Pickled Sausage

October 13, 2025

Pickled Sausage is a bold, tangy, and nostalgic snack that perfectly blends smoky, spicy, and sour flavors. It is a Southern classic that stands the test of time, loved for its punchy taste, long shelf life, and simplicity. Made by soaking smoked or cured sausage in a spiced vinegar brine, this snack delivers a mouthwatering mix of savory meat and sharp acidity that wakes up the palate with every bite.

The process begins with sliced sausage packed into jars and covered with a seasoned vinegar solution. Typical brine ingredients include garlic, mustard seeds, black peppercorns, bay leaves, and crushed red pepper flakes, which combine to create layered, savory heat. Some recipes add a hint of sugar, smoked paprika, or whole cloves to balance the acidity and introduce subtle sweetness. As the sausage sits in the brine, the flavors meld and intensify, transforming familiar cured meat into something tangy and unexpectedly bright.

Pickled Sausage shines as a casual snack and as part of a larger spread. It is frequently served cold straight from the jar alongside ice-cold beer, making it a reliable bar snack and party favorite. It also plays beautifully on charcuterie boards, paired with sharp cheeses, crusty homemade bread, and pickled carrots. In sandwiches, the briny, spicy notes cut through rich elements like melted cheese or mayonnaise, adding a lively contrast that keeps every bite interesting.

Beyond its flavor, pickled sausage embodies practical, old-fashioned preservation methods. Making jars of pickled sausage is an economical way to extend the life of cured meats while introducing new dimensions of taste. The jars develop character over several days, and they store well in the refrigerator for weeks, offering a ready-to-eat snack whenever guests arrive or hunger calls.

Whether served at a backyard gathering or kept as a pantry staple, pickled sausage is a celebration of bold flavor and simple technique. Its crunchy aromatics, tangy bite, and smoky base make it an unforgettable treat that invites sharing and conversation. This humble jar transforms ordinary sausage into a vibrant, nostalgic, and utterly addictive snack. Simple and delicious every time.

1 cup of water??? That’s way too much! I did half a cup and they turned out fine.

    1. User avatar kristian.ondricka says:

      3 stars
You sure it worked with half a cup? I’d be worried it’d be too salty or something. I think the water helps balance the vinegar flavor, just saying.

    2. User avatar wellRespected says:

      5 stars
I followed the recipe exactly and used the full cup of water. They came out delicious! Maybe the amount of water depends on the type of sausage you’re using?

  2. User avatar kermit.gorczany1964 says:

Followed the recipe exactly, but they didn’t come out right. Sad face. 🙁

Pickled sausage is the best, it’s a delicacy in some cultures. I’m glad I found this recipe!

    1. User avatar ArabianNights says:

      5 stars
I totally agree! Pickled sausage is amazing! It tastes really good with just about anything.

    2. User avatar odell.larson1962 says:

      2 stars
Pickled sausage? Sounds kinda odd. Never heard of it before. How can it be a delicacy? 🤔

  4. 2 stars
Not a fan. The whole thing tasted off. Maybe my sausages were bad?

  5. User avatar lorrine.johnson61 says:

    3 stars
These are sooo spicy! I barely added any red pepper flakes!

  6. 1 star
Pickled sausage? Who even thought of that? Sounds like a joke.

    1. User avatar shala.schneider20 says:

      2 stars
Dude, not everything needs to be pickled. This sounds gross, honestly.

    2. User avatar Falmer Shaman says:

I know it sounds weird, but pickled sausage is actually a thing! It’s really tasty once you try it. 😋

  7. User avatar Photographer says:

    3 stars
How do you even eat these? Just plain? Seems kinda weird to me.

    1. User avatar I. P. Freely says:

      5 stars
Seems odd, but it’s actually pretty good! I thought that too until I tried it. The pickling makes a huge difference!

    2. 4 stars
Yeah, just plain! That’s the whole point of pickled sausages. They’re packed with flavor after pickling. You should give it a try!

  8. 5 stars
Yum! My grandpa used to make pickled sausage like this. Brings back memories!

  9. User avatar jonelle.schmitt1990 says:

Great recipe, my family loved it! I added extra garlic, yum!

    1. User avatar Dan Streetmentioner says:

Thanks for sharing! Extra garlic sounds delish! I can’t wait to try it out. 😋

  10. User avatar pilar.borer1986 says:

These were pretty good! But I think I added too much vinegar. Next time I’ll cut back.

  11. User avatar ardelle.hammes says:

Pickled sausage? That’s kinda weird. Pass.

    1. 5 stars
It’s actually really good! You should try it before passing judgment. 😋

  12. 2 stars
Is it really safe to eat something after just 3 days? Seems risky.

  13. User avatar david.langworth says:

    3 stars
So, like, do you have to use filtered water? Just tap water is fine right?

  14. User avatar abdul.dicki81 says:

Love pickled stuff! But y’all know we can’t forget to wash our hands, right? just saying.

  16. 4 stars
So simple yet so delicious! Can’t believe I waited so long to try this.

  17. User avatar larry.mraz40 says:

    3 stars
I’m not sure about the ratio of sugar to vinegar. Mine tasted a little too sharp until I left it longer in the fridge. Next time I’ll tweak the sugar down maybe.

  18. User avatar Cammar Pilru says:

    3 stars
Not exactly what I expected. The vinegar was too strong for my taste. I might try it again with less vinegar.

  19. User avatar michael.zboncak67 says:

    4 stars
I used regular vinegar and cut the sugar in half. Turned out tangy and not too sweet—exactly what I wanted. Would make again.

  20. 5 stars
This is the best pickled sausage recipe I’ve tried! So much flavor, I can’t get enough!

    1. User avatar tuan.stehr16 says:

      2 stars
Best pickled sausage? Really? I made this and it was just ok. Maybe I did something wrong.

I’m glad you loved it! I’m gonna try this recipe too. Sounds so good!

  21. User avatar Neil B. Formy says:

    2 stars
My grandma used to make something similar but never with sugar. Are you sure about that?

  22. 4 stars
Not gonna lie, I was skeptical about pickled sausage, but these are dangerously snackable. Next time I’ll add more pepper flakes.

    1. User avatar therese.mcdermott says:

      5 stars
Totally get the skepticism—pickle + sausage sounds odd at first, but that pepper flake kick is real. 😄 How spicy did you make yours? Next time I’m adding more garlic too.

  23. User avatar arcelia.thiel87 says:

    3 stars
A little too tangy for me. Maybe less vinegar next time? 🤔

    1. User avatar milan.koss2006 says:

      4 stars
Yeah, the vinegar can be really overpowering. Maybe try using less vinegar and more water next time?

    2. 5 stars
I love it tangy! But hey, everyone has their own taste, so just adjust it to your liking! 😊

  24. User avatar rob.mckenzie81 says:

    2 stars
Seriously, who pickles sausage? 🤨 I don’t know if this is a good idea.

    1. User avatar matt.trantow60 says:

      4 stars
I thought the same thing at first, but pickled sausage is actually quite popular! You might be surprised how good it can be. Give it a shot! 😊

  25. User avatar Orange Dartwing says:

    5 stars
OMG these were so good! I added some onions too and it was fire! 🔥

  26. User avatar illa.walsh1953 says:

    5 stars
Delicious! I made these and my family love them. Can’t stop eating!

  27. 3 stars
Mine didn’t taste sweet at all… I forgot to adjust the sugar and used 1/4 cup like it says but maybe my vinegar was super sharp? Still edible though, just tangier.

    1. User avatar loren.carroll22 says:

      4 stars
Ahh that makes sense—sharp vinegar can totally overpower the sugar. Next time try tasting the brine before you pour it, and add a bit more sugar or use apple cider vinegar like the recipe suggests.

    2. User avatar reynaldo.bashirian46 says:

      2 stars
Wait… is 1/4 cup sugar for ALL 2 cups vinegar? I swear mine tasted more like pickle juice than sweet. Maybe I used regular vinegar and it was too strong, but I’m not sure—still ok tho.

  28. User avatar Santos Kohler Sr. says:

    4 stars
I used hot sausage and wow! Just the right amount of kick. Yum!

  29. User avatar lindsey.grady says:

    2 stars
I dunno, never really been a fan of pickled things. This didn’t change my mind. Meh.

  30. User avatar coleman.hammes says:

    5 stars
This is SO good! I used apple cider vinegar like you suggested. Definitely making this again! 🍏

    1. User avatar ophelia.fahey says:

      3 stars
Really? I tried it with regular vinegar and it wasn’t that great. Maybe I need to switch it up? 🤔

    2. 5 stars
I’m so glad you liked it! Apple cider vinegar really does make a difference. 🍏 How long did you let it pickle?

  31. User avatar francie.wuckert19 says:

    5 stars
Never thought I’d like pickled sausage, but here we are! Great recipe!

  32. User avatar eliseo.pfannerstill27 says:

    4 stars
Super easy! I’m not usually a “pickling” person, but this is basically a shortcut refrigerator situation. I used filtered water like the recipe says and the flavor was cleaner.

    1. User avatar kip.bechtelar11 says:

      5 stars
Seriously? “Pickling” never sounded like my thing, but I’m kinda tempted now. Did you notice a stronger vinegar taste after 3 days or does it mellow out?

    2. 3 stars
I tried this but I think I messed it up 😅 I used regular tap water and maybe not enough pickling spice. Tasted kinda… bland? Still edible though. Next time I’ll use filtered water like you did!

  33. 4 stars
Add more garlic! Also maybe some dill? Just a suggestion! 🍴

    1. User avatar Carmelina Sanford DDS says:

      5 stars
Great suggestion! Garlic makes everything better! I might just try the dill too! 🧄👍

    2. User avatar elvis.oconner2010 says:

      3 stars
Not sure about adding dill, that seems weird for sausages. But more garlic sounds fine I guess.

  34. User avatar tabatha.grady34 says:

    1 star
Its just sausage in vinegar. I don’t get the hype. Sausage is better grilled.

    1. User avatar silvia.macejkovic23 says:

      5 stars
I totally disagree! Pickled sausage has a unique taste that grilled sausage can’t match. It’s all about the flavor! 😋

  35. User avatar Hillman Hunter says:

    4 stars
Good idea using fully cooked sausages—less risk and less fuss. I let mine go 4 days and the flavor got way better. Easy recipe, no complaints.

  36. 3 stars
The instructions were confusing. What’s a heatproof jar? Can I just use any jar? 🤔

  37. User avatar damien.paucek12 says:

    3 stars
I felt like the flavors were off. Too much sugar maybe? Not sure if I’ll try again.

  38. 5 stars
Tried this with apple cider vinegar—way sweeter than expected (in a good way). The garlic really comes through. Letting it sit the full 3+ days made a huge difference.

  39. User avatar leslie.robel says:

    3 stars
I tried this but it didn’t taste like the ones I get in the store. Maybe I did it wrong.

  40. User avatar laraine.reinger52 says:

    5 stars
These pickled sausages are a hit at my BBQs! Super easy to make too. Definitely recommend!

  41. 2 stars
I don’t know about this recipe. Pickled sausage? Sounds kinda weird. Who would want to eat that?

  42. User avatar ervin.nikolaus2001 says:

    5 stars
These are amazing! My whole family loved them. They disappeared in a day! 😍

  43. User avatar Vroomfondel says:

    2 stars
Seems too vinegar-y. I doubled the water like a fool and now it’s okay but not great. Stick to the ratio or you’ll regret it.

  44. 5 stars
Tried this with apple cider vinegar and it came out sweet-tangy and super tasty. The pickling spice really does the heavy lifting. Will definitely make again.

  45. User avatar vince.abshire45 says:

    4 stars
I used regular tap water and I swear it tasted flat compared to the first batch I made with filtered. Might be my imagination but I’m sticking with filtered next time.

  46. User avatar celestina.schaefer89 says:

    3 stars
Not sure about pickling sausages… seems weird. But, my buddy said it’s good. Giving it a shot.

    1. User avatar terminatorXYZ says:

      2 stars
Sounds gross ngl, can’t imagine how that would taste… but hey, you do you!

    2. User avatar joe_banana says:

      5 stars
I was skeptical too, but trust me, pickled sausages are a game changer! Give it a few days, you won’t regret it.

  47. 5 stars
This is a game changer for my parties! Everyone loves them! 5 stars!

    1. 5 stars
I’m so glad to hear that! These pickled sausages are definitely a hit at gatherings. 🎉

  48. 4 stars
Picked this for a picnic. Everyone was surprised! One jar was not enough tho, LOL.

  49. User avatar Arthur Philip Deodat says:

    3 stars
Ehh, it was okay but I expected more spice. Added some extra chili and it helped!

    1. 4 stars
Yeah, I found it pretty bland too! Definitely needs that extra kick. I toss in extra spices usually.

  50. User avatar Orange Dartwing says:

    2 stars
I don’t know, shaking the jar “occasionally” feels unnecessary—like would anyone really do that every day? I didn’t and it still worked, so maybe it’s optional.

    1. User avatar jackson.pfannerstill says:

      4 stars
I get what you mean—“occasionally” isn’t a rule you have to follow. I usually just make sure the sausages stay fully submerged and then I flip/turn the jar once or twice. Still tastes great after a few days.

  51. User avatar maximo.lueilwitz77 says:

    5 stars
WOW!! Easy and tasty! 5 stars all the way. Would make again!

  52. User avatar dorethea.wisozk1997 says:

    3 stars
I’m skeptical about “fully cooked” sausages—mine were a little dry already, and I think pickling just amplified that. Next time I’ll pick juicier sausages.

  53. User avatar dusty.koss82 says:

    3 stars
Mine came out kinda bland after 3 days. I think I under-salted? The sugar maybe needed more or my pickling spice was weak.

    1. 4 stars
Hmm, bland after 3 days usually means it needed more salt/sugar or the spice didn’t have enough punch. I’d add a little more sugar *and* a pinch more pickling spice next time—also make sure everything fully dissolves before pouring.

  54. User avatar harold.feil31 says:

    2 stars
I followed the recipe but forgot the sugar. They were super sour. Oops! 😅

  55. User avatar madelaine.mcglynn says:

    3 stars
Not bad, but I think 3 days is too short. The garlic felt kinda punchy at day 3. By day 5 it was way more mellow.

  56. User avatar alec.okuneva57 says:

    5 stars
5 stars easy. Mine came out tangy and garlicky, and the pickling spice smell is amazing. I might add a little extra sugar next time, bc I like it sweeter. Will make again!

  57. User avatar Gag Halfrunt says:

    3 stars
Tried it with apple cider vinegar, but didn’t really like the taste. Think I’ll stick to regular vinegar next time.

  58. User avatar erich.schulist says:

    4 stars
Okay but why do they say shake the jar? I did and it sprayed a little vinegar on my counter (oops). Flavor was still great though—just be careful.

    1. User avatar Arwen Evenstar says:

      3 stars
I think you don’t really need to shake it? Mine always turned out fine if I just flip the jar once. Also vinegar on the counter—use baking soda right away, should stop the stink. Maybe the spices are too strong if you shake too much?

    2. User avatar Happy Mask Salesman says:

      5 stars
Yeah the “shake the jar” part is basically to keep the spices/garlic from settling so every bite gets the same flavor. And honestly the counter vinegar spill is real—hot jar + splash = chaos 😅 Next time just gently swirl instead of full-on shaking.

  59. User avatar Orange Dartwing says:

    2 stars
Too much vinegar for my taste. I prefer it a bit sweeter.

  60. 4 stars
Can u use any kind of sausages? I only have hot dogs around can I use those? Thanks!

  61. User avatar felicita.fisher1987 says:

    4 stars
Pretty straightforward and the ratio of vinegar/water/sugar makes sense. I used homemade pickling spice and it came out solid. Would absolutely make again.

  62. User avatar frances.toy59 says:

    4 stars
Yum! 🍽 I used apple cider vinegar and it turned out delicious. Totally recommend!

  63. 4 stars
The red pepper flakes are a must for me. Adds a little kick without ruining the flavor. Jar smelled amazing while it cooled.

    1. 5 stars
Totally agree—those red pepper flakes are the difference. I used a pinch less the first time but it still had that nice kick without overpowering. Also, the jar smell while it cools is *so* good.

  64. User avatar boyd.adams64 says:

    4 stars
Pretty straightforward. I used homemade pickling spice and followed the 3-day wait—big difference after day 4.

  65. User avatar geneva.goldner says:

    3 stars
Not sure about the sugar amount—1/4 cup felt like a guess. I’d tweak it depending on how sweet your vinegar is.

    1. User avatar wally.strosin11 says:

      4 stars
I thought mine would be too sweet but it turned out great. Next time I might do like 3 tbsp though—my vinegar was super sharp.

    2. User avatar ramiro.carroll says:

      5 stars
Totally agree—1/4 cup sugar is more of a starting point. I used cider vinegar once and barely needed any extra, because it already had sweetness.

  66. User avatar Shannon Zemlak says:

    4 stars
Yum! My family just loved this recipe! Will be making it again for sure!

    1. 5 stars
So glad to hear that! The pickled sausages really do have a unique flavor. Can’t wait to make them again myself!

  67. 1 star
This recipe is crazy! Do people really eat pickled sausage? 🤨

    1. User avatar agustina.altenwerth89 says:

      4 stars
Yeah, it’s actually a common snack in some places! Once you try it, you might just love it. 😋

  68. 3 stars
I only had one jar and packed them too tight. Some pieces didn’t soak as well and the flavor was uneven.

    1. User avatar renato.pouros says:

      5 stars
That makes total sense—if you pack the jar too tight, the brine can’t get in between the pieces as evenly. Next time, try leaving a little space and definitely give it a good shake once the jar cools.

    2. User avatar Spider Worker says:

      2 stars
Hmm I think you should’ve simmered it longer? Like boil, then keep it on low so it soaks all the way. Also I always use more sugar for better flavor, like 1/2 cup, otherwise it’s kinda sharp.

  69. User avatar lucretia.ledner says:

    5 stars
Pickled sausage!? YUM! Can’t wait to try this!

  70. 4 stars
I used filtered water like suggested (rare for me lol) and it honestly helped. Cleaner flavor. Also my pickling spice was kinda old and it still turned out decent.

  71. User avatar boyce.homenick1999 says:

    3 stars
Mine were good but a little too vinegary. Next time I’ll cut back the vinegar or add a touch more sugar.

  72. 5 stars
These pickled sausages are a game changer! Easy to make and they taste amazing! Definitely a 5 from me!

    1. 5 stars
Absolutely agree! I made these for my party and they were gone in minutes! Super easy recipe. Thanks for sharing!

  73. User avatar tyrell.wisoky says:

    3 stars
Yall need to be careful. If u keep it too long it can go bad. Just sayin’.

    1. 4 stars
Thanks for the heads up! I never thought about that. How long is too long?

  74. User avatar marybelle.kunde says:

    4 stars
Pretty straightforward, but 3 days feels short if you like deep flavor. I waited a week and they were even better. Still, great idea.

  75. User avatar domenica.senger51 says:

    4 stars
so easy and delicious, make sure to use good sausages tho!

  76. 5 stars
So simple! I used apple cider vinegar and it tastes great! Just like grandma used to make!

    1. User avatar alberto.schmeler82 says:

      5 stars
Sounds delicious! I’m gonna try that too! 😋

  77. User avatar gwenn.stehr31 says:

    5 stars
Love it!!! Pickle sausage party at my place! 🥳

  78. User avatar nery.cummerata99 says:

    2 stars
I don’t get why anyone would wanna eat pickled sausage. Isn’t that just weird?

  79. User avatar henriette.turner93 says:

    4 stars
Easy enough, but I wish the instructions said how hot the jar should be safely. I just poured carefully and it worked, thankfully. Flavor is legit though!

  80. User avatar xochitl.lynch36 says:

    3 stars
I’m skeptical about “sweet” from apple cider vinegar—mine just tasted like vinegar. Maybe my pickling spice was weak or I didn’t dissolve the sugar well.

  81. User avatar kortney.morar says:

    2 stars
Quick question: are fully cooked sausages required? I used uncooked links once and, uh… let’s just say it was not the move.

    1. User avatar dwight.kilback7 says:

      5 stars
Yeah—fully cooked sausages are really the move for this recipe. Since you’re basically just “pickling” in hot vinegar and then chilling, they’re not getting the chance to cook through from raw.

  82. User avatar angelia.erdman19 says:

This is one of those recipes that sounds fancy but it’s basically sausage in vinegar lol. Still, it’s a great snack and my family keeps stealing them.

Not gonna lie, I was skeptical—pickle for 3 days sounds too quick. I tried it anyway though and yeah… it’s pretty good. Next time I’ll probably cut the vinegar a bit because it was kinda strong for me (and I used regular water, not filtered… my bad).

Haha “sausage in vinegar” is exactly what it is 😄 But honestly that’s why I love it—super punchy and addictive. Glad your family’s stealing them.

Tried these with apple cider vinegar and they turned out way better than I expected. Sweet, garlicky, and the kick from the pepper flakes is perfect.

I don’t get it—3 days? I wanted them right away and they were just… sausage in pickle juice. Still tasty though lol.

This is a really good fridge project for meal prep. I served it with crackers and mustard—instant party food. 10/10 would do again.

Used fully cooked sausages like the recipe says and everything stayed nice. I’m not risking raw sausage in a jar, no thanks.

Yes!! I did the same—fully cooked sausages—and they turned out great. The jar method is honestly so much easier than babysitting anything on the stove.

Hmm I get nervous about pickling meat in a jar, like is it really safe even with fully cooked? Also I used “whatever vinegar” and it was kinda too sour… might try apple cider next time.

Tried this with apple cider vinegar—so good. The garlic and pickling spice make it taste way more “grown up” than I expected. Waiting the full 3 days was key.

Yesss—apple cider vinegar + garlic is the move. I always underestimate how “grown up” pickled meats taste 😄 Glad you waited the full 3 days!

5 stars! I shook the jar like it says and omg the garlic flavor is strong in a good way. One jar didn’t even make it to day 4 😅

The instructions are solid, but I wish it said what size jar to use. I had to guess and didn’t fully submerge one sausage at first.
