Pesto Potato Salad

July 21, 2025

Pesto potato salad is one of those dishes that manages to be comforting and fresh at the same time. It takes the classic potato salad we all know and transforms it into something brighter, more vibrant, and undeniably flavorful. By swapping the traditional mayo-based dressing for pesto, this salad gets a big hit of herbs, garlic, and Parmesan, offering a Mediterranean twist on a backyard staple.

The star of the show is, of course, the pesto. Whether you make your own with fresh basil, pine nuts, and olive oil or grab a good-quality jar from the store, it adds bold, earthy flavor to every bite. When tossed with warm, just-cooked potatoes, the pesto sinks in beautifully, making each piece savory and satisfying. The potatoes absorb that rich green sauce in a way that feels indulgent but still light.

Beyond the basics, this salad is easily customizable. Add in green beans or arugula for color and crunch, or toss in cherry tomatoes for a juicy burst of sweetness. A handful of toasted nuts like almonds or walnuts can add texture, while a sprinkle of crumbled feta or shaved Parmesan brings creaminess and a salty bite. You can serve it warm, at room temperature, or chilled, depending on the vibe of your meal.

Pesto potato salad works equally well for casual cookouts or fancier dinner parties. It pairs beautifully with grilled chicken, salmon, or steak, but it’s also hearty enough to stand on its own. For a vegetarian main, it can be served alongside roasted vegetables or a fresh garden salad.

It’s also a great make-ahead option, as the flavors deepen over time. Leftovers taste even better the next day, making it a smart choice for meal prep or weekday lunches. Whether you’re feeding a crowd or just looking for something new to try, pesto potato salad is a guaranteed crowd-pleaser that never goes out of style.

I dunno, man. Pesto in potato salad? Sounds a bit weird to me. I’ll stick to mayo.

  2. User avatar federico.lockman65 says:

    3 stars
Did you really need 500g of potatoes? Seems like a lot. 😅

  3. User avatar cornell.morar says:

I tried this recipe and it turned out way too oily for my taste.

    1. User avatar luis.schroeder says:

      3 stars
Oily? Really? I used the same recipe and it was just right! Maybe you added too much pesto?

    2. 4 stars
I’m sorry to hear that! Maybe try using less olive oil next time? It could help balance it out.

  4. User avatar kerry.mante57 says:

I’m not sure about the combination of potatoes and pesto… doesn’t sound right.

  5. User avatar Sigrid McKenzie Jr. says:

Eh, too many steps for just a potato salad.

  6. User avatar beth.kuhn1 says:

10/10 would recommend. Perfect for summer BBQs!

  7. User avatar sumiko.prosacco1980 says:

Super easy to make, even for someone like me who burns toast. 😂

  8. 4 stars
Pine nuts are just fancy nuts. I used sunflower seeds instead and it was good enough!

  9. User avatar nathanael.lowe50 says:

    4 stars
I put in some diced bell peppers too. YUM!

    1. User avatar Super Saiyan 2 Goku says:

      2 stars
IDK, but aren’t peppers a bit too much for potato salad? Just sayin’.

    2. User avatar Yooden Vranx says:

      5 stars
Bell peppers sound like a great addition! I love the crunch they bring!

  10. 4 stars
Not gonna lie, I was skeptical about pesto + potato salad, but it’s actually delicious. The tomatoes added a little freshness that kept it from being too rich.

  11. User avatar israel.botsford says:

    3 stars
Do the potatoes gotta be peeled? I like the skins on them for flavor. 🤔

  12. User avatar cole.wehner2021 says:

    2 stars
20 minutes cooking time was fine, but my pine nuts burned for some reason? I’m not good with toasting I guess. Flavor still okay, but texture was off.

  13. User avatar CTRLplusW says:

    5 stars
This turned out way better than I expected—pesto + warm potatoes is such a good combo. I added a little extra black pepper and it was perfect.

  14. User avatar MAGA2024.Trumpster says:

    5 stars
Yum! Simple and quick recipe. I’ll make it again for sure!

I forgot to toast the pine nuts and it still tasted good. Make sure to do that tho!

  16. User avatar jarvis.kuphal1975 says:

    2 stars
Not sure I get the point of putting pesto in potato salad—doesn’t it overpower the potatoes? It was flavorful, sure, but I kinda wanted something more “classic” and less herby.

  17. 3 stars
Too much oil! I couldn’t even taste the potatoes. I’ll try less next time.

  18. User avatar Lumberjack says:

    5 stars
This potato salad is AMAZING! So flavorfull. I added some garlic and it made it even better. Thanks!

  19. User avatar maureen.nitzsche58 says:

    3 stars
This recipe is okay but it was missing something…maybe garlic? Just my opinion.

  20. 3 stars
I tried making this with store-bought pesto, it was okay but not as good as I thought. Need to try it again with homemade pesto maybe.

  21. User avatar olevia.goodwin48 says:

    5 stars
This recipe is so easy to make, even I (not good cook) made it! Taste was gr8!

  22. User avatar Ms. Laine Kshlerin says:

    5 stars
Super easy for a weeknight side. I tossed everything while the potatoes were still warm so the pesto clung better. Big win. Will serve with grilled chicken next time!

  23. User avatar Dan Streetmentioner says:

    3 stars
Pesto is not good for potato salad, I prefer mayo. But it was ok I guess.

    1. User avatar luciano.quitzon1975 says:

      2 stars
Mayo is way better! Pesto ain’t for everything. Just saying, I won’t try this one.

    2. User avatar merrill.borer19 says:

      4 stars
I totally disagree! Pesto adds a nice flavor contrast to potatoes. Mayo is just too heavy. Give it another try!

  24. User avatar Slartibartfast says:

    2 stars
Potatos salad? Yea I like it if made right! This recipe tho…idk.

  25. User avatar liberty.stracke3 says:

    3 stars
Wasn’t a fan of the pine nuts, too crunchy with the soft potatoes. Next time I’ll try without.

  26. User avatar nilsa.thompson says:

    4 stars
Super easy to make, loved how colorful it looked! Will definitely make again.

    1. User avatar Arthur Dent says:

      3 stars
Looks nice but I wonder if the pesto overpowers the potatoes. Could be too strong for some.

    2. User avatar young.stokes2014 says:

      5 stars
I’m so glad you enjoyed it! It’s really a hit at parties, so colorful! 🌈

  27. User avatar donte.tillman2005 says:

Pine nuts are expensive man… but yeah it’s worth it.

    1. User avatar Falmer Shadowmaster says:

      5 stars
For real—pine nuts are wild in price. But that little crunch makes the whole pesto potato salad feel fancy, not just “potatoes with sauce.” Totally worth it if you can swing it.

  28. User avatar Cammar Pilru says:

    4 stars
Pine nuts are expensive where I live, so I swapped with chopped walnuts. Still tasty, but I don’t think it’s the same vibe—more earthy. Would try pine nuts once though.

  29. 3 stars
I followed the steps, but mine came out a little oily. Next time I’ll use less olive oil or add it gradually while mixing.

  30. User avatar douglas.yundt says:

    2 stars
I dunno. Just doesn’t seem right to mix potatoes with pesto…?? Idk, not for me.

    1. User avatar earle.oconnell says:

      5 stars
I totally disagree! Pesto and potatoes are a match made in heaven! You just gotta try it. 😍

    2. User avatar greta.labadie says:

      2 stars
Lol, I think it’s weird too. Potatoes should be with butter, not pesto. Not my thing.

  31. User avatar Kathyrn Cole says:

    1 star
Too much pesto, I couldn’t eat it. Maybe I did it wrong. I just wish it was simpler.

  32. 5 stars
I made this for a picnic and everyone loved it! So easy and fresh! 🌿🥔

  33. User avatar kris.hermiston51 says:

    3 stars
Wrong question: why are we boiling the potatoes in salted water but then adding salt again? I guess it’s fine, but I only added pepper and it tasted way better to me.

  34. User avatar domitila.spinka7 says:

    5 stars
This was delicious! I didn’t have pine nuts, so I used sunflower seeds instead. Still yummy!

  35. User avatar karly.donnelly1980 says:

    3 stars
This is not really a “salad” to me if it’s all warm pesto mixed in… I let it chill in the fridge and it got way better. Flavor improved after a few hours.

    1. User avatar dwain.thompson1951 says:

      5 stars
Totally get that—if you expect a cold crisp salad, warm pesto potatoes can feel different. But I love that you chilled it; pesto usually tastes way better once it has time to sink in.

  36. 2 stars
Why use pesto in a potato salad? Sounds weird, but tried it and it was okay. Just different.

  37. User avatar buford.oconner71 says:

    5 stars
This is like the grown-up version of regular potato salad. Cherry tomatoes make it feel fresh, and the pesto flavor is bold without being heavy.

  38. User avatar valene.nolan1999 says:

    4 stars
Can I use sweet potatoes instead? Trying to eat healthy.

  39. User avatar rich.landlord says:

    5 stars
This was amazing! The pesto gives it such a unique flavor. My family loved it!

    1. User avatar britt.mann26 says:

      5 stars
I agree! The pesto really does make it special. I added some grilled chicken on top and it was a hit!

    2. User avatar oPandariaNo says:

      3 stars
Kinda skeptical about this. Potatoes and pesto? Sounds weird to me. But hey, if your family liked it, that’s awesome!

  40. 1 star
Isn’t pesto usually for pasta? I’m confused why it goes with potatoes… lol.

  41. 4 stars
I didn’t have cherry tomatoes, used regular ones instead. It turned out fine! Recommend this!

  42. User avatar sanjuana.white61 says:

    5 stars
This is the best potato salad I’ve made! The pesto adds such a great flavor.

  43. User avatar shane.denesik says:

    5 stars
So good. I will definitely make again! 😍

    1. 5 stars
I’m so glad you liked it! The pesto really adds a nice flavor. 🌿

  44. User avatar cassondra.rogahn says:

    3 stars
More salt please! I thought it was kinda bland.

    1. 5 stars
I hear ya! A bit more salt can really bring out the flavors. Maybe try adding it at the end for a better taste?

  45. User avatar angel.treutel28 says:

    4 stars
Awesome recipe, served it at a picnic and everyone loved it! By the way, I used cashews instead of pine nuts.

    1. User avatar tena.kiehn2025 says:

      5 stars
I’m glad everyone loved it! Cashews are a great substitute! I might try that next time.

  46. User avatar josette.towne says:

    3 stars
I followed it exactly, but my potatoes were a bit undercooked at 20 minutes. Maybe my cubes were too big. After I cooked a little longer and chilled it, it tasted better.

  47. 2 stars
I dont know about putting pesto in potato salad…sounds weird.

  48. User avatar rachal.olson16 says:

    2 stars
I don’t understand why you would put pesto on potatoes. Seems strange to me.

    1. 3 stars
Honestly, it’s just potatoes. You can put anything on them. It ain’t that strange.

    2. User avatar kirby.dubuque1974 says:

      5 stars
I think it’s a great combo! Pesto adds so much flavor. Don’t knock it till you try it!

  49. User avatar sixta.oconnell30 says:

    5 stars
This salad is awesome! Perfect for summer BBQs. Made it twice already!

  50. User avatar MAGA2024.Trumpster says:

    4 stars
Could you use walnuts instead of pine nuts? I used what I had and it was fine but the flavor was different—still good though.

  51. 3 stars
It was ok, but I felt like it needed something… maybe some cheese?

  52. User avatar natosha.ritchie1992 says:

    4 stars
The pine nuts toasted nicely, but I burned mine for like 10 seconds lol. Still worked though—just less nutty flavor.

    1. User avatar emanuel.metz says:

      3 stars
I dunno… if you burn pine nuts even a little it can make the whole pesto taste kinda soapy/bitter. Next time maybe toast them in a dry pan on low and watch like a hawk (or use walnuts/cashews). But hey, potato salad is forgiving 😅

    2. 5 stars
Honestly, 10 seconds burned is still impressive—pine nuts go from toasty to bitter REAL fast. Glad yours still worked though! I always keep mine right on the edge of “golden” and stir constantly.

  53. User avatar norine.kertzmann88 says:

    4 stars
Loved the idea, but 20 minutes was not enough for my cubes—took closer to 30. Once tender it was great, just adjust cook time.

    1. User avatar rickiestmorty says:

      5 stars
Good call! Cube size really changes timing—30 minutes makes sense for bigger cubes. I’ll update the recipe wording to “until tender” vs. a strict 20.

  54. User avatar shelley.yost6 says:

    4 stars
Made this for a BBQ and everyone loved it! So fresh and tangy!

  55. User avatar ramiro.feeney68 says:

    3 stars
I tried using store-bought pesto but it tasted kinda bland. Maybe I’ll try making my own next time.

    1. User avatar violet.rowe3 says:

      5 stars
I totally agree, store-bought pesto can be hit or miss. Making it from scratch is so much better! Just toss in some basil, garlic, and cheese!

    2. User avatar bruno.buckridge says:

      3 stars
Really? I thought store-bought was good enough… maybe I gotta up my game, LOL.

  56. 2 stars
Kinda bland for me. Maybe I needed more pesto? Also I used canned tomatoes once (oops) and it didn’t taste right.

  57. User avatar wellRespected says:

    1 star
Potatoes should just be potatoes. Why ruin them with all this green stuff? 😒

  58. User avatar tyler.turner1998 says:

    5 stars
Simple and tasty—exactly what I wanted for a potluck. I used store-bought pesto and it still tasted homemade. Pine nuts were a great finishing touch.

    1. User avatar rudy.buckridge says:

      5 stars
Love this—potluck-friendly but still feels homemade. I’ve been nervous about store-bought pesto, so good to hear it works! 🌿

  59. 5 stars
Easy and quick! Pesto potato salad is a keeper! 10/10

  60. 2 stars
I don’t see how potatoes and pesto go together. Seems weird to me.

  61. User avatar caterina.kunde76 says:

    4 stars
Really good mix! But I used walnuts instead of pine nuts and it worked out fine. Can’t go wrong with potatoes!

    1. User avatar bronwyn.kuhic says:

      4 stars
Walnuts? That’s interesting! I never thought of that. I’ve always used pine nuts since they add a nice crunch. Might have to try it your way!

  62. 4 stars
I followed the steps, but mine needed more salt and pepper at the end. Also toasted pine nuts smell AMAZING. Would make again.

    1. User avatar tuan.schowalter49 says:

      5 stars
Yes!! Totally agree—pesto can be a little salty depending on the brand, so a final pinch of salt/pepper makes it pop. And those toasted pine nuts are the best part. 😋

    2. User avatar Roseanne Mosciski says:

      3 stars
Huh, I did everything exactly and mine still tasted bland. I guess I didn’t toast the pine nuts long enough? Also I think my pesto was low on flavor. I’ll try adding more salt and pepper at the end next time. Maybe the tomatoes needed more too? 😅

  63. User avatar Falmer Spellsword says:

    4 stars
I used store-bought pesto and it still worked great. The pine nuts were a nice crunchy touch. Next time I’ll let it chill longer before serving.

  64. User avatar rickiestmorty says:

    2 stars
Meh. Pine nuts were a pain and I didn’t feel like it needed them.

  65. User avatar estelle.purdy79 says:

    4 stars
Really good idea, but 20 minutes maybe depends on how big the cubes are. Mine were slightly underdone at 20—needed like 5 extra minutes. Otherwise great pesto-potato combo.

    1. User avatar heath.stokes64 says:

      5 stars
Totally agree—20 minutes really depends on cube size. Mine always cook faster if I make them small, but bigger chunks definitely need that extra 5 minutes. Thanks for calling it out!

  66. 5 stars
This potato salad is delicious! The pesto really adds a nice flavor. Will definitely make it again!

  67. User avatar hortencia.kuhn2025 says:

    4 stars
My pesto was super salty so I barely added any extra salt. Heads up: start with less seasoning than you think.

    1. 5 stars
Good heads up—pesto can be *way* saltier than expected. I’ll definitely taste before adding any extra salt next time.

  68. User avatar mickie.hirthe59 says:

    3 stars
Okay, pine nuts are expensive tho. I swapped with crushed walnuts and it was still pretty tasty. Would I make it again? Maybe, but only if I’m feeling fancy.

  69. User avatar Carmelia Kshlerin says:

    3 stars
I followed it exactly and my potatoes still felt kind of firm after 20 minutes. Could be my cubes were bigger, but I’d adjust cooking time next time.

  70. 4 stars
Made it exactly as written and it was good, but I think 20 minutes for the potatoes might vary—mine took closer to 25 before they were tender. Next time I’ll probably let them cool fully so it doesn’t get too oily.

  71. User avatar cleopatra.smith98 says:

    3 stars
I think I put too much salt, but still yummy. Gonna try again but less salt this time.

  72. 1 star
Pesto? What is that? LOL. Never heard of it before.

  73. 2 stars
Why are pine nuts toasted? I forgot that step and mine tasted kinda bland… also I accidentally used regular pepper, not cracked. 😅

    1. User avatar scorpion says:

      3 stars
Maybe your pesto was the problem? Pine nuts just add texture to me. I don’t always toast them and it’s still good 🤷‍♀️ But yeah, if you used not-cracked pepper, it might’ve been weaker. Next time toast 3–5 min til lightly golden!

    2. User avatar micah.conn says:

      5 stars
Toasting the pine nuts really boosts the flavor—more nutty and a little sweet/roasty. If they’re not toasted, they can taste flat, which might make the whole salad feel bland. Also, regular pepper can be harsher/less aromatic than freshly cracked, so the seasoning might not hit the same.

  74. User avatar Falmer Shaman says:

    5 stars
This turned out so flavorful—pesto really makes the potatoes taste fancy. I added a little extra pepper and it was perfect.

  75. 5 stars
Verry good! My kids ate it all. 🙂

    1. User avatar Eccentrica Gallumbits says:

      5 stars
I’m glad to hear your kids loved it! This is a great way to sneak in some veggies!

  76. User avatar candis.harris1994 says:

    4 stars
1/2 cup pesto seems like a lot. I did 1/4 cup and it was perfect for us. Not bad at all—would recommend adjusting to your taste.

    1. User avatar charlotte.klocko says:

      5 stars
Totally agree—pesto can be strong. I usually start with 1/4 cup too, then add more if it looks dry.

    2. User avatar Grìma Wormtongue says:

      4 stars
I’m glad you said this! I used the full 1/2 cup once and it tasted kinda pesto-heavy. Now I do 1/3 and it’s better.

  77. User avatar alberto.auer94 says:

    5 stars
Super easy and quick! Perfect for a fast summer dish.

    1. 5 stars
I tried this last night and it was super yummy! Definitely making it again. 😊

  78. User avatar felix.cormier19 says:

    4 stars
I didn’t have pine nuts, used walnuts instead. Still turned out good, but not as crunchy.

  79. 5 stars
This turned out so good! I love how easy it is to make. Definitely a keeper!

  80. 5 stars
Made this for lunch and it was a hit—super flavorful without being complicated. I used store-bought pesto and still tasted amazing. Toasting the pine nuts was the right move.

  81. User avatar staci.carroll says:

    4 stars
Delicious! But what’s with the pine nuts? They’re too crunchy for me.

  82. 3 stars
Pretty good, but mine turned a little dry even with the olive oil. Next time I’ll cool the potatoes a bit more and maybe add an extra spoon of pesto.

  83. 4 stars
I’m skeptical about pesto with potatoes because pesto can get kinda strong, but honestly it balanced well. Next time I’ll add a tiny squeeze of lemon just to brighten it.

  84. User avatar keenan.brown1950 says:

    3 stars
I’m skeptical of ‘to taste’ seasoning—how much is that really? I guess I eyeballed it and it turned out fine. Kinda forgiving recipe.

  85. User avatar vicente.rogahn says:

    5 stars
This turned out super flavorful. The pesto clings to the potatoes nicely, and the pine nuts add a great crunch. I used store-bought pesto and it was still delicious.

  86. User avatar jettie.stark says:

    3 stars
This turned out okay, but mine looked a little oily. I think I added too much olive oil (oops). Still tasty though, and the tomatoes help cut the richness.

    1. 5 stars
Oily pesto dishes happen to the best of us 😅 Next time I’d start with less olive oil and add only if it seems dry. Glad it was still tasty!

Mine got oily too once. I swear the pesto was already greasy though—like, why add more oil? I just toss the pesto in and skip the olive oil unless needed. Also I forgot to toast the pine nuts, still tasted “fine.”

Made this for a family BBQ—so bright and herby. The pesto clings to the potatoes perfectly. I used store-bought and it still tasted like effort.

The pesto flavor is strong (maybe too strong) if you’re not into it. Next time I’ll use less pesto and add more olive oil. Still decent though.

I don’t really like pesto, so I wasn’t a fan of this. I prefer my salad with mayo. Maybe I’ll try it with ranch next time.

    1. 2 stars
Why would you ruin a good salad with mayo? Pesto is way better! You just have to try it again!

I totally get that! Pesto isn’t for everyone. Mayo does add a nice creaminess. Good luck with the ranch! 🌿

This is such a refreshing twist on classic potato salad. The pesto flavor really comes through without being too heavy, and the cherry tomatoes add a nice pop. I used store-bought pesto and it still tasted homemade!

  91. 3 stars
Not bad, but mine got a little too salty. Maybe because my pesto was salty already—salt should be “optional” at the end for sure.

Totally agree—if the pesto is already salty, adding “to taste” salt at the end can sneak up on you. Next time I’ll skip the salt completely until after a quick taste.

Made this for a BBQ and everyone asked for the recipe. I used store-bought pesto and it still came out super flavorful. Toasting the pine nuts was a game changer.

Not gonna lie, pesto + potato feels weird to me. Like… I don’t hate it, but I expected more basil punch and less “potato” if that makes sense. Still edible.

Pine nuts are expensive! Can I use walnuts instead? But the salad was really tasty.

Walnuts could work just fine! They have a different flavor, but it’s worth a try. Glad you liked the salad!

Not gonna lie, mine was kinda heavy/greasy. I think my potatoes were too warm when I mixed everything, so the oil felt like it separated. Still tasty, but not perfect.

Not gonna lie, I was skeptical about pesto in potato salad, but it’s actually refreshing with the cherry tomatoes. Would make again for sure.

Same here—I didn’t think pesto would work either, but the cherry tomatoes probably help a lot with that fresh flavor. Definitely giving this a try.

Yum! Potato salad but fancy. I made it for a BBQ and everyone asked for the recipe. 10/10 would make again!

    Yum!

Took a bit longer to cool than I expected, but once it came together it was great. Next time I’ll toast the pine nuts a touch longer for extra nuttiness.

Not gonna lie, 20 minutes for potatoes felt a little long for my cubes, but it turned out fine. Next time I’ll check earlier.

Yummy and filling! My kids even liked it, which is a win for me. Will make again!

This is kinda genius but I messed up—boiled the potatoes too long and they went mushy. Still edible, just not the nice cubes. So watch the timing!

Why pine nuts? I didn’t have any so I used walnuts and it was… okay. Wouldn’t say it’s the same though. Still tasty!

  105. 4 stars
Pretty tasty, but my potatoes took closer to 25-30 minutes to get tender. Also, I didn’t have pine nuts so I used walnuts and it still worked.

Glad it worked for you! I’ve noticed potato size makes a big difference—25–30 mins sounds totally normal if they were bigger cubes. Walnuts are a great swap too.

Interesting—mine were done in like 20 mins, so I’m confused why yours took so long lol. Also walnuts might be overpowering, but hey if it tasted good then ok.

I accidentally used too much pesto (like, heaping 1/2 cup) and it turned out kinda salty/garlicky. Still delicious though—just go easy with seasoning since pesto already has flavor.

Not sure about pesto + potato salad together. It’s like… pasta salad vibes. I guess it worked, but I would’ve added some garlic or lemon to make it sharper.

Sounds like a lot of work for a potato salad. I just throw potatos with mayo, no time for all this mixing.

Potato + pesto = genius! Can’t believe I never thought of this before. Totally doing it.

My pine nuts burned, so I just sprinkled crushed almonds instead. Still tasty, but the texture was different—still a win.
