. Used brown ones instead. Still turned out tasty!
I made something similar and it was a bit bland until I added more salt and a squeeze of lemon at the end. Still, the cook time and broth amount look right. Might try smoked paprika too.
Pretty solid recipe, and the lentils actually held up after the full hour. I used a little extra broth because mine got thick, but overall the flavor balance was great.
I think this might taste better without the tomatoes. Just an idea, not a fan of them lol.
Honestly, I don’t get the hype. It was okay, but I’ve had better. Maybe my lentils were old?
5/5 if you like thyme. I didn’t measure salt carefully and it was a little under-seasoned at first, but once I adjusted, it really popped. Great leftovers too.
5/5? Maybe… I’m skeptical about under-seasoning “fixing itself” 😅. Also my lentils usually take more than an hour—still, I bet the leftovers are good if it thickens up. Might try but I’ll salt more from the start.
Love this! The thyme/rosemary combo is spot on. Good to know about the salt—mine always needs a little tweaking too, but that “popped” flavor is exactly what I’m chasing. 😊
This casserole was amazing! So flavorful and healthy. My whole family loved it! 5 stars!
Wow, this was a hit at our potluck! Everyone wants the recipe now. Thank you!
Honestly, I found it kinda bland. I kept adding more pepper and herbs but it stayed meh. Maybe my canned tomatoes were boring? Idk, but I won’t make it again as-is.
Yum! I love how all these vegs taste together. Plus, it’s healthy! Will definitely make again. 🙂
It took forever to cook! I thought lentils were supposed to be quick. Not sure I’ll make it again.
Followed the steps exactly. Came out tasty, but mine was a bit watery after simmering. Next time I’ll simmer uncovered or use less broth. Otherwise solid!
So many ingredients! Is this even necessary? I just want an easy meal. 😩 2 outta 5.
I tried this for my family, and it was a hit! Even my picky kids enjoyed it! Thanks for sharing! Yummy!
Not gonna lie, the list of veggies is a lot and I forgot the yellow pepper 😅 Still turned out okay though. Next time I’ll follow it closer.
This casserole is so delicious! I added some spinach, and it was a hit with the family. 5 stars!
Ew, didn’t like how the zucchini turned out. Felt soggy. Maybe it’s just me, but I won’t make this again.
I really did not like this, too mushy and bland. I will stick to meat dishes.
Lentils?? Never thought I’d cook with them. Didn’t really like it. Should’ve stuck to meat! 1 star.
Lentils are actually really good for ya! Helps with health. Try it with some chicken next time! 4 stars for the recipe.
I get that! Lentils can be an acquired taste. But give them another shot, maybe with some spices? 3 stars!
I followed the recipe but forgot the garlic😂. still tasted fine though.
Garlic or no garlic, it sounds like you made it work! That’s the spirit! 😊
Sounds good! I like veggies 😋
Pretty good overall. I followed it pretty closely, but I think 1 hour was just a tad short for my lentils (I had older ones). Next time I’ll simmer 10-15 minutes longer. Still flavorful though.
Yum! This is my new favorite dish! Healthy and easy to make — I added some chili flakes for a kick too!
I don’t know, sounds too healthy. Where’s the meat? This feels like rabbit food to me.
I’m glad you loved it! The chili flakes idea sounds amazing, I’ll have to try that next time!
Not for me. The texture was weird, and I think it was too many vegetables. Prefer meat dishes.
This is my new go-to when I need something healthy but still filling. The veggies hold up nicely and the broth makes it feel like a stew. I’d add garlic powder too if you’re into bolder flavor.
This casserole was super easy to make! Loved the mix of veggies. Will definitely try again!
So glad you loved it! It’s one of my favorites too. 😊
This casserole is amazing! The flavors are so rich. My family devoured it!
Totally agree! I added some cheese on top before baking. Made it even better!
This is a fantastic recipe! I loved how the flavors blended together. Definitely making this again. 5 stars!
Hmm, not sure about this one. The lentils took way longer to cook than the recipe said. Kinda mushy in the end too.
This sounds super cozy—love the mix of zucchini, peppers, and lentils. The herbs vibe very “summer Provence” to me. Definitely making this on a weeknight.
I don’t get it, lentils take ages and this says 1 hour—mine weren’t tender at all after that, so I ended up cooking forever. Maybe my pot runs cold? Still kinda good though.
Made this tonight and it smelled like summer in Provence. I added a pinch of chili flakes and it was even better—hearty but still fresh. Will definitely cook again.
Yum! I added some crushed red pepper for a kick, and it was delightful. Thank you for sharing! 😊
Too many veggies for my taste, I’d like it better with only carrots and zucchini. 😬
I hear ya! Carrots and zucchini are the best, but veggies are kinda the point of a veggie casserole, ya know? 🤷♀️
The ingredient list is solid, but the directions feel a little basic. Like, do I cover it while simmering? I simmered uncovered and it got a bit thick, which is fine, but just saying.
Isn’t there a meat version of this? I dunno, but my kids won’t eat veggies in casseroles.
Easiest veggie recipe ever! Quick and tastes legit. Deff will add to my list.
I’m not totally convinced by the herb amounts—mine tasted a bit flat until I added more salt. Also simmering 1 hour felt long, but maybe my lentils were old.
I made this without the broth and added water instead. Still yummy but kinda watery, LOL. 3.
Casserole? More like a veggie mush. Not impressed.
You just don’t understand good food! This casserole is saborific! Veggies are life!
I wouldn’t say it’s mushy, it’s more like a comfort food! Maybe you added too much broth?
I tried this recipe but something went wrong. It was too watery and the lentils didn’t cook right. Not sure if I did something wrong.
I don’t think it’s your fault. Sometimes lentils can be tricky, or maybe the brand you used didn’t cook well. Don’t give up on the recipe!
Sounds like you might have added too much broth. The lentils need to absorb liquid, so maybe try reducing that next time. Hope it works out better!
I can’t believe how good this is! I added some cheese on top at the end and it was to die for! Definitely making again!
Cheese on top? That’s a great idea! I never thought of that. Gotta try it next time!
I don’t know, I tried it and it wasn’t as good as you say. Maybe I did something wrong?
I think this would be even better with some cheese on top. Also I accidentally used dried parsley instead of rosemary one time and it tasted… like nothing special. So yeah, don’t skip the rosemary!
Oh cheese on top sounds amazing—like a cozy gratin vibe. I’m with you on the rosemary too; dried herbs can be hit-or-miss, but rosemary really carries the flavor here.
One hour simmer feels long for lentils—mine usually take like 35-40 minutes, but maybe green lentils vary. I’d check tenderness around halfway just in case.
Not bad, but it could use a little spice, maybe some cayenne?
Tastes okay, but like, what’s a casserole? How do u even eat it? 1 star!
This was pretty good but my husband didn’t like it. He said it looked like baby food! LOL.
I added extra garlic and a pinch of chili flakes because why not. Turned out amazing. It’s like Provence meets pantry veggies.
I don’t know, lentils? Not sure if I want to eat something that looks like that… I’m skeptical.
Not gonna lie, I was skeptical about lentils + all those veggies, but it actually tastes hearty. I used only one kind of bell pepper and it still worked. Easy weeknight meal.
I was skeptical too, but the herbs make it taste way richer than I expected. I also only had one bell pepper on hand—still turned out great. Definitely going into my weeknight rotation.
Absolutely loved this recipe! It was so hearty and full of flavor, my whole family enjoyed it!
Honestly, I thought vegetarians just eat salad… This was surprisingly good. Who knew?
I know right! I was surprised too. This casserole is so rich and filling, not just rabbit food! 😄
But like, are lentils even healthy? I thought they were just for vegans, not good for normal meals! Idk.
1 cup lentils to 2 cups broth… seems low? Mine was still crunchy at 60 minutes, so I had to keep cooking. Otherwise fine, but I don’t know about the timing.
Good catch! I’ve noticed green lentils can be stubborn—60 min is kind of optimistic depending on freshness/size. I usually go closer to 70–90 min and add a splash more broth if it starts drying out.
Mine was also crunchy at 60 mins 😬 I just kept simmering until tender and it worked. I think 1 cup lentils to 2 cups broth is ok if you don’t let the pot get too dry, but you really gotta watch it.
This recipe is 🔥! I swapped lentils for beans and it still worked. Got lots of compliments!
That’s awesome! I love when a recipe can be adapted. What kind of beans did you use?
I dunno, dude. Lentils and beans are different, they taste kinda weird together, right? 🤔
Easy to make, but a bit bland. I think it needs more spices or maybe some cheese on top. 3 stars.
Made this tonight and it was super cozy. The herbs smell amazing while it simmers, and the lentils came out tender without getting mushy. I added a squeeze of lemon at the end—highly recommend!
Can’t believe I made this! Easy! My kids ate it which is a miracle. 5 out of 5!
That’s awesome! It’s so nice when kids actually enjoy veggies! What did you serve it with?
I mean, I don’t know about calling it easy… it seems a bit complicated with all those ingredients, lol.
