Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 1 cup warm water
  • 1 tbsp sugar
  • 2 tsp salt
  • 1 tbsp vegetable oil
  • 1 packet active dry yeast
  • 6 cups water
  • 1/2 cup baking soda
  • 1 egg beaten
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine the warm water and sugar. Sprinkle the yeast over the top, and let it sit for 5 minutes until frothy.
  • Add the flour, salt, and vegetable oil to the bowl with the yeast mixture. Mix until a smooth dough forms.
  • Turn the dough out onto a lightly floured surface and knead for 5 minutes until elastic. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour or until doubled in size.
  • Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  • In a large pot, bring the water and baking soda to a boil.
  • Divide the dough into 8 equal pieces. Roll each piece into a rope and cut into 1-inch (2.5 cm) bite-sized pieces.
  • Drop the pretzel bites into the boiling water and let them cook for 30 seconds. Remove them with a slotted spoon and transfer to the prepared baking sheet.
  • Brush the pretzel bites with beaten egg and sprinkle with coarse salt.
  • Bake for 10-12 minutes or until golden brown.
  • While the pretzel bites are baking, prepare the cheese sauce. In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute until golden brown.
  • Gradually whisk in the milk and cook until the mixture thickens. Stir in the shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
  • Serve the pretzel bites warm with the cheese sauce for dipping.
