Pork and Potato Hash

February 13, 2024

Pork and potato hash is a comforting, savory dish that’s perfect for any meal of the day. Whether you’re looking for a hearty breakfast to start your day, a filling brunch, or a satisfying dinner, this dish is simple to make yet packed with flavor. With tender pork, crispy potatoes, and a blend of savory seasonings, it’s the kind of meal that feels like home.

To make this dish, you’ll start by browning pieces of pork in a hot skillet. Ground pork works well, but you can also use leftover roast pork or even pork belly for extra richness. As the pork cooks, it releases its juices and becomes golden and crispy on the edges. Once browned, remove the pork from the skillet and set it aside.

Next, cook diced potatoes in the same skillet until they’re golden and crispy. The crispy texture of the potatoes is key to this dish, and using a little oil or butter helps them get that perfect crunch while still remaining tender on the inside. You can add onions and bell peppers to the potatoes as they cook to build layers of flavor. Season with salt, pepper, paprika, and garlic powder, or any spices you enjoy to give the hash an extra punch.

Once the potatoes are crispy and golden, return the cooked pork to the skillet and toss everything together. Let the flavors meld for a few minutes, allowing the pork to warm through and infuse the potatoes with its savory juices. If you like, crack a few eggs on top of the hash and let them cook sunny side up for added richness and texture.

Pork and potato hash is incredibly versatile. You can add greens like spinach or kale for some freshness or top the dish with cheese, hot sauce, or fresh herbs for an extra layer of flavor. Whether you serve it with a side of toast or just enjoy it on its own, this hash is the ultimate comfort food that’s both filling and full of flavor. Simple to make, satisfying to eat, and perfect for any time of day.

This is such a cozy, filling breakfast idea. The potatoes get that perfect golden edge and the paprika makes it taste a little smoky. I added extra pepper—no regrets.

I’m not a great cook but even I made this work. Just make sure to keep an eye on the eggs!

I made this last weekend and it was amazing! So hearty and filling. Thanks for sharing!

  21. User avatar alejandrina.berge says:

    3 stars
The flavor is good, but I think 10 minutes for the potatoes might be tight depending on how small you dice. I needed closer to 15.

  22. User avatar jeffry.hills says:

    2 stars
How can you even call this a meal? It’s just hash! Needs more veggies for sure!

    1. User avatar Dremora Lord says:

      4 stars
I think it’s good as it is! You don’t always need a million veggies to make a meal! Plus, the pork and potatoes are filling enough.

  23. User avatar ArabianNights says:

    3 stars
Not bad, but I found it a little bland even with salt and pepper. The seasoning is fine, I just think it needs more paprika or maybe a splash of hot sauce at the end.

  24. 2 stars
Way too much paprika! I don’t know what you folks are talking about. It taste burnt!

  25. User avatar alphonse.emard says:

    5 stars
This was amazing! I added some hot sauce on top and it was perfect.

  26. 4 stars
Not gonna lie, I’m not a fan of hash but the smell while cooking convinced me. Tastes better than I expected.

I think you’re missing the point! This isn’t just about following steps; it’s about bringing flavors together. Plus, not everyone can just whip things up in their head. Thanks for sharing this recipe!

I tried it but used chicken sausage instead. It was kinda bland. Maybe I did something wrong?

I don’t like eggs in my hash, so I skipped that part. Still turned out great! 😊

    1. User avatar Orange Dartwing says:

      2 stars
But like, the eggs are the best part right? You sure it was still good?

    2. User avatar russell.feil84 says:

Y did u put eggs? Don’t understand why eggs need to be mixed with this. Just weird. 🤔

    1. 5 stars
Eggs add flavor and richness! You should give it a try. It’s delicious! 🍳

  35. User avatar Jannie Terry says:

    4 stars
lol “hash” sounds fancy but this was easy. My pepper was green but i accidentally used red, still good. Will do again.

    1. User avatar melvina.hill says:

      4 stars
Green pepper? Red pepper? Potato hash is forgiving, I guess. Still, you sure the potatoes were fully cooked in only 10 mins? Might depend on how big you diced them.

    2. User avatar lucius.borer1954 says:

      5 stars
Haha love that! “Hash” definitely sounds fancier than it is. I do the same thing with peppers—red vs green still tastes great. 😄

  36. User avatar Random Dent says:

    5 stars
My kids loved it! Simple and easy which is nice for a busy weeknight meal.

  37. User avatar tajuana.rolfson78 says:

    1 star
Eh, kinda bland. I think I’ll just stick to my usual breakfast.

  38. 3 stars
My eggs didn’t set like the recipe said—more like runny. Still tasty though. Next time I’ll cover longer.

  39. User avatar ariel.white1964 says:

    2 stars
I don’t know about this… I like pork, but it was just too greasy for me. Not a fan.

  40. User avatar rueben.mann70 says:

    3 stars
Okay, but there’s like 0 seasoning beyond salt and pepper. Needs more zing, ya know?

  41. User avatar Reyes Connelly says:

    4 stars
i think this is a good way to use leftover meat. My sister makes it too! Good, but i hate onions. Can skip lol

  42. User avatar oPandariaNo says:

    3 stars
I think 10 minutes for potatoes is optimistic? Mine were still hard after 10, so I had to keep cooking longer. End result was tasty once they softened, just plan ahead.

  43. User avatar sydney.metz20 says:

    4 stars
Yum! But why eggs? I don’t think they belong in this dish at all.

  44. User avatar hunter.moore79 says:

    4 stars
Easy and filling. I was worried the potatoes wouldn’t brown, but they crisped up nicely after that extra few minutes.

    1. User avatar pam.spencer says:

      5 stars
Yes! That little extra time is the difference—mine always end up better when the potatoes actually get some color. I also add a pinch of cayenne sometimes. Great call!

    2. User avatar olin.huel1953 says:

      3 stars
I tried this and it was “okay” but I don’t think I waited long enough for browning. Also I used smoked sausage and it tasted kinda salty. Might make again tho—next time I’ll cut the potatoes smaller.

  45. User avatar nam.gorczany93 says:

    3 stars
It was okay, nothing special. I mean, it’s just potatoes and sausage, right?

  46. User avatar jellyfish says:

    2 stars
Followed the recipe pretty much exactly. Tasted bland even after “salt and pepper to taste.” Maybe my sausage was less salty. Could use more paprika or thyme for me, but it wasn’t bad.

  47. User avatar ara.bradtke48 says:

    3 stars
How do you cook the eggs in the hash? I ended up scrambled them and it was weird…

    1. User avatar Kurtis Gibson says:

      3 stars
I dunno about that, I always scramble my eggs too. Hash is good like that! Who needs poached eggs?

    2. 5 stars
You should try cracking the eggs directly into the hash instead of scrambling! They poach while cooking and it’s super yummy. Hope that helps!

  48. User avatar Elder Kai says:

    5 stars
Potatoes and sausage? Classic combo! Can’t go wrong with this one. 10/10!

  49. User avatar benjamin.bogisich69 says:

    5 stars
Great recipe! It’s super easy and quick. Me and my wife loved it. Cheers!

  50. User avatar billy.rowe21 says:

    1 star
Horrible! This was too greasy and I couldn’t even taste the thyme or paprika. Ugh.

  51. User avatar Mr. Prosser says:

    5 stars
I added some hot sauce for a kick! Perfect for a brunch with friends. Everyone loved it!

    1. User avatar Master Yi says:

Hot sauce? That’s a great idea! I’ll definitely try that next time. Glad your friends loved it!

    2. User avatar cherelle.jaskolski says:

      3 stars
I dunno about adding hot sauce to that. Looks yum without it. But good for you for adding your twist!

  52. User avatar rossana.lemke45 says:

Just cooked it and it was all gone in minutes! This is going in my recipe book. Yum!

Glad to hear it! This recipe is a hit at my house too. Can’t wait to make it again!

HASHBROWN! I just kinda made a hashbown instead 😄🤷‍♂️

  54. User avatar smartestRedditor says:

    3 stars
I don’t know about the paprika, felt like it was too much. Next time I’ll skip that.

  55. User avatar charlena.orn1986 says:

    2 stars
Not sure if I like these flavors together. I think I prefer my potatoes plain.

    1. User avatar tracey.stoltenberg11 says:

      2 stars
Who even mixes pork with potatoes? Sounds weird to me. I’ll stick to fries!

    2. User avatar roxanna.howe91 says:

      4 stars
I totally get that! Sometimes simple is best. But you might be surprised how good this combo can be!

  56. User avatar allen.cassin says:

    5 stars
My kids loved it! Also, I used turkey sausage instead of pork, turned out great! 🙂

  57. 5 stars
This recipe is a game changer! Never thought about adding eggs like that. Delicious!

  58. User avatar ardis.yost says:

    3 stars
It was okay. I think a lil more salt would help. Just sayin’!

  59. User avatar rosio.will says:

    4 stars
Yum yum yum! The kids even ate it, huge win in my book! Plus, it’s so colorful. I love the peppers.

  60. 5 stars
So good. This is one of those recipes you can basically freestyle with whatever veggies you have. Cleanup was fast too!

  61. User avatar Knights of Hyrule says:

    3 stars
Potatoes took too long to cook in my skillet. Ended up in the microwave. Not ideal.

    1. User avatar laila.luettgen2015 says:

      4 stars
I had the same problem! Maybe the potatoes were too big or not cooked long enough? Using a lid helps too!

  62. 3 stars
I used turkey sausage and it was fine, but it didn’t get as rich. Still a solid meal prep thing.

  63. User avatar rich.landlord says:

    2 stars
I followed it exactly and it tasted bland until I added more paprika and pepper. Maybe ‘to taste’ is doing a lot of work here.

  64. User avatar Mountain Minish says:

    2 stars
Okay, but who has time to make this for breakfast? I stick to cereal. 😅

  65. 4 stars
Sounds kinda simple, but I guess simple ain’t bad. Might give it a shot.

  66. User avatar Bilbo Baggins says:

    2 stars
I guess it’s okay but potatoes are suposed to be peeled right? Mine were kinda crunchy.

  67. User avatar grant.ratke says:

    5 stars
This was so good! The flavors were amazing and it was super easy to make. Definitely a keeper!

    1. User avatar malik.armstrong63 says:

      5 stars
I totally agree! This recipe is a game changer. I’m super impressed with how simple yet flavorful it is. Gonna make it again for sure!

    2. User avatar Dr. Shirlee Kihn says:

      3 stars
Sounds good, but can you really just throw everything in and it works? I worry about the timing, like what if the potatoes burn?

  68. User avatar bart.fisher says:

    2 stars
I tried this and the potatoes took forever to cook. Maybe it’s my stove, but I was disappointed.

  69. User avatar iris.beahan says:

    5 stars
Perfect breakfast dish! I didn’t even need the eggs, the flavors were enough.

    1. User avatar anonymous_hacker says:

      5 stars
I tried it without eggs too and it was still super yummy! Thanks for sharing your experience!

  70. User avatar walton.powlowski54 says:

So simple but sooo good! My family loved it. Will definitely make again.

    1. User avatar sunni.schroeder says:

      5 stars
I’m so glad to hear your family loved it! It’s one of my favorites too. Did you add any extra spices?

  71. User avatar Dan Streetmentioner says:

    3 stars
I don’t think the thyme is necessary. It kinda overpowered everything. Just my opinion!

  72. User avatar lamar.sauer64 says:

    4 stars
Pork sausage really is the best! Can substitute with beef? Asking for a friend.

  73. User avatar smartestRedditor says:

    3 stars
Why do I need to cover the eggs? I want them runny. Can I skip that part?

  74. User avatar Neal Keeling says:

    3 stars
Good recipe but could use more seasoning, felt a bit bland to me.

  75. User avatar jessie.nader2 says:

    5 stars
I used spicy sausage and honestly it was the best version of this kind of hash I’ve made. Garlic + thyme was a good call. 10/10 for a weekend brunch.

    1. User avatar augustine.mayer says:

      5 stars
Totally agree—spicy sausage really makes this pop. Garlic + thyme is such a solid combo for breakfast.

  76. 2 stars
“0.5 onion” confused me lol. I chopped half an onion and it worked, but maybe write it as 1/2 cup or 1/2 medium onion.

  77. User avatar Android 19 says:

    3 stars
This was alrite. My onions burned a lil but the whole thing still came out eatable. Would def make again if i’m hungy and dont wanna cook much.

    1. User avatar clarine.tremblay98 says:

      5 stars
Glad it still turned out! Burnt onions happen—next time try lowering the heat when you add them so they soften before browning. Hungry-and-don’t-wanna-cook is exactly when this kind of hash hits 😄

  78. User avatar numbers.spencer says:

    4 stars
Followed it pretty much exactly and it came out great. Next time I’ll dice the potatoes a bit smaller because mine took slightly longer to brown. Still super flavorful though.

  79. User avatar gilbert.parker says:

    5 stars
Made this for breakfast and it was seriously comforting. The potatoes got nice and golden, and the paprika + thyme combo tastes way better than I expected. I added a bit of hot sauce and it was perfect.

    1. User avatar joseph.ryan1953 says:

      5 stars
Hot sauce is such a good idea 😄 I love when paprika + thyme actually delivers like that—will try your version!

  80. User avatar marilu.glover says:

    3 stars
I’m skeptical of the 4-egg step—only “optional” but it makes the whole thing messier. I skipped the eggs and it was fine, just more like a hash without the richness. Wouldn’t do 4 wells again, lol.

    1. User avatar Leto II Atreides says:

      4 stars
Totally get the messiness concern—4 eggs does make it richer, but it can turn into more of an “egg hash” situation than classic skillet-y texture. I’ve done 1–2 eggs and it still brings that richness without the extra fuss.

    2. User avatar rosia.leannon78 says:

      5 stars
I always skip the egg too (or just scramble some on top). 4 wells sounds like a lot of work for breakfast, lol. If it was good without it, I’m with you—more like savory potatoes + sausage that way.

  81. User avatar wellRespected says:

    4 stars
Pretty good, but my potatoes took longer than 10 minutes to really brown. Next time I’ll dice them a little smaller or cover the skillet briefly. Still tasty and the sausage flavor comes through.

    1. 5 stars
Yeah, that tracks—potatoes can definitely take longer to really brown depending on size and how hot your pan runs. Dicing smaller or giving them a quick cover/steam time is a smart move. Glad the sausage flavor came through!
